Dessert Alternatives in Phase One

I've tried the Ricotta Cheese recipies and I nearly gag on the stuff.

Is there any other alternative? If not can I replace it with a usual snack or even go without?

this is great...it really reminds me of reese's:

take 1 no sugar added fudgesicle and microwave for 10-15 seconds in a mug or bowl (whatever you will be mixing in). then slide it off the stick and add some peanut butter (the real unprocessed kind is recommended because it's better for you and it's a little runnier which makes it mix well for this goopy treat). mix in some low fat cool whip and you've got a creamy, peanut buttery chocolatey dessert. sometimes i skip the cool whip stuff and its still good!
my favorite food is pancakes...is that so wrong?

I wasn't impressed with the ricotta cheese desserts either.

One treat I really enjoy for breakfast OR dessert is egg custard.

Very easy to make and you can really be creative with flavors.

Even the basic egg custard is yummy.

Here's a basic one:

Baked Custard
2 eggs
1 cup 1% milk
3 Tbs splenda
1 tsp vanilla
Nutmeg
[I added ½ low fat ricotta cheese, which made it much creamier. I also double this recipe. One can never have too much custard!]

Preheat oven to 350. Pour very hot water into a square or rectangular baking dish large enough to hold 3 (1/2 cup) pyrex cups. Blend all ingredients but nutmeg together very well. Pour into 3 pyrex cups. Sprinkle with nutmeg. Place in hot water in pan. Bake 25 minutes for milk, 30 or more for soymilk. Eat warm or chilled.

We like jello with cool whip, the warm brownie thingy, different flavors of custards.
We tried the ricotta desserts too and we didn't like any of them... but we're satisfied with these. :D

I always like the peanut butter whip for an after dinner delight.. also the black bean brownie receipe...both satisfy my cravings for something sweet or chocolatey..

here is the brownie one...

CHOCOLATE BEAN BROWNIES
1 CAN RINSED & DRAINED BEANS
(black or small white beans work well)
3 EGGS or egg substitute
3 TBS. OIL
4 TBS COCOA POWDER
A PINCH OF SALT
1 TSP. VANILLA
½- ¾ C. SWEETNER

MIX INGREDIENTS TOGETHER IN A BLENDER/ FOOD PROCESSOR UNTIL PUREE. POUR INTO A GREASED 8x8 CAKE PAN.
STIR IN SOME Sugar Free CHOCOLATE CHIPS AND NUTS
BAKE 350 APPX. 30 MIN
VERY DENSE CHOCOLATELY BROWNIE…

Peanut Butter Whip
1 pkg.instant sugar free,fat free pudding
(white chocolate, butterscotch, vanilla work well)
1 1/2 C cold milk
1/4 C. Peanut Butter
1 1/2 C light cool whip
Mix pudding and milk beat 1-2 minutes....starts to thicken.. stir in peanut butter and then fold in cool whip... chill and eat

If you haven't discovered my recipe summary yet, you need to check it out for a variety of things that you can have on Phase 1 for desserts and breakfasts as well as main dishes. It is sort of like a table of contents that I decided we needed on this site. It makes finding certain recipes a lot easier. It is always in a "sticky" near the top of the main page or in my signature lines in all of my messages (as in this one).

The fudgsicle dessert is called South Beach Peanut Butter Cup and we still have it all the time. We freeze ours for about 15 min. so that it gets like ice cream. There is a link for custards and many of them are really good. There are more desserts for Phase 1 and lots of Phase 2.

Pudding?

I am confused on the pudding issue. Can I eat sugar-free chocolate pudding? It seems you can only have it in Phase II but my friend ate in Phase I all the time. Anyone know the answer?

Pudding is phase 2 because it contains corn starch. Also when you do add it in it must be SF/FF
