This is so good. It reminds me of spanikopita.

Greek Spinach Bake

3 eggs
2 (10oz.) packages frozen spinach, thawed and well drained
8 oz. reduced fat feta cheese
1/2 cup green onion, chopped
1/4 tsp. dill
2 tsp. minced garlic

Beat eggs until frothy. Stir in rest of ingredients. Pour into a 2 quart baking dish sprayed with cooking spray. Bake at 400 degrees for 20 minutes. Cool 5 minutes before serving.

We love feta, so I'm not sure what to substitute. Maybe you could use cottage cheese?

The Italian spinach pie from the Kraft website (lunch dishes on the SB page) uses cottage cheese, parmesan, and grated mozz. I have used this recipe, with variations, quite often. It's even good cold, or for breakfast!

Quick Italian Spinach Pie, P1 [from kraftfoods.com]

1 container (16 oz.) BREAKSTONE'S or KNUDSEN Low Fat Cottage Cheese
1 pkg. (10 oz.) frozen chopped spinach, thawed, well drained
1 cup KRAFT 2% Milk Shredded Reduced Fat Mozzarella Cheese
4 eggs, beaten
1 jar (7 oz.) roasted red peppers, well drained, chopped
1/3 cup KRAFT 100% Grated Parmesan Cheese
1 tsp. dried oregano leaves

PREHEAT oven to 350°F. Mix all ingredients until well blended.
POUR into greased 9-inch pie plate.
BAKE 40 minutes or until center is set.

A Quick and Easy Veggie Side Dish

It’s easy being green — especially when it comes to eating vegetables. So if you’re looking for a simple yet delicious way to add more green veggies to meals, check out this healthy side dish. We’ve given a nutritious twist to this classic spinach recipe, which is the perfect complement to lean beef, pork, or poultry, or seafood entrées.

Quick Creamed Spinach (Phase 1)

Description
Using frozen spinach cuts down on the prep time of this classic dish. You can easily double or triple the recipe for a big holiday or family dinner.

Tip: When shopping for frozen spinach for this recipe, make sure to select a brand without added butter sauce.

Makes 4 servings

Hands-on time: 20 minutes
Total time: 20 minutes

Ingredients
1 bag (16 ounces) frozen spinach, thawed
3/4 cup fat-free milk
4 ounces reduced-fat cream cheese, cut into chunks and softened
2 teaspoons extra-virgin olive oil
1 small onion, minced
Pinch ground nutmeg
Salt and freshly ground black pepper
1/4 cup grated Parmesan cheese (1 ounce)

Instructions
Place the thawed spinach in a colander set over a large bowl; squeeze to extract the juice, reserving 2 tablespoons of the juice in a cup. Discard any remaining juice.

In a medium saucepan, combine the spinach juice, milk, and cream cheese. Bring to a simmer over low heat, stirring and pushing the cheese against the pan to break it up. (The mixture should be well combined but will not be smooth.) Remove the pan from the heat.

In a large nonstick skillet, heat the oil over medium-low heat. Add the onion and cook, stirring frequently, until softened, about 3 minutes.

Add the spinach, stirring to coat. Stir in the milk mixture and cook until bubbling, about 3 minutes.

Season the spinach with nutmeg and salt and pepper to taste. Sprinkle with the Parmesan and serve hot.

Just made it, exactly as written. I'm not in LOVE but I'm in Like. This is the kind of recipe I have been looking for when I'm low on fresh veggies. Which happens a Lot. My refrigerator goes from cram-packed to no veggies in a matter of days. You get a Huge serving of spinach with this and can refrigerate and reheat the leftovers easily. Keeper. Going to stock up on 10oz bags of frozen spinach tomorrow.

I have a similar regular recipe for Greek spinach pie that is made with 2 pie crusts, which my family loves. I make it for them with pie crust or phyllo and put my filling in either a red pepper or atop a portabella mushroom and bake it. It's pretty similar to the recipe at the top of this thread, but uses cottage cheese as well as feta. I use lf cheeses and it tastes fine. But it needs to be in or on something - not sturdy enough to eat like a quiche.

3 eggs
1 large onion, chopped and sauteed in a tiny bit of olive oil or just microwaved with nothing until soft.
1 cup lf cottage cheese (8oz)
8 oz. lf feta cheese
1/2 tsp. salt (or to taste)
1/4 tsp. pepper
10 oz. cooked and chopped spinach (frozen and defrosted is fine, fresh is better)
Restart : 1/8/13
Restart Wt: 184.4
CW: 184.4
Round 1: 1/5/09
Beginning Wt: 191.6
Goal #1 Met: 160.0 7/09
Goal #2 Met: 155.0 3/10
Ultimate goal: 150-155 without having to kill myself with exercise or give up chocolate, ice cream, or wine!
