Hello! I'm journal hopping, getting ideas to take to the grocery store with me this afternoon. :wink: I'm trying to see what everyone is eating for breakfast and I found your journal to be quite helpful!

I'm with you on the eating thing. At first I was ultra strict in this challenge. Then I got in a funk and realized it didn't matter what I ate as long as I journaled it! LOL! It went downhill from there. :roll: Today, so far, I am back on track, but it's the evenings that throw me.

Extreme Challenge Week 3 Day 6 Saturday

S: Banana w/ PB (pre-workout)
B: oatmeal w/dried apples and sf caramel syrup, 4 oz. yogurt
L: Big salad (spring mix, cukes, tomatoes, mushrooms), ranch dressing
S: A few Garden Herb Triscuits
D: Shared fries and a small Nutter Butter shake (from Arctic Circle) with hubby, tortilla chips and queso dip. Nice dinner huh?

Water: 72 oz.
Exercise: 20 min. on treadmill/30 min. boxing/sprints while playing frisbee with hubby at the park

My new recipe for the week was one of those ricotta desserts.

B: Oatmeal w/dried apples and sf caramel syrup, 4 oz. yogurt
L: omelet (1 egg, 2 egg whites, peppers, onions, mushrooms, cheese)
D: soft taco (ww tortilla, refried beans, tomatoes, cheese, nf sour cream, fresh cilantro
D: PB Chocolate ricotta dessert

Water: 48 oz. (It's hard to get it all in on Sunday! Must work on that for next week!)
Exercise: Off today!

B: Uncle Sam cereal w/banana
L: Soft taco (ww tortilla, refried beans, meat, cheese, tomato, nf sour cream), cucumber slices and ranch
S: 6 tricuits w/ mozz. cheese, carrot and pepper sticks, cherry tomatoes, ranch
D: 1 small slice of pepperoni pizza, 2 pieces crazy bread, 2 c. broccoli
D: 4 small no bake cookies

Water: 72 oz.
Exercise: none

Extreme Challenge Week 4 Day 2 Tuesday

B: banana w/pb
L: omelet (1 egg, 2 egg whites, onions, peppers, cheese), 2 c. stir-fry veggies, 1 c. milk
S: string cheese, 6 triscuits
D: ww waffle, 2 c. stir-fry veggies

Water: 72 oz.
Exercise: 40 min. Boxing/Core strengthening

Wow what a day so far! I haven't eaten a real breakfast yet because I still need to workout, but I keep getting sidetracked with cleaning and laundry (and need to do it while I am motivated). So the exercise is suffering (but I am going to do it right now!). It is snowing like mad and is now sticking to the ground. GRRRRR!

D: homemade chicken enchiladas (the red sauce kind)

Water: 72 oz.
Exercise: 30 min. muscle strengthening (hips, outer thighs, back, abs, triceps)

B: Oatmeal w/dried apples, SF caramel syrup and a little milk, 4 oz. yogurt
S: 1 chicken nugget, fruit and walnut salad from McDonalds (which I ate only the apples and grapes and brought my own yogurt), 4 oz. yogurt
L: Leftover chicken enchiladas, cucumber slices, carrots
D: omelet (1 egg, 2 egg whites, mushrooms, peppers, onions, cheese)
D: a few Robin Eggs and squares of dark chocolate

Water: 72 oz.
Exercise: 25 min. on treadmill/45 min. yoga

L: mozz. cheese quesadilla w/salsa, cucumbers, carrots and dip, 1 c. milk
D: Went to the Home and Garden Show last night and shared with dh: Bowl of ham fried rice (which wasn't very good), a bowl of spicy teriyaki chicken, a funnel cake. I was very good with my eating this week just so I could splurge on this. :D

Water: 72 oz.
Exercise: 45 min. Step

L: Consisted of snacking on kettle corn and robin eggs, I think I had some veggies and dip
D: It was one of those nights. DH went to Jack-in-th-Box and we shared fries, curly fries, cheeseburger, chicken strips, chocolate shake. At least we shared everything and didn't each eat one of everything!

Water: 72 oz.
Exercise: 25 min. treadmill/upper body weights

Extreme Challenge Week 4 Day 7 Sunday

B: one cinnamon roll, a couple of sticky buns, a slice of fruit pizza, a serving of an egg casserole (which actually was SB friendly!), orange juice

Exercise: Day off

Twice a year we host a breakfast at our house and I always make sticky buns (for DH, who previously only got them on Christmas morning, but I'm a softy!). We never have SB friendly foods except for the egg casserole, which is really good. Usually more people come, but I must have not gotten the word out well enough (or I did it too early and they forgot). Anyway, I feel gross, and will definitely eat something healthy for dinner. I just have to decide what to make....hmmmm....

I always have a hard time getting all my water in on Sundays because I don't exercise on Sundays (where I will always drink at least 24 oz. during my workout). So I guess I'll keep chugging....gulp...gulp....

L: not really anything (some candy corn and popcorn, I know, I know...)
D: homemade taco salad (lettuce, refried beans, taco meat, tomatoes, nf sour cream, fresh cilantro)

Exercise: 30 min. Step/Upper Body Weights

Extreme Challenge Week 5 Day 2 Tuesday

B: Uncle Sam cereal w/banana
L: Had hubby's b-day lunch at one of those Mexican places that used to operate out of a bus on the side of the road. I had a macho burrito and only ate half :( which means I'll have to eat the other half today.
D: Made homemade pizza, I ate one slice and loaded it with peppers, mushrooms and onions.
D: A slice of apple pie, and some vanilla bean ice cream

Water: 72 oz.
Exercise: 30 min. Step

Today is hubby's birthday and I'm treating him to some special meals (sticky buns for breakfast, his favorite authentic Mexican for lunch and homemade pizza for dinner, plus apple pie and ice cream and éclairs for later tonight!) I'll have to indulge on a few things, but not go crazy.

B: My infamous (more than famous!) omelet, 4 oz. yogurt
L: Leftover burrito from yesterday
S: A couple of handfuls of popcorn
D: Huge leftover taco salad from the other night

Water:
Exercise: 10 min. on treadmill (at the hospital for a stress test, but I honestly think they wanted to see just how high my heart rate could get! They stopped me finally at 192) Then I came home and did a hour of legs and glutes strengthening (and I think Cathe Friedrich has it in for me!)

B: 2 soft boiled eggs, 1 piece ww toast w/a little smart balance, 4 oz. yogurt, 1/4 of a green pepper.
L: A few pieces of popcorn chicken, (something else too, but I can't remember)
S: 3 sq. dark chocolate
D: Cashew Chicken (see main challenge thread for recipe)
D: 3 chocolate chip cookies, glass of milk

Water: 72 oz.
Exercise: 45 min. Yoga/20 min. walk

B: Uncle Sam cereal with a 1/4 c. (or so) dried cranberries, 4 oz. yogurt
L: Some cashews and Sun Chips while traveling
D: (Had dinner with 6 of 8 of DH's siblings and spouses) Baked potato with butter, sour cream, green onions, chives. A yummy Caesar salad made by my SIL (who I found out is doing SB, so it was legal!), a slice of the best white chocolate, raspberry truffle cake ever made!

Water: 72 oz.
Exercise: 30 min. Boxing/30 min. Core strengthening

Going out of town for today and tomorrow. Luckily I have already worked in all my exercise sessions for the week! I will keep track of my eating and post it all when I get home if I can't do it while I am gone. We will be busy busy...
