Baked Oatmeal

Hi all,

I was on Weight Watchers for several years before finding the beach. Their core plan is very similar to P2. One of the staples for breakfast on that diet is baked oatmeal. I'm at the very start of P2, so I'll wait a while before having this, but I thought I'd share some of the recipes I've collected. Some conversions will need to be made for SBD, and certainly additional grains could be added, but these have potential and I haven't found any other recipes for them on this board.

Baked Oatmeal
Ingredients
2 1/2 cup rolled oats
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp table salt
1 Tbsp ground cinnamon
1 cup fat-free skim milk
2 large egg(s)
1/2 cup unsweetened applesauce
1 tsp imitation vanilla extract, no alcohol
Instructions
Preheat oven to 350 degrees. I use a 12-inch cast iron skillet and preheat it in
the oven. You can also use a stoneware deep dish baker.
In a medium bowl, mix the dry ingredients.
In another bowl, mix the wet ingredients making sure they are fully mixed.
Combine the wet and dry ingredients together, mixing well, and pour batter into pan.
Bake for 40-45 minutes, or until golden brown. Test center by inserting a knife and if it comes out clean, the Baked Oatmeal is done.

Laura’s Baked Oatmeal (3 PTS)
2 cups uncooked oatmeal (8pts)
1 1/2 tsp baking powder
1/2 tsp salt
1-cup fat-free milk (2pts)
2 mashed bananas (4pts)
1/2 cup egg substitute (1pt)
1/2 cup unsweetened applesauce (1pt)
1/2 cup Splenda (1pt)
1 tsp vanilla extract
1 tbsp ground cinnamon
Preheat oven to 350* Combine wet ingredients and add dry ingredients. Bake in sprayed 11x7” pan for 45 minutes.

BAKED OATMEAL
2 cup uncooked oatmeal
1 1/2 tsp baking powder
1/2 tsp salt
1 cup fat-free skim milk
1/2 cup Egg Beaters (or 2 eggs)
1/2 cup unsweetened applesauce (use an apple instead in the food processor for chunks of apple in it)
1/4 cup Splenda
1 tsp vanilla extract
1 Tbs ground cinnamon
Combine wet ingredients and add dry ingredients. Bake in sprayed 8" square pan at 350 for 35-45 min. keeps well in refrig. Or freezer. It's good cold or warm. Makes a great take along breakfast. 6 servings @ 2 WWP
Variations:
4 pkts. Of Nestles ff (25 calorie) hot chocolate mix added to it and eliminate the cinnamon; 6 bars @ 2 WWP
Substitute pumpkin for the applesauce & use pumpkin pie spice instead of cinnamon.
Two mashed bananas instead of applesauce
2 mashed bananas, small canned crushed pineapple (drained) and 2 carrots grated instead of applesauce (bake this one in 11 x 7 pan for 55 min; 6 servings @ 3 WWP

Core Banana Raspberry Chocolate Baked Oatmeal

POINTS® value | 6
Servings | 6

breakfast | This can be served warm or at room temp. It is good for breakfast or for dessert with a dollop of ff Cool Whip.

Ingredients

3 cup uncooked oatmeal
2 tsp baking powder
1/2 cup unsweetened applesauce
1 cup fat-free skim milk
2 large egg(s)
3/4 cup McNeil Nutritionals SPLENDA No Calorie Sweetener
2 medium banana(s)
4 serving fat-free sugar-free instant chocolate pudding and pie filling mix
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
2 medium banana(s)
1 cup unsweetened frozen raspberries

Instructions

Mix first 10 ingredients together to make a batter. Spray an 8x8 baking pan with Pam. Slice the 2 remaining bananas into the pan. Sprinkle the raspberries over the bananas. Pour the batter over the fruit and smooth out.
Bake in a 400 degree oven for approx. 45 minutes.

Baked Pineapple-Carrot Oatmeal

2 cups uncooked oatmeal
1-cup fat-free milk
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup egg substitute
2 bananas, mashed
small can crushed pineapple (own juice), drained
2 carrots, finely shredded
1/4 cup Splenda
1 tsp vanilla extract
1 tbsp ground cinnamon

Preheat oven to 350*. Add milk to oatmeal, and stir. Add rest of ingredients, and stir to mix well. Bake in sprayed 11x7” pan for 55 minutes.

