Taco Soup

Hello everyone. I am new here, but have been on P2 of SBD for almost a week now. I started to get bored with the foods that I was eating, so I can up with this recipe last night. I have 3 daughters and a DH that absolutely loved it.


2 pounds lean ground beef
3 cans low sodium chicken broth
1 can diced tomatoes
1/4 cup onion
2 tbsp garlic
2 cans drained black beans (optional)
1 package Taco Seasoning
1/2 8oz package low fat cream cheese
1/2 bag 12oz low fat cheddar cheese shredded

Brown hamburger. While that is cooking put chicken broth, tomatoes, garlic, onions, black beans and taco seasoning into crock pot. Drain grease off hamburger and add it to soup mixture. 20 minutes before eating, add softened cream cheese. When melted, serve and sprinkle cheddar cheese on top. The cream cheese may look nasty on top, but believe me, it is wonderful.

Not that I really know it matters when you drain your meat off but 80/20 is not recommended for SB. 90% lean is recommended I believe. I always pick up extra lean.
Female 31, 5'9" or 5' 8 1/2" depending on who's measuring. Now 150-155 lbs.
No, it's not easy. But if the alternative is to be fat....what's it worth to ya?

Lazy Cabbage Roll Casserole PI, II or III

Lazy Cabbage Roll Casserole PI, II or III

2 Generous Servings

A: ½ lb ground meat
B: ½ chopped onion
½ chopped green pepper
1 Tbsp. Worcestershire sauce
1 tsp. thyme
1 tsp. garlic powder
1 tsp. salt
C: 11 – 19 oz. can of tomatoes, crushed
D: 3 c. coarsely shredded cabbage (I slice it crosswise in scant
½ inch slices)
E: 6 Tbsp. uncooked brown rice (Phase II or III only)
F: Grated parmesan cheese (optional)

In frypan, brown meat, stir to break up, add B, cook till golden. drain well, stir in C & E (if using) and heat till bubbling.

Scatter D loosely in slow cooker, pour meat mixture over top.

Cook on low 8-9 hours, or high 5-6 hours.

Top with F just before serving if desired

ecripps, when should the green pepper and seasonings be added when making your Lazy Cabbage Roll Casserole?

My guess is that in the recipe, when it says add B, it means all of the ingredients between the letter B and the letter C.

Yes, that is right, I am lazy I guess, so I group ingredients by a Letter, and all ingredients in a grouping go in together. I just do it that way to save typing all the names of the ingredients over again, so all of B group go in together, and so on for the rest of the groups.

This recipe is a family favorite, and I make it whether we are on a diet or not. It makes a lot from 1/2 lb. of ground meat, and feeds 2 generously.

DH loves it.

Can't wait to try it.. I'm going to double the recipe since a) I have a teen in the house and b) I want leftovers... Unfortunately if he likes it there wont be any!

We had the cabbage casserole a few weeks ago and son liked it, coworkers LOVED it. One tried her own version and said was NOTHING like mine! I had NO leftovers., :P

I made the Thai Chicken from the first post in this thread today. I was worried my roomie would complain it was weird, but she RAVED about it! I made a big bag of Asian-style veggies and served the chicken and sauce over it, with a little lime juice squeezed over it. It was WONDERFUL, and very easy - I'd suggest everyone give it a try!

living in south florida and looking for south beach friendly BBQ sauce. Can't seem to find store bought anywhere, any ideas?

There are no-sugar-added BBQ sauces available in the low-carb or dietetic sections of supermarkets, but I can't vouch for the taste or cost.
