Phase I Peanut Butter Cookies

Newbie here! I've been lurking, read the book, and want to say this site is awesome. You all have given me some great ideas!
Me, my husband and my daughter are just starting out. Cleaned out my cabinets over the weekend, spent way too much on low carb, healthy foods, and going on our second day. So far so good!
My husband has a weakness for peanut butter cookies. I keep reading about a Phase One Peanut Butter cookie recipe. Anyone have it? If so I'd appreciatte it!

I love these cookies! They are really easy, too.

1 egg
1 cup of natural peanut butter (tons less sugar!)
1 cup of granulated Splenda

Mix together very well, and drop teaspoon sized balls on a greased cookie sheet. (The smaller you make them, the more you get!) Bake at 325 for about 10 minutes.

You should keep these in the fridge, as they can get crumbley.

Oh, yeah, and don't forget that you are only allowed 2 tbsp of PB per day. So divide the final amount of cookies by 16 (the number of tbsp in a cup) to figure out how many you can have a day.

I am in phase 2 but they sound good to me, I got to try it this weekend.

I even suggest freezing them. We eat them right from the freezer and then they are not crumbley.

Some people add a little vanilla to the mixture.

I believe that the original recipe also called for 1 tsp. of vanilla extract.

Tastes good but DRY!! Think I will make sure to add in the vanilla next time... :) oh well - at least I got some milk in as well!!

Moist Peanut Butter Cookies

I add 2 tablespoons of part skim ricotta cheese. Cookies come out chewey; no crumbs at all! The ricotta cheese does not alter the taste one bit. Sometimes I also add cocoa powder; makes a very nice chocolate peanut butter cookie.

I tried these and they are saving me! It's hard to just eat one though. I added the vanilla and they are good! I don't mind them being crumbly as I try to eat them 1/2 at a time just to get rid of a "desert" craving.

I love how the great recipes keep popping back to the top -- and this is definitely one of the great ones.

I like to use the crunchy PB -- the pieces add a nice texture and extra peanut flavor. You could also add a tablespoon or two of chopped peanuts, if you only have creamy PB.

I hadn't heard about adding ricotta cheese -- I'll try that next time.

Gary697 -- how much cocoa do you add?