Makes 6 servings, Core, or 3 PTS per serving.

BIG Breakfast Cookie
Ingredients for 1 BIG Cookie:

1/3 cup cups oatmeal
1 Tb raisins (I omitted and added 1 Tbls coconut for 1 point. Would be good without too.)
1 Tb flour (equivalent to 0 points)
1/3 cups fat-free dry milk
1/4 cup applesauce (no-sugar added)
1/4 tsp cinnamon
1/4 tsp. baking powder
1 Tb Splenda or other no-calorie sweetener

Directions:

Preheat oven to 350 degrees. Spray a cookie sheet with Pam. Mix all ingredients together and spoon a large mound on cookie sheet. Bake for 15-20 min, until golden brown on edges.


Baked Oatmeal with Apples & Raisins --Points: 3
Serves: 6 (199 Calories 3g Fat 4g Fiber)

2 cups quick cooking oats
1-1/2 tsp baking powder
1/2 tsp salt
1 cup skim milk
1 egg
2 egg whites
1/2 cup unsweetened applesauce
1/4 cup brown sugar
1/4 cup raisins
1 tsp vanilla
1 tsp cinnamon
1 cup diced apple (1 small), optional

Preheat oven to 325F. In a large bowl combine the oatmeal, baking powder and salt. Mix in remaining ingredients; stir and pour into a greased casserole dish or pie plate. Bake for 45 minutes. Serve hot.

Variations:

Cranberry -- 1/4 c dried cranberries for raisins; 1/2 tsp almond extract 1/2 tsp vanilla and 1 tsp orange zest for cinnamon

Plain -- Increase brown sugar to 1/2 cup and omit all remaining ingredients.

Core -- eliminate raisins and increase sugar to 1/2 cup, using a sugar substitute

Can you describe the texture of baked oatmeal...I'm trying to picture it, but I can't.

Just adding some more baked oatmeal recipes from earlier postings. Then I will add a link under the Breakfast section for Oatmeal breakfasts.

Baked Oatmeal, P2 [posted by lisalc98]

I make this one and our family enjoys it!

3 cups steel-cut oats
1 cup brown sugar substitute
2 teaspoons ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1 cup milk
2 eggs
1/2 cup melted Smart Balance
2 teaspoons vanilla extract
3/4 cup dried cranberries

Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mix together oats, brown sugar sub, cinnamon, baking powder, and salt. Beat in milk, eggs, melted SB, and vanilla extract. Stir in dried cranberries. Spread into a 9x13 inch baking dish.
Bake in preheated oven for 40 minutes.

Oatmeal Bake, P2 [posted by sashachel]

This is the recipe I copied from this site awhile ago. I did not write down who posted it though, sorry about that. It was very good though and very easy.

2 C. Old Fashioned Oats
1 1/2 tsp. baking powder (I think this is okay)
1 C. nonfat milk
2 eggs
1/4 C. unsweetened applesauce
1 heaping tsp. cinnamon
1 tsp. vanilla
1/4 cup splenda (little less)
Preheat oven to 325. Mix oats and baking powder. Add rest of ingredients and mix well. Pour into a Pam sprayed 9 inch pie plate, casserole or cake pan. Bake 45 minutes.
And here's the kicker: Top with whipped topping and sugar free maple syrup! It's breakfast bliss I tell you!

Baked Oatmeal, P2 [posted by McKean]

1/4 c. canola oil
1/4 c. sf applesauce
2/3 c. sugar substitute
3 eggs
3 c. dry oatmeal
1 tsp. cinnamon
1 tsp. salt
1/2 c. fat free milk
1/2 c. plain yogurt
1 tsp. baking powder
1 tsp. vanilla

Substitutions/Additions: Mixed Grain Cereal for oatmeal
1/2 apple, chopped
1/2 c. blueberries
2 tbsp. peanut butter and mini semisweet chocolate chips
Sprinkle Wheylow Gold on top

Wisk oil, applesauce, sugar substitute, and eggs. Add cinnamon, baking powder, salt, vanilla and whisk again. Add oatmeal then milk and mix. Spray 9X9 cooking pan with non-stick spray. Bake at 350o for 25 –35 minutes. Serving size 1/2 c..

