Anyone have a good whole wheat waffle recipe?

I made the 'whole wheat' recipe in my waffle iron instructions but it had 1/2 cup ww flour, 1/2 cup white flour and 1/2 cup rolled oats. I'd like to eliminate the white flour but I'm afraid it will be too dense and my kids won't eat it. They loved these but I didn't want to eat them because of that white flour.

Anyone care to share a good recipe??? The whole grain mixes in the health food store had corn flour or corn starch as a major ingredient so I thought that would probably not be the best thing either.

Hey Lisa, I found this one in my "Whole Foods for the Whole Family" La Leche League cookbook:

Basic Wholegrain Waffles
2 to 4 eggs, separated (don't know why the difference - maybe size?)
1-1/2 C milk (skim)
1/4 to 1/2 C. oil or melted butter (SM.Balance) -again, don't know why the difference
1 to 2 T brown sugar (substitute) or (sf) maple syrup - OPTIONAL
2 t. baking powder
1/2 t salt
2 C flour (you can use a combo of ww and ww pastry flour if you're worried about lightness)

Beat egg whites until stiff. In a large bowl, beat yolks with milk. Add remaining ingredients, beating after each addition. Fold in beaten egg whites. Pour into a lightly greased pre-heated (medium-hot, 375) waffle iron and bake until it stops steaming. Makes about 5 round waffles.

I can't remember if I ever used this one or not - all of the recipes I tried from this cookbook were good, so I don't see why it wouldn't be.

Peacefulpath: Some people prefer eggier waffles -- I think that's why there's the difference in the egg amounts. As for the oil/butter, I have a waffle recipe that calls for 16 Tbs. (that's two sticks!) of butter. In the recipe, it says the more butter you use, the crunchier the outside gets, and that you can reduce it down to a minimum of 4 Tbs. Now, I've never made it with 16, but have with 4 and 8, and they are right. The outside was much crisper with 8 Tbs. than with 4 ... I don't know if it works the same with oil, but it sure did with butter. Yours looks like a good waffle recipe. :D

There is a recipe in there for ww apple pancakes.
I made this recipe but used my waffle iron instead of making pancakes other day and they were very good, probably the best waffles I have made so far. I left the apples out though, but I'm sure it would be even better with the apples, I just didnt' have any.

From the first South Beach Diet book Oatmeal Pancakes p201 , or from the Second orange book p41, both work really well.

They make great Oatmeal waffles.

if you can find WHITE whole wheat flour, it's a lot closer to regular white flour in taste/texture/color. it's 100% whole wheat, but a different type of wheat, so it's lighter and less bitter than regular red whole wheat [what you usually buy]. i really recommend it, especially for kids. it's also great blended with regular whole wheat flour.

i know you can buy it online from king arthur flour, and probably bob's red mill as well. i get it at whole foods, so if there's one in your area, they probably have it.

If you want to try a mix for the convenience factor try Arrowhead Mills Buckwheat pancake mix or Hodgson Mill buckwheat pancake mix. Both meet SB guidelines and make life a little easier. I generally use the Arrowhead Mills mix and DH and I both like it quite well. It does require a little honey if you don't have a problem with that. It's about 1 Tbs for the whole recipe.

Using a suggestion from redroxco (I think) I sub 1/4 of the mix for 1/4 milled flaxseed - still just as yummy and a little more nutritious.

Oh and I use this for both pancakes and waffles.

A Healthy Twist on Breakfast Pancakes

What is your favorite all-time breakfast? For many, the answer is simple: pancakes. This classic morning meal can be enjoyed starting on Phase 2 of the South Beach Diet by simply swapping out traditional ingredients for healthier ones. For example, use buckwheat flour and whole-wheat flour instead of white flour. Try this healthy and hearty breakfast pancake recipe today!

Buckwheat Pancakes (Phase 2)

Description
Buckwheat is often planted by beekeepers because the flower is very high in nectar. The popularity of buckwheat pancakes has declined since the 1950s, but there’s no reason not to try them today!

Makes 12 pancakes

Ingredients
1 cup buckwheat flour
1 cup whole-wheat flour
1 egg, beaten
1 tablespoon baking powder
2 cups water
1/2 cup unsweetened applesauce
1 teaspoon vanilla extract

Instructions
In a medium bowl, thoroughly combine the buckwheat flour, whole-wheat flour, egg, and baking powder, mixing until evenly blended. Add the water, applesauce, and vanilla extract, and stir until only small lumps remain.

Heat a large nonstick skillet coated with cooking spray over medium heat. Working in batches, pour the batter into the pan and cook for 2 to 3 minutes, or until the bottom is browned. Turn and cook for 1 to 2 minutes longer, or until golden brown. Remove to a plate and keep warm. Repeat to make a total of 12 pancakes.

2 g dietary fiber
