Mock cornbread

I got this recipe from the paid site.It was actually part of a mexican casserole recipe but I liked the cornbread just plain.(It really looks like cornbread)It is perfect along side of chili on these cold days.I don't know who originated the recipe.

Mock cornbread
-1 can great northern beans drained and rinsed
-4 eggs
-1t salt
-1t baking powder
-2T olive oil
-1/3 C sugar substitute
*the original recipe called for 1T cumin and 1t Tabasco but I omitted it b/c that was for the mexican casserole.

Combine all ingredients in the blender and process until smooth.Pour in a 11x7 pan and bake at 400 until toothpick is clear when inserted in the center(25 min in my crazy oven.)Works well as muffins too!

I think this really tastes like a very moist cornbread.

I am happy to share -this is one of my favorite beachy recipes. It really looks pretty and golden on the outside just like cornbread. It does have a fair amount of sugar substitute though, so I try (emphasize try) to limit it and use it as my sweet treat like I would black bean brownies. I hope everybody likes it- hats off to whoever thought this one up!

It probably doesn't taste like corn. It has that sweet flavor though and like so many other mock recipes(fauxtatoes) it is a mind over matter thing. There is a fairly long thread on the whole casserole recipe on the paid site but alot of comments are regarding the cornbread. It seems to be all or nothing, people love it or hate it. It is so easy it's worth a try though.

I forgot to say-I think this is phase 1 appropriate. After all the black bean brownies are ok in ph1 so this should be as well right?Still a sweet treat though I believe.

rg: It's great that you're watching your consumption of artificial sweetener, but I wanted to let you know that you don't *need* to count this recipe toward your sweet treat allowance. The so-called "sweet treats" are things with no (or very little) nutritive value: sugar-free hard candies, gum, soda, etc. This corn bread contains good stuff (namely beans), so it doesn't "count". Same with the black bean brownies, believe it or not, and the ricotta cremes, and the peanut butter fudgesicle. Just because it tastes sweet doesn't make it a limited "sweet treat". Yay!

too funny.. just tonite, I made some chili, and, I was pondering Asking details of the breakdown for cornbread.. I'd say, thats Something I really Miss.. quick, and Easy.. but, I would get by with 1/2 the recipe... if I had a smaller pan.. :) I'm Not ready for faux food yet.. but, thanks recipelover for the note to Bobs recipe, I'll fix that tomorow.. tonite, I fixed the Pumpkin bisquits.. NOT bad! .. well, ok, I ate TOO many.. woops... but, I have all this pumpkin..

YAY!!!! Thanks for Caterpillar for the info. Bigger pieces of mock cornbread for everyone! :lol: I guess I need to read the basics of the book again it has been awhile.....

I'm not sure I'll ever be ready. The 'faux' recipes are generally just that, 'faux'. But for some folks, they work.