Baked Oatmeal II, P2 [posted by McKean]

1/3 c. oil
1 c. wheylow (half white/half gold) or other sugar substitute
4 egg whites
2 1/2 c. dry oatmeal
1 c. oat bran
1 tsp. salt1 tbsp. cinnamon
1 c. fat free milk
1 tsp. vanilla
1 tsp. baking powder

Wisk oil, wheylow, and eggs. Add cinnamon, baking powder, salt, vanilla and whisk again. Add oatmeal and oat bran then milk and mix. Spray 9X9 cooking pan with non-stick spray. Bake at 350 o for 25 minutes.

Oatmeal Custard, P2 [posted by tennie]


Made this and loved it. Reheats well for quick breakfast. I baked it in individual custard cups and it still needed the hour baking time. Next time I'll use blueberries instead of the dried fruit. Hmmm, or apples.

Makes four servings.

2-3/4 cup water
1 cup uncooked rolled oats
1/2 cup egg substitute, thawed
1/4 cup sugar
1-1/3 cups skim milk
1/2 tsp vanilla extract
1/8 tsp salt
1/3 cup dried fruit (your choice)
1/2 tsp cinnamon
Vegetable cooking spray

Boil water in covered saucepan. Stir in oats. Return to a boil, reduce heat and continue to boil. Cook uncovered for about one minute, stirring occasionally. Remove from heat. Cover and set aside.

In large bowl, mix next five ingredients. Add cooked oatmeal, dried fruit and cinnamon to egg mixture and mix well. Pour into 8-inch square pan, coated with vegetable cooking spray. Place in larger pan of hot water. Bake in 350ºF. oven for one hour, or until set.

Serving Suggestion: Top each serving with 1/2 cup unsweetened fresh fruit, such as strawberry or peach slices.

I just wanted to share this one too. It's not baked, but cooked all night in a slow cooker for instant breakfast in the morning!

Overnight Oatmeal (P2)
From: Eating Well

Ingredients
8 cups water
2 cups steel-cut oats (see Ingredient Note)
1/3 cup dried cranberries
1/3 cup dried apricots, chopped
1/4 teaspoon salt, or to taste
To Make:
Combine water, oats, dried cranberries, dried apricots and salt in a 5- or 6-quart slow cooker. Turn heat to low. Put the lid on and cook until the oats are tender and the porridge is creamy, 7 to 8 hours.
Makes 8 servings, 1 cup each.
203 calories per serving; 3 g total fat (1 g sat, 0 g mono); 0 mg cholesterol; 37 g carbohydrate; 6 g protein; 6 g fiber; 80 mg sodium.
Oatmeal Unplugged
Halve the above recipe to accommodate the size of most double boilers.
To Make:
Combine 4 cups water, 1 cup steel-cut oats, 3 tablespoons dried cranberries, 3 tablespoons dried apricots and 1/8 teaspoon salt in the top of a double boiler. Cover and cook over boiling water for about 1 1/2 hours, checking the water level from time to time.
Steel-cut oats, sometimes labeled "Irish oatmeal," look like small pebbles. They are toasted oat groats—the oat kernel that has been removed from the husk—that have been cut in 2 or 3 pieces. Do not substitute regular rolled oats, which have a shorter cooking time, in the slow-cooker oatmeal recipe


Here is another one, probably from weight watchers due to the point value listed, but I'm not sure, I just got it from my recipe file.


Baked Oatmeal P2
1 whole egg plus 1 egg white (or 1/4 cup egg substitute)
2 cups oatmeal
1/4 cup raisins(sub another dried fruit like apricots)
1/4 cup brown sugar(use substitute)
1 1/2 tsp. baking powder
1 cup skim milk
1/2 cup applesauce(use unsweetened)
1/4 tsp. cinnamon
1 tsp vanilla extract
Mix Oatmeal and baking powder. Add remaining ingredients and mix well. Pour in sprayed 9" pie
pan or casserole dish or sprayed muffin tins. Bake for 45 minutes at 350 degrees.
6 servings, 3 POINTS each (or 12 muffins, 1.5 points each)

The texture is kind of like a cross between cake and maybe a quick bread, but not as dense... You can cut it into squares and eat it with a fork. Or you could put a chunk into a bowl and reheat with milk, especially if you freeze portions.

