Phase I Peanut Butter Cookies

i made these cookies last night:

1 cup splenda
1 cup peanutbutter
1 tbs vanilla extract
1 egg

they came out fantastic. i've been so strict on myself that i haven't had time to even think about treats for the past 12 days! boy were these awesome. i made 20 cookies (not too big not too small) and i know i'm supposed to split for 16 days but i ate 2 of them because they smelled so good :P the REST i promise i'll eat one a day.

oh and one thing i noticed is that i had to bake them longer. i baked them at 310 F for 10 minutes, when the timer rang i peeped in and they looked almost identical to the batter i put in there. so then i baked them another 5, then another 3. CRUMBLINESS wasn't much of a problem really. however the soft chewy variety sounds too good to be true. i'll make sure to try that next time.

I like to put a semisweet chocolate kiss in the center of each one. Or about 5 or 6 mini chocolate chips.

this is a nightmare. my mom was asking what i did with all the sugar, and i'm like what? then she points to the empty sugar container and my jaw dropped. the splenda and sugar were in identical containers, but the sugar is usually tucked away somewhere while the splenda is on the counter for me to use. last night i used about 3/4 cup of SUGAR and ran out, so went to the splenda bag and filled it up to 1 cup.

i am soooooo upset!!!!!! i'm going to throw these out and make new ones, but it's still not the same :( i ate 2 yesterday and 1 today... i'm going to work out extra now that i have offically CHEATED on the south beach diet. it's such a rotten feeling...

Ciara, you wont believe this, but I've been stressing whether to make these, with sugar, for my kids who can't eat wheat (flour). But, I kept wondering if they were worth it. There, you've answered my question without me asking. Thank you! (Something good came from your mistake!)
Restarted 3/14/11 directly into Phase 2.

Made these last night and they are AWESOME.

For those who think they're too sweet.....
I followed a recipe from another site, seeing as this site was down yesterday and I couldn't get to it. Instead of a full cup of Splenda, it called for 3/4 cup. I didn't add vanilla. They were a little crumbly (not bad - maybe others' cookies are so crumbly because there's so much dry mix wth the Splenda - these were moist as can be) but just the RIGHT amount of sweetness. I would never consider adding any more. You might get a few less cookies out of a batch (I got about 17 silver dollar sized cookies) but they tasted awesome. You may want to try that!

I've already had my two cookies for the day but am so tempted to go back for one more this afternoon.... And everyone here at work loves them. Nobody knew they were Beachy cookies until I told them!!! ;)

I made these today and I was a little disappointed. I could eat them but I think I would rather have a Peanut Butter Chocolate shake instead. I gave my husband one of them and he didn't like it. He said it tasted like cardboard. I didn't think it was that bad. I did add 2 Tbsps. ricotta cheese and 1 teaspoon of vanilla. I wonder if how it would taste if you added Cream Cheese (lowfat). Maybe I'll get ambitious and fix them one day altering the recipe. :wink:

Wow, that sounds good!! I'll have to try those. I had no idea I could have so many things. I will really have to read up here.

Hey. I also tried these adn I san't a big fan. My husband could barely get one bite down, not that it matters if HE likes them. :) Here is the recipe I followed:

1 egg
1 cup granulated splenda
3/4 cup natural peanut butter (smuckers)
1/4 cup part skim ricotta
1 tablespoon vanilla

I can't even explain how they tasted. Just not too good. Maybe they weren't sweet enough or something. Or maybe I Need to add chocolate. Not sure. I think I'll freeze these and try them another day. Maybe they would be good w/ a dab of cool whip on top. :)))))

thats about the same recipe i used, believe me they are odd.... but i do enjoy them more frozen. about one a day (okey sometimes 2....) they make you thirsty, kinda thick or something. i just take little tiny bites off and pretend it tastes better....

OK...I had put what I made in the freezer last night. Warn, BLUGH. Frozen today, YUUUUMMM!! What a difference if they are frozen!!!!! So...I'm on board. I LOVE THESE! :)

I bought some natural PB last night but was curious as to why this is so much better than regular PB? Well I didn't look at regular PB but at the carb options PB which looked creamy like Jif or whatever and it had less than 1 gram of sugar. There were a lot more ingredients in that jar than the natural though. The natural jar said no homogenized (is that the right word?) oils so is that better? Still trying to get used to reading and understanding all these labels.

I read it somewhere, but it has to do w/ the oils. The "fake" pnut butter has added oils that are not good for you. In the natural, you are really eating just nuts. So it's all full of nature's goodness. :) Is that corny or WHAT! :)
