Here's something you can make w/ the leftover yolks. It's quite good.
Creme Brulee (P1)
1 cup Carnation fat-free evaporated milk
2 egg YOLKS
1/3 cup Splenda
1/2 tsp. vanilla extract (I've also tried coconut-yum)
Pre-heat oven to 300, put a glass baking pan in filled a third w/ water.
Heat milk in a small pot until almost boiling, stirring often.
In a bowl, combine yolks, splenda, and vanilla.
Add a little hot milk at a time to the eggs while whisking (to prevent scrambling).
Pour mixture into 2 ramekins, and put in pan in oven.
Bake for 1 hour.
Let cool and refrigerate...with a spoon scrape off thin layer of skin and enjoy.
I've been wanting to try this w/ light cream, instead of milk...I think it'll be great.
Of course you can double the recipe to make more than 2 servings at a time.
