Anyone Have Ceasar Salad Drsg Recipes

I checked the sticky, but, just looking for some good Ceasar salad dressing recipes to make at home. This one restaurant we go to has the best dressing ever and thinking if I can find enough recipes, I may be able to match it. Thanks!

this is very similar to a homemade dressing my mom makes which is amazing:

1/2 cup freshly grated Parmesan cheese (about 1 1/2 ounces)
8 anchovy fillets
3 tablespoons fresh lemon juice
3 garlic cloves
2 tablespoons Dijon mustard
3/4 cup olive oil

Combine 1/2 cup Parmesan, anchovies, lemon juice, 3 garlic cloves, and mustard in processor; blend well. With processor running, slowly add olive oil. Season with salt and pepper.

CAESAR SALAD DRESSING

2 egg yolks
4 oz. vegetable oil
1 oz. lemon juice
2 cloves garlic, minced
1 tsp. anchovy paste
Croutons(homemade whole wheat)
Grated Parmesan cheese
Romaine lettuce
Salt & pepper

Beat egg yolks with a wire whisk in a metal or glass bowl (not plastic) until thick; add lemon juice; drizzle in the oil in a thin stream while you continue to beat with the whisk. It should thicken to a mayonnaise consistency. Add garlic and anchovy paste, salt and pepper to taste. Pour over torn lettuce and toss with croutons and Parmesan cheese.

Mmmm, those sound yummy and close to what I am looking for, because the one I really love is not made with mayo, its not creamy, I cant explain, anyway, thanks!

Just copying in some dressing recipes that are not ceasar ones, but I thought that then I could use this link for them in my recipe summary:

Chipolte Southwest Sauce/Dressing [posted by cristy711]

I got this recipe a while back off of the Top Secret Recipes website. It is the clone for the Subway Chipolte Southwest Sauce. The original called for sugar and regular mayonnaise. I think your idea using the ranch dressing sounds great too.

½ cup Mayonnaise (light or reduced fat)
2 tsp lime- juice
1 tsp splenda
1 tsp minced cilantro
½ tsp paprika
½ tsp white vinegar
½ tsp water
¼ tsp salt
¼ tsp garlic powder
¼ tsp ground chipolte chili pepper (McCormick has a good one)
Pinch dry thyme
Pinch of cumin

Combine ingredients in a small bowl and chill for at least 1 hour before using. Makes ½ cup. Great on sandwiches and salads.

Chipolte Dressing [posted by surfer376]

Dressing:
1 cup sour cream (rf)
1/2 cup buttermilk (rf)
1/2 teaspoon minced garlic
2 tablespoons fresh parsley, chopped fine
1 tablespoon fresh cilantro, chopped fine
1 tablespoon fresh basil, chopped fine
1/2 teaspoon kosher salt
1/2 teaspoon cracked black pepper
2 teaspoons chopped canned chipotle peppers

Mine is similar to A-Rod's. I got it from the food channel's website some time ago:

3 garlic cloves
4 anchovy fillets, chopped
1/4 cup fresh lemon juice
1 tablespoon Dijon mustard
1/2 cup olive oil
Salt and freshly ground black pepper

Finely chop the garlic and anchovies in a food processor. Blend in the lemon juice and mustard. With the machine running, gradually blend in the oil. Season the dressing, to taste, with salt and pepper.

ken's steakhouse has a wonderful Lite Ceaser - not creamy more like italian with a wonderful kick.. I love it!!

I got this from a Martha Stewart Food magazine... It's pretty close to the original, and I think it's SB friendly:

1/3 cup low-fat mayo
juice of 1 lime
1-3 garlic cloves (I add a lot of garlic)
2-3 anchovy fillets (I usually add more)
ground black pepper to taste
grated parmesan to taste

Blend these ingredients, then add cold water to thin it to your desired consistency. Delicious!

Caeser Salad Dressing

1 clove garlic, smashed
1/2 cup olive oil
1 tsp. salt (I use 1/2 tsp)
1 tsp. dried mustard (Oops, forgot in original posting)
Freshly ground pepper to taste
1 1/2 Tsps Worcestershire sauce
1/4 cup egg beater (equal to 1 egg)
Juice of 1 Lemon
1/2 cup grated Parmesan cheese (I just use a sprinkle over my salad, maybe about 2 tsp. or less)

Optional - 1 can (2 oz.) anchovy fillets, drained and rolled or cut up; garlic onion croutons.

I mix all the above together with a whisk, then save it in a container.

This recipe makes enough for 2 heads romaine lettuce. That's why I store my in a jar. I just put enough romaine lettuce in my plate for a salad, sprinkle 2 T dressing over the greens, sprinkle some Parmesan cheese over the top and enjoy.

I don't use any croutons because I am too lazy to make ww garlic croutons and I don't want to waste my fats on croutons. I don't use anchovies either because they are not in my vocabulary.

This is my favorite Caesar dressing and my dressing of choice, when I am using avocado, and I always have some on hand. It's great on other salads also.

An Easy Weeknight Dinner Salad

Busy fall schedules may leave you with little time to prepare a homemade dinner, but before you grab something on the run, try this easy salad recipe. This delicious, healthy turkey salad features the freshest ingredients, and it can also be prepared in 15 minutes or less.

California Turkey Salad With Fresh Tomato-Lime Dressing (Phase 1)

Description
For this salad you will need to buy one or two large pieces (not sliced) of smoked turkey from the deli so you can cut it into cubes. Smoked turkey can be quite high in sodium, so if you are concerned about your salt intake, use regular roast turkey (or even crabmeat) instead.

Makes 4 servings

Hands-on time: 15 minutes
Total time: 15 minutes

Ingredients
5 plum tomatoes (1 1/4 pounds)
2 tablespoons fresh lime juice
2 tablespoons extra-virgin olive oil
Salt
1 head romaine lettuce, thinly sliced crosswise (8 cups)
3/4 pound lower-sodium smoked turkey, in one piece, cut into 1/2" cubes
4 ounces part-skim mozzarella cheese, cut into 1/2" cubes
1 avocado, diced

Instructions
Cut 2 of the plum tomatoes into thin wedges and set aside.

Quarter the remaining 3 tomatoes and place in a food processor along with the lime juice and oil. Process to a smooth puree. Season with salt to taste.

Divide the lettuce among 4 plates. For each salad, drizzle the lettuce with 1 tablespoon of the pureed dressing and top with one-fourth each of the turkey, mozzarella, avocado, and tomato wedges. Drizzle each salad again with 1 tablespoon dressing and serve.

My daughter is extremely picky about her Caesar Salads. I've tried tons of bottled dressings and as many recipes. This is the creamiest, most consistent one I've found. I did try it with olive oil, but the canola oil gives it a better, more creamy consistency. I don't make this recipe as per the directions. I just throw all ingredients (except oil) in my food processor and blend, slowly adding oil until creamy. It is important to use fresh grated Parmesan, not the Kraft kind that comes in a bottle for sprinkling on pizza.

2 tbl Dijon mustard                                     
6 to 8 anchovy fillets, minced                                     
2 tbl chopped garlic                         
4 tbl distilled vinegar                             
3 tsp lemon juice                          
dash of Worcestershire sauce                  
2 cups canola oil
2 tbl warm water, if necessary                  
1 cup grated Parmesan                  
                                                 
How to make it
Place egg yolk, mustard, anchovies, garlic, vinegar, lemon juice, and Worcestershire sauce into a bowl.
Mix with whisk
Slowly add canola oil until fully incorporated
If dressing gets too thick, add warm water and then continue until all oil is added
Add Parmesan and continue to mix
Makes 1 1/2 cups
