Is this the recipe that also has the almonds & ww bread crumbs? Yes...Actually, I've never even fried these; I've always baked. One of my all-time favorites.

Hi jamie! :D

Yes, I bake mine all the time. Here is the recipe that I use (it is so easy and delicious!)

PARMESAN CRUSTED CHICKEN

1/3 cup Light Mayo

1/4 cup grated Parmesan cheese

4 Boneless skinless chicken breast

4 tsp. Italian bread crumbs (I make my own crumbs with dried ww toast and spices)

Combine mayo and cheese. Spread on chicken, then sprinkle with bread crumbs.

Bake at 425' for 20 min.

I use the same recipe with fish (usually orange roughy or tilapia).
But I broil the fish (instead of baking it) not too long (til flakey), then add the parmesan mixture and broil a bit longer til it is melted and "crusty".

Thanks Luvs, I am going to give that a try nextime, meanwhile I went ahead and put the mixture on the fish like you did with the chicken. I hope it turns out okay. When I arrived at work today I was asked to stay and extra hour which I did not plan for so I am starving. Ohhhh checked on the fish, looks pretty good so far. This would be great on chicken, I will try that also. Thanks a bunch.

Luvs, I'm in Phase II. Can I use Italian bread crumbs or do I have to make my own?

This recipe sounds really good. I love chicken but need more ways to cook it.

I have never looked for ww Italian bread crumbs. I have a very simple way of making them. I toast a few pieces of bread, throw them in my food processor with the spices and just process them to the consistency that I want.
This recipe is also very good without the breadcrumbs for anyone in P1. :D

Thanks. So I guess Italian bread crumbs are a no-no. I don't have a food processor but I may be able to crumble them enough without it.

Patti..... I think any ww breadcrumb would work (they wouldn't have to be Italian bread crumbs). Then you could just season them to taste.

I'm so dumb! :shock:

I thought they didn't have to be Whole Wheat Italian bread crumbs. I was hoping. I don't think I've ever seen WW in the stores.

For phase 1, instead of breadcrumbs, I finely crush my nut serving for the day and mix that w the parmesan cheese. I dip the chicken in some egg first, then the mixture, and bake it in the oven. Im still trying to find the best temperature and time.