Are dried cranberries okay in P2? I bought a bag in December, but was afriad to use it b/c the only ingredients are berries and sugar. I want to make that oatmeal!!!

I'd go easy on the "craisins" because of the added sugars. Better off perhaps with some chopped up dried apricots. Lower GI, still very sweet, on the approved food list and pretty darn yummylicious in oatmeal!

Why not make your own dried cranberries?

Cranberries - How to Dry


Servings: Approximately 3/4 cup [190 mL]



1 [10 1/2-ounce / 300-g] pack frozen cranberries or
1 [12-ounce / 375-g] bag fresh or frozen whole cranberries
2/3 cup [160 mL] water
1/2 cup [125 mL] sugar (splenda)
With scissors or a paring knife, half semi frozen cranberries, lengthwise - leave to thaw completely - blot dry with paper toweling.
Into a medium-size saucepan, combine water and sugar.
Bring to a boil, over medium heat, stirring until sugar is dissolved.
Boil for 2 minutes, remove from heat and stir in cranberries; let stand for 1 hour or better, overnight.
Transfer cranberries into a strainer; leave to drain, reserving syrup.
Spread cranberries, into a single layer, onto a parchment-lined baking sheet.
Transfer into a preheated 175°F [80°C] oven, for 1 hour.
Drizzle with 1/4 to 1/3 cup [60 to 80 mL] of the reserved syrup [use remaining syrup to flavor beverages].
Return cranberries to oven - let dry for 2 to 2 1/2 hours more, until wrinkled and pliable.
Arrange cranberries into a single layer, onto a clean sheet of parchment paper layed onto a baking sheet.
Let stand in a cool environment for up to 2 days, until dried, soft, chewy and no longer sticky.
Transfer into a glass jar and refrigerate or transfer into a plastic bag and freeze dried cranberries.

I never thought to do that, and I have a dehydrator! I even have a bag of cranberries in my freezer from Christmas. Guess I know what I'll be doing this afternoon! Thanks surfer!

This was posted earlier by pb&j and is another way to make "dried cranberries"

[from pb&j] Instead of boiling fresh cranberries in plain boiling water, I add a packet of SF apple cider (Alpine brand) to the boiling water. The cider is very sweet (sweetened with splenda I think), but it cuts back the amount of splenda i have to use to sweeten the cranberries. In addition to this, i usually add 1/4 cup splenda (but you might want to adjust for your own taste) as soon as the first cranberry "pops", i remove/drain the cranberries (if you wait longer, then get really sticky when you dry them), place in single layer on pan. then bake at 375 for 40 minutes, and then turn off oven and leave in overnight to dry out. (or just use a food dehydrator)

This one

Baked Oatmeal P2

1/4 cup raisins(sub another dried fruit like apricots){I use 1/4 cup organic raisins}
1/4 cup brown sugar(use substitute){I used 1/4 cup splenda and couple squirts of sf maple syrup}
1 1/2 tsp. baking powder
1 cup skim milk {1%}
1/2 cup applesauce(use unsweetened) {musselmans make one sweetened with splenda}
1/4 tsp. cinnamon
1 tsp vanilla extract
Mix Oatmeal and baking powder. Add remaining ingredients and mix well. Pour in sprayed 9" pie
pan or casserole dish or sprayed muffin tins. Bake for 45 minutes at 350 degrees.
6 servings, 3 POINTS each (or 12 muffins, 1.5 points each)
{I used the big texis size 6 muffin tin}
***note they stuck, I might spray better next time or maybe it's my the store brand spray?
Next time I might use 12 count muffin tin.

Sorry, I meant to warn against the sugar in the cranberries! Yes, I would just omit them as redrox pointed out. Or you could sub another dried fruit w/o sugar. I think dried apples are often sold w/o sugar, that might work too.
