any white bean will work. i use navy.

white kidney (w/e they're called) are fine.

I made these last night.....YYYUUUUUMMMMMM!!!!!!!!!!!!
I also made some 'frosting' out of ff cream cheese, splenda, vanilla extract, and sf cool whip.....DELISH!!!

I just made this recipelover's 1st way with some adjustments to the temperature and baking time, and they are definitely better than the black bean cakes I tried a while ago. They still taste bean-y but this time definitely edible and considering how healthy it is, it's awesome! Hard to believe that it's just eggs and beans!

I love this recipe! Has anyone tried the Mock Sugar Cookie version, from bigballerina (reposted below)? I just made them, but they came out way too crumbly.
Can anyone tell me what could I do to keep this from happening? Less baking powder, maybe? More egg? Less evoo? I don't know exactly what each ingredient does, in a recipe. Any tips from more experienced bakers?

in a blender:
1 can drained/ rinsed great northern beans
1 large egg
1 tsp baking powder
3/4 c. splenda
1 tsp vanilla extract
2 tblsp extra virgin olive oil
preheat oven to 400 degrees F. bake for 15-20 min.

too much?

Another question: Is it possible to eat too many of these? I make half batches, which comes out to about 5-6 muffins, and eat it throughout the day as snacks and desserts. Am I overendulging??

I made the version with the cinnamon and nutmeg....Yum-yum-yum!!

My recipe says 4 eggs...this may be where your mistake was....worth trying again.It was soooo good !

Well, daisymon that's a lot of beans. Does it cause gastro upset for you?

I can't wait to try these since I have gone off grains completely, for a while anyway. I am gluten free but all grains seem to be bothering me now. The gluten free blends for baking, even if high-fibre, are often a lot higher calorie than wheat, too.

I made them yesterday and they were wonderful. Thank you so much for the recipe.

I used 1/2 cup splenda and cinnamon and nutmeg and ate two of them. One was taste-tested by my kids (yuch was the consensus) and the rest went in the freezer. I'll make the kids some regular blueberry muffins today, with brown rice flour blend.

I am going to try them next time with some almond meal. I have gotten used to cooking with weird things since I went gluten-free.

To reiterate daisymon's question... how many would be okay to eat? I've been having them as a snack but would love to have a few for breakfast but I don't want to overdo it.

just use discretion. beans are fairly high in calories and although very healthy, you shouldn't eat a ton in one sitting. a serving of beans is 1/2 cup and this is allowed more than once a day (one serving with lunch one serving with dinner, etc.). so try to use the same guideline.

I agree with NYGIRL....keep it at your allotted 1/2 cup...since it is mixed with eggs and there is some magic baking powder for some cake -like texture .... I would say 2 squares per serving would be the max. Enjoy!
