Tofu stirfry [leftovers]

Veggies & RF Feta

1/3 cup FF yogurt with SF jello

D:
Grilled chicken spinach salad
1/2 banana [the other half from the morning]

I was never a huge fan of oatmeal growing up because I didn't care for the texture or creaminess all that much. Actually, it made me gag because it was so creamy. Anyway, since starting this WOE, I've developed a hearty LIKING for oatmeal and had some this morning with half a banana, cinnamon & splenda. OMG it was FABULOUS! [I had a bowl on Monday however I didn't prepare it all that well so I didn't really count it as having 'HAD' oatmeal. ROFL. I'm complicated. hahaha] I can't wait to try the steel cut oats I bought from Trader Joe's tomorrow. I love hearty, whole grain, fiber filled, complicated foods. hehehe.

I just thought about something. I wonder if I've gained weight.....I haven't weighed in since Saturday and don't plan to til either tomorrow [not so sure I want to because my TOM is still around] or next Monday.

I hope I lost...I hope I lost a lot. or enough....

I think Wal-Mart is evil.

I just spent $59 there on stuff that I did need [got everything on my list] and THEN some. damnit all.

-Cooler bag which I might exchange. Not sure just yet...
-Ice Pack
-Sunblock
-Bugspray
-FiberSure
-Salt & Pepper shaker for my desk
-Salad spinner
-Spreader
-Sifter [I'm over making a mess in my kitchen trying to 'sift' with my strainer]

I seriously think I'm gaining weight but I haven't weighed myself. I think I'm scared to.

Here's the recipe..... if you cannot find whole wheat couscous, use the regular kind.. its a good grain.

1 c uncooked couscous
1 and 1/4 cups chicken broth, ( or veggie broth to make it vegetarian )
3 T extra virgin olive oil
2 T fresh lime juice
1tsp red wine vinegar
1/2 tsp ground cumin
8 green onions, chopped
1 red bell pepper, seeded and chopped
1/4 c chopped fresh cilantro
1 cup frozen corn kernals (thawed)
1 can black beans, drained and rinsed
salt and pepper to taste.

Bring broth to the boil, and stir in couscous. Cover the pot and remove from heat. Let stand 5 minutes.
In a large bowl, whisk together the oil, lime juice, vinegar and cumin. Add the vegetables and toss to coat.
Fluff up the couscous well, breaking up any chunks. Add to the bowl with the veggies and mix well. Refridgerate if you are not going to eat it right away.

well, i've gained 2 lbs and to be quite honest, i'm partial to how i feel about it. half of me is freaking out wondering what the hell is wrong with me but then the other half is telling me to chill because there are a few factors that could've contributed to this gain. i was at the track all weekend and ate pretty well. i bought 3 bags of veggies (broccoli, carrots & snap peas) and had a mini cooler to keep them fresh. it was only yesterday that i ate pretty bad or rather, NOT sb friendly when i had the meat of a breakfast sandwich and half a bratwurst in a whole wheat pita. i also had a tacobell salad (no tortilla shell and took off some cheese, no dressing either and i tried to avoid the beans as much i could) for dinner and in btwn, i had a 2 apples and loads of veggies and of course, boatloads of water. i also couldn't go to the bathroom very well, if you know what i mean so there's a good chance that my weight 'gain' was in that. puahahah.

i'll weigh myself wednesday morning to see if i'm really gaining otherwise, i'm only gonna half sweat it today. also, i just barely got off my period so maybe there's still that water weight there but i'm not all that convinced with that.

i MUST get down to 100, if not 105. damnit.

i've been out of the loop with the boards so i'm gonna try to catch up. anyway, here's the meal plan.

B:

6 oz V8
SF Redbull

L:
Grilled chicken salad
1 cup veggies

i also need to eat when i'm HUNGRY and NOT when i'm bored. i have to start really questioning myself when i feel like i want to eat...'are you HUNGRY or are you just bored or craving'. argh
frustrating.

i've only recently been doing this, what the heck?!?!?!

Ok so I've been doing a lot of thinking about the 2lbs I gained and now it's starting to bug me a bit more. Crap. I mean, I guess I really shouldn't sweat it so much because I don't feel like I got bigger but my weight isn't showing it. ARGH. Bloody hell. I need to take my measurements soon too.

From what I can remember this is what I ate this past weekend

Friday:
Can’t really remember much
B:
½ pita with 2 eggs and 1tbsp cheese
1 can V8
1 banana

L:
Veggies
Cheese stick
Apple

D:
Grilled chicken salad


Saturday:
B:
½ ww pita with carne asada
1 can V8
1 banana

S:
15 nuts [mixed cashews & almonds]
1 cup veggies

L:
Grilled pollo asada
3 cups veggies
1 apple

D:
2 cups veggies
Beef tenderloin [maybe 2 oz, IF that]
NSA Orange creamsicle thing from Dairy Queen

Sunday:
B:
½ bratwurst in a ww pita [didn’t finish]
¾ of a sausage patty from a breakfast sandwich [no bread of course]
1 banana
1/2 cup dry cereal [no milk available at the track]

S:
2 cups veggies
15 nuts
handful of cereal

L:
Roasted chicken no skin
2 cups veggies
1 apple

S:
1 cup veggies

D:
Grilled chicken taco salad from taco hell [no taco shell, just the salad and most of the cheese off and I tried to avoid the beans as much as I could cuz they were refried and I’m sure they weren’t the ff kind]

I also had many bites of Dark Chocolate and more fruit and grains than I should’ve allowed myself (this was yesterday) so I’m sure that the above mentioned on top of not being able to go to the bathroom [if you know what I mean] contributed to my 2 lb gain.

Even though I know that I ate fairly well , I’m still pretty bummed that I gained instead of lost. AAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAAARGH!

It's kinda discouraging, you know?

Ok, so I weighed myself this morning and I did lose SOME weight but not enough to where I was REALLY happy [the first week after I started bringing in fruits]. I'm gonna see if I can switch it up a little where instead of having my grains in the morning, I'll have it in the afternoon. I dunno.....I LOVE having my grains [cereal/oatmeal/toast] in the AM. Hmm, maybe I'll try having TOAST instead of oatmeal and see what that does.

Ah yah, I've caught a bit of a cold so I've been drinking Airborne like it's going out of style. It's SF so I'm not even worried....

Anyway, here's my meal plan for today.

B:
oatmeal [1/2 cup uncooked w/ 1 cup skim & 7 apricots chopped]
5 oz V8
SF Redbull
1 slice turkey ham
4 cashews
1/2 cup NF latte with NSA Vanilla powder

L:
Grilled veggies
2 smart dogs [tofu hotdogs]
1 granny smith apple

S:
2 persian cucumbers
2 tbsp hummus

S2: [this is when I get home from work, around 5pm]
1 cup LF soymilk w/ SF French Vanilla Syrup

D:
Grilled mahi mahi
2 cups veggies
NSA Fudgesicle
