Ground Turkey and Black-Bean Chili [posted by redrxco] Phase 1

Serving Size : 6 Preparation Time : about 45 mins.
Categories : Vegetables / Poultry / Chili

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 tablespoon Oil
2 cups Finely chopped red pepper
1 cup Chopped onion
1 heaping teaspoon Pre-minced Garlic (from a bottle)
4 teaspoons Chili powder
2 teaspoons Ground cumin
1.2 pounds Ground turkey breast
1 can 7 oz. roasted green chilies - seeded and chopped
2 cans 15oz Black beans -- rinsed & drained (no fat)
1 can 14 oz Canned chicken broth (no fat/reduced sodium)
1 can 14.5 oz Diced tomatoes (do not drain)
2 tablespoon Tomato paste

Heat oil in large saucepan or dutch oven over med heat. Add pepper, onion, and garlic; saute until tender, about 12 min.

Add chili powder and cumin; stir to blend. Increase heat to med high and add turkey; break up with spoon and saute until turkey is no longer pink, about 3 min.

Add beans, broth, diced tomatoes, chopped chilies and tomato paste and bring to boil. Reduce heat and simmer chili (uncovered) until liquid
thickens, stirring occasionally, about 1 hour. Season with salt & pepper.

Serve garnished with some reduced fat shredded mexican cheese (jack/colby mix) and a whole wheat tortilla if in P2 or P3.

Bran Pancakes a la sarah

2 c. All Bran Extra Fiber
1 c. ww. flour
2 c. skim milk
3 eggs
1 T. Baking Powder
1 T. Splenda
salt, cinnamon

Combine in blender.
Measure out w/ 1/2 c. measure.

chicken mole, very easy, very good:

as many chicken breasts as necessary
as much unsweetened chocolate as you want
oil (duh)
3 tablespoons cinnamon
3 tablespoons chili powder
3 tablespoons paprika
3 tablespoons cumin
a can of unsweetened tomatoes

season the chicken with small amounts of all spices above. set your skillet to medium high and pour in some oil. throw that chicken in there. let it sit for a while till it gets brown on both sides. take the chicken out to another plate and put the remaining spices in the skillet, stirring it for like ten seconds.

dump the tomatoes in there, along with the chocolate. put the chicken back in there. stir it around so the chicken gets coated in the mole. pour some tequila in there. then cover the skillet and let it simmer on low for like ten minutes.

this dish has instructions but after you make it once, you can pretty much make it however you want, just as long as you stick to the basic recipe. i've made this super F*in drunk at like 2 am for twenty people.

also, i haven't been specific with the timings because that's basically up to you to figure it out. it varies but this entire process should take no more than twenty minutes.

if you have them, get some bell peppers and some spanish rice. bake the bell peppers, cook the rice, then line the inside of the bell peppers with cholula or tapatio then stuff the rice inside of the bell peppers.

spike a horchata with some light rum, eat and watch "three amigos"

back from the store...

stocked up for at least 1 1/2 weeks. Spent about $50.

So far I've cooked: 2 packages of turkey sausage and 1 recipe of bran pancakes. For some reason this time there were only 7 pancakes instead of 8? Oh well. Adjusted for nutrition information in sparkpeople. I'm loving the new recipe calculator, no more transcribing information from the recipe website.

Anyway, already cooked up the pasta for this:

Looks like it will be pretty easy to south beach-ify. Didn't feel like buying prociutto (would have had to go to different grocery store), so I'm going to sub canadian bacon. I'll post my adapted recipe when I'm done.

Also bought stuff for veggie quiche and turkey chili. Will make quiche today, chili will probably be tomorrow, but maybe tonight depending on how I feel.

8oz Whole Wheat Rotini --cooked
6oz Canadian Style Bacon -- diced
2 pkg. Spinach, frozen
2c. Milk, nonfat
15oz Ricotta Cheese
2 eggs
1/2 c. Parmesan Cheese
salt, pepper

Combine. all ingredients except 1/4 c. parm. Spread in baking dish, sprinkle parm on top. Bake 50 min at 400 deg, until top is browned.

had a big salad for dinner.

Was really yummy, but lots of calories and not as satisfying as a stir fry or something else~~~~~~~ maybe should look for a different choice next time or not have it as a main dish

may have spoke too soon about being done with the grocery store! I'm almost out of soy milk, sf vanilla syrup, and fresh veg. I chopped up all my green peppers to take for lunch today, so I can't make chili until I go back to the store. Also, I'd like to get more rhubarb. I'll be so sad when the season is over. Rhubarb and bran pancakes is definitely my favorite sb breakfast!

Other than that, I've broke the 120s. How exciting! I think the lowest I've ever comfortably been was 127. The lowest I've ever been is 118. I can definitely see a much bigger difference in myself than I would have thought!

Soooo.. lotta weird things been happening.

Down to 128 YAHOOO!

Losing weight in weird places though. boobies have definitely gotten smaller: bras have been the first wardrobe casualty. When I wear them, the cups collapse. Also losing from the front of the hips but not the tummy. Hipbones are visible, but tummy is in the middle of them...kinda gross. Wrists are definitely smaller too (judging by jewelry) not an area that was big in the first place.

Yesterday I was really hungry and kind of headachy before bed so i ate an extra snack--an oatmeal breakfast cookie. Put me 200 over my recommended calories, but I needed it. Today was my first planned going off plan. I had an michelena's lean lasagna. I thought it would be more cheese, but it was mostly pasta. I'll probably be making my on lasagna after this with spinach, mushroom, turkey sausage, and whole wheat pasta. Anyway it wasn't too detrimental. I've actually been less hungry than usual even though altogether so far today I've eaten less than I usually do.

I think I'm gonna do fauxtatoes and sausages for dinner.

Also, I've been mulling this over for a few days and I think Alton Brown would be an extremely good in bed. He's obviously very detail oriented and focused on success. Maybe Bobby Flay too. Mostly because he's a cocky asshole, and detail oriented and sensual.

AND PROJECT RUNWAY TONIGHT! SO EXCITED!!!!!!

Did a kind of different breakfast this morning because I wanted something sweet. I mixed NSA applesauce with all bran cereal (Do you believe I've had this in my cupboard for 2 years! It moved with me from Champaign--it's been sealed shut the whole time though). Then I had veggie quiche so I would get my veggies and protein.

Mike and his mom are coming down today to get the rest of his stuff so I'll be eating lunch here.

Fauxtatoes yesterday were sooooooo good. Probably my favorite SB food. It seems expensive because 1 cauliflower = $2.50, but that'll make a main dish for 2 meals.

Well, that's it for now.

One of my favorite suppers (even pre-SB days) is a big salad topped with taco meat, cheese, salsa, and ranch dressing... I imagine the ranch is a no-no now but the rest should be fine. I had a modified version of that a couple nights this week using the chili recipe you posted in this thread. :wink: It was very tasty and filling.
