Mexican Lasagna question?!

I receive the South Beach Diet Online "Daily dish" email. This is one of the new recipes in the new cookbook. They sent me a recipe for mexican lasagna that I would LOVE to try. Here's the recipe:

1 pound extra lean ground beef/turkey
1/2 large onion
1 large clove garlic
1/12 cups low-fat cottage cheese
1 cup fat free sour cream
1 jar chopped green chile peppers (4 oz)
2 teaspoons ground cumin
1/8 teas salt
2 1/2 cups salsa
4 whole wheat tortillas (6")
1 1/4 cup shredded, reduced-fat Monterey-jack

Preheat to 350

Brown beef, set beef aside in bowl. Brown onions and garlic and then add to beef

In another bowl, combine cottage cheese, sour cream, peppers, cumin and salt

Spread 1 cup of the salsa across the bottom of the baking dish (13 X 9). Arrange half of the tortillas evenly over the salsa. Spread half of the cheese over the tortillas. Top with half of the ground beef. Top with 1 cup of the remaining salsa and 1/2 cup Monterey Jack cheese. Repeat layers.

HERE's my QUESTION: Where does the cottage cheese mixture fit in? It doesn't account for it. Do you think that you mix it up with the salsa???? Help!

I spread the cottage cheese on the tortilla then the salsa and bean mixture then keep layering and mine turned out terrific it was sooo good!

I think you layer it in with the other cheese, like you would with ricotta in a regular lasagna...I might actuallt try this with ricotta instead of cottage cheese...

Oh, I see now. When it says "top with cheese" they mean the cheese mixture.

Thanks so much! Can't wait to try this tonight. My husband should love this too.

The recipe says to bake at 350 for 30 minutes. If the cheeese starts to brown too much, cover the dish loosely with foil.

When it specifies "Monterey Jack," that's the only time you use Monterey Jack. When it just says "cheese," that means the cottage cheese mixture. It was confusing, but that's how it works out.

Bake for 30 min.

Can someone verify the amount of cottage cheese to add? I'm
(ass)uming :oops: it's not 1/12cups... so would that make it 1/2cup? Or 1 1/2cups?

OK, I found it... nevermind!

Looks like it is 1 1/2 cups lowfat cottage cheese.

Sure, and if you put in beans instead of tortillas, that would make it good for p1.
