Two minutes ago i made 'meat'balls out of boca crumbles, canned spinach, and feta cheese. I just put them in the freezer and im hoping they stick together until dinner tonight. This is my first attempt at making meatballs and i really hope it turns out great! They look good i just hope they cook well. Any suggestions on how i should prepare them tonight?

no suggestions for cooking the boca meatballs but sounds interesting. let us know how they come out.

There is a really good tempeh salad (kind of a faux chicken salad type deal) at Whole Foods that is made with Veganaise. it is really good so I tried to find an alternative online. When I lived in NY I used to buy a really good soychicken salad but I haven't been able to find it out here. It was made by a kosher food company in Brooklyn I think. Soooo good. I miss it.

The Whole Foods one is too expensive to buy regularly but it is really good mixed with salad greens and stuffed in a whole wheat pita. I hope this comes out good. I'll probably add some veggies...onion, carrots, celery and green pepper maybe?

Anyone have a good tofu or tempeh salad they like?

*ETA - it contains some evil non SB friendly raisins so beware.

Hello everyone,
I hope you don't mind me posting. :) I am not a vegetarian, but I am interested in learning more about being one. I currently eat fish, chicken, and turkey and occasionally pig but I do not eat cow. I was wondering if anyone could recommend a good book about vegetarianism. I have noticed recently how much meat I am consuming and I am getting sick of it. That is why I wanted to look into vegetarianism as a alternative for some of my meals... but I don't think I am planning on becoming a vegetarian. Did I make any since? Sorry didn't mean to ramble! :D

Lorka - I love raisins too. But only the golden ones. Great in salads with some sunflower seeds. Cold salads preferably. stuff for making sandwiches or jazzing up regular old boring salads. I make my husband's lunches a lot and he only really likes sandwiches but I am running out of ideas. I get sick of making him either cheese or hummus and avacado every day.

weets&PBluvr - Always glad to hear someone is thinking of making the leap to the veggie side :wink: . I have a bunch of books at home. Will take a look tonight and post some a list with some comments on them.

Yesterday, my DH was jonesing for a night out at Chilis....for chips and salsa and a meal....I told him I just couldn't do it. I told him that he could take DD himself, but that didn't happen. I'm so glad I resisted. Instead, I had a veggie burger with some cheese - no bread - and roasted green beans.

Today, I went to lunch with a couple co-workers. I had the salad bar. Resisted the croutons and bread.....whew....and then the waitress gave us garlic bread, which she usually does for free....nice, right? WHAT a temptation!! I LOVE THAT DANG GARLIC BREAD!!!!

But, I resisted....

Tonight, I had practically nothing in the house....I'm a vegetarian by the way.....I had green peppers....onions.....ground turkey (for DH).....and vegetarian beans.....SOOOOO.....Instead of just chalking it up to having nothing in the house and splurging/going out....I made stuffed peppers....His with roasted onions, peppers and ground turkey with taco seasoning....and mine with roasted onions, peppers and vegetarian beans.....

Nice....Willpower, when it came to eating, NEVER existed with me. This is a nice change.....

That's great aweea. Those temptations never really let up do they? While eating right can keep the cravings away it still takes willpower to resist the garlic bread stinking up the table right in front of you (I love it too by the way.)

I love stuffed peppers. I make them with wild rice. My oven is broken right now (has been for months) which is severely limiting my choice of meals. Thank goodness it is summer and we can grill.

I whipped up an awesome bean salad tonight! I'll share the recipe while it cools overnight in the fridge. I didnt measure anything lol i just did it by taste

1 can garbanzo beans- rinsed
1 can red kidney beans- rinsed
chopped marinated artichoke hearts
banana pepper rings
lemon juice
salt
pepper
garlic
dill

combine all of your ingredients and taste it all until you think its fine and then shake it up and cool it in the freezer! I got the idea from my local earthfare. I wanted to add chopped red peppers and great northern beans but im out.

Hi Ally - Is your plan to attend culinary school? I have a friend who just started and it sounds very hard and stressful but also very rewarding. She loves it so far.

I made the tempeh salad last night. It was really good. I added a little finely chopped onion (I can't eat too many raw onions or I feel kind of sick) and some very finly diced green and red peppers and celery. I would probably use less veganaise next time. It was a little heavy on the dressing. But I will definitely make it again. The golden raisons and curry were a great combo and it was perfect stuffed in a pita with some romaine lettuce and tomato.

I'm hosting a bbq tonight for my neighbor who is moving out on Saturday.

Menu so far:
-Veggie Burgers (My husband's favorite brand for grilling are the Boca Cheeseburgers. I prefer the Amy's brand Chicago Burgers but they kind of fall apart on the grill so we will do Boca)
-Lemongrass skewers(lorka I am trying your recipe subbing tempeh for scallops I'll let you know how it goes.)
-Spinach and grilled aspargus salad with soy vinagrette.
-Guacamole with baked pita chips (and regular chips for everyone else)

Dessert
-strawberries, blueberries and fresh whipped cream
-grilled honey-basted pineapple.
-watermelon


Husband's friends will bring meat and we reserve a section of the grill for them.

I'll post the Spinach asparagus salad and Guacamole recipes later. My Guacamole is rather famous among our friends and I will brag a little and say it is really simple and really, really good.

your meal sounds good - i'[ve never had pre-made veggie burgers before]

Thats my plan! I'm going to be a junior in high school this year but i have pretty much made up my mind to apply to Johnson and Wales. While im there i plan to get a business major and when im finally settled in the culinary world attempt to open my own restraunt! I know its a lot of tough work but at the end of the day the one thing i love is cooking. I am making my mom a french style shrimp salad some time soon (its on the front cover of cooking light) Im really open to making meats, i make a killer hamburger :wink:
