This is a link to my success story with before and after pictures. I've been maintaining a 120 lb loss for the past 16 months ...it took me 20 months to lose the weight.

Congratulations...I read your success story....that is impressive!

My question is...I know that in South Beach we are supposed to work in to have 2-3 starches a day! How do you just get by with just 2-3 a week? It seems like it is a little unbalanced to cut out a whole food group like that for a long period of time. So what did you eat carb-wise, other than fruit?

Good question!! I ate grains very minimally as they did seem to stall my weight loss and I had a lot of weight to lose.

My phase II was with alot of fresh veggies and 2-3 fruits a day....many women over 50 have gluten intolerances and I'm now 56 yrs old. The only grain with no gluten is brown rice so that is my grain of choice now. Starchy veggies are also great!! I have become a lover of butternut squash, a food that I had not eaten before.

Now in maintenance, I eat 2-3 fruits a day and 2-3 starches a day. Starches can be a starchy veggie and or a grain....I still am stingy in the grain area. I enjoy eating the Kashi TLC granola bars as a snack as they are made with whole grains....I find that flour is an issue for me so when I do eat grain, it is mostly whole. I also eat Wasa crispbreads.

The thing about phase II and adding carbs back into our plans is that we need to keep the weight loss moving....when you are losing over 100 lbs, this can be a blessing as by the time you hit goal, you have a very complete food plan under your belt..... if you learn from seeing how different foods effect your body.

Congrats! Quinoa is also a gluten free grain and very healthy for you. We use it frequently. The whole grain council also lists the following gluten free grains:

• Amaranth
• Buckwheat
• Corn
• Millet
• Montina (Indian rice grass)
• Quinoa
• Rice
• Sorghum
• Teff
• Wild Rice

I liked your observation about the rush to add bread back in as the first grain source. I easily eat 3-5 grain/starch servings most days, but don't eat a lot of bread, esp. not the fluffy sliced stuff. ;)

FWIW, I think most of the long term beachers here bristle a bit at the linkage of SBD to low carb diets, esp. Atkins. There really is no common definition of what "low carb" even means, so it is pretty much a moot point anyway. But we do like to keep folks from feeling afraid of "carbs" as they are pretty critical to our bodies and brains and choosing the right kinds of carb sources in adequate quantities to support our health is an important building block of the SBD program. Everyone has to find that level for themselves though and it depends on a lot of different factors so the guidelines can only ever be that, a guideline to start with and tempered with personal experience.

I normally do not eat much bread either...I have those sprouted wheat wraps or whole wheat wraps, and that is the closest thing to bread I have...and even those I have only 2-3 times a week. Otherwise I eat brown rice or a small ww pasta serving...but I am in the earlier stages of phase one - just figuring out what is best for my body.

I think that is something everyone must do: listen to your body!

FWIW...over at that "other" forum...many atkins people have crossed over to SBD just because they want to up their carbs!! :lol:

I am a firm believer in good carbs...many people do become "carb phobic" and I am all in favor of the good ones!!

I was watching the PBS special on The Wisdom of Menopause when Christiane Northrup MD said that 1 in 3 women over the age of 50 has gluten intolerance.

Thats where I got the info and I trust her as a good source of information. I trust her more than the Whole Grain Council!! :lol:

I know this lady from "that other forum" and she is tremendously helpful and has helped to guide many through their beginnings on SB. :)

I think the reason there's an SB forum on a "low carb" site is because SB has lower *refined* carbs. Little to no bleached flour products, little to no (or just occasional) sugar...etc. But please do note that it is specifically an SB forum.

Judy is awesome and she looks beautiful. Way to go, Judy!
