I made this last night and it turned out delicious. I'm going to make another batch to freeze.

Slow Cooker Pepper Steak
2 pounds beef sirloin, cut into 2 inch strips
garlic powder to taste
3 tablespoons vegetable oil
1 cube beef bouillon
1/4 cup hot water
1 tablespoon cornstarch
1/2 cup chopped onion
2 large green bell peppers, roughly chopped
1 (14.5 ounce) can stewed tomatoes, with liquid
3 tablespoons soy sauce
1 teaspoon splenda
1/2 teaspoon salt

Sprinkle strips of sirloin with garlic powder to taste. In a large skillet over medium heat, heat the vegetable oil and brown the seasoned beef strips. Transfer to a slow cooker.
Mix bouillon cube with hot water until dissolved, then mix in cornstarch until dissolved. Pour into the slow cooker with meat. Add onion, green pepper, stewed tomatoes, soy sauce, sugar and salt.
Cover and cook on high for 3 to 4 hours, or on low for
6 to 8 hours.

I served it over brown rice too :D

Crock Pot Recipe

For P2 or P3
Slow-Cooker Enchiladas

1 lb. ground beef
1 c. chopped onion
1 can (16 oz) pinto beans
1 can (15 oz) black beans
1 can Rotel Original Tomatoes & Green Chilies
1/3 c. water
1 t chili powder
1/2 t ground cumin
1/2 t salt
1/4 t pepper
1 c. shredded 2% Cheddar Cheese
1 c. 2% Monterey Jack Cheese
6 WW Tortillas

Brown onion and beef, drain. Add next 8 ingredients; bring to a boil. Reduce heat, cover and simmer 10 minutes. Combine cheeses. In slow cooker layer 3/4 c beef mixture, one tortilla and 1/3 c cheese. Repeat layers. Cover and cook on low for 5-7 hrs or until heated through.

Happymomoftwo... I made those peppers in the crockpot yesterday and they were veryyyy good. Hubby said this is going to be a regular meal for us! I made a few alterations: When I started the peppers I added 1/2 inch water into crockpot added 8oz tomato sauce on top of peppers then last 2 hrs of cooking I added a small jar of marinara sauce. It was delish! I did not use the tomato sauce/sour cream combo (yuck) My crockpot only held 4 peppers. Will be a regular for us!!!!! Thanks!!!!

Well I have some stuffed peppers in my crockpot today for dinner again and made some extra pepperless meatballs to and covered in a can and a half of tomato sauce. Can wait to have it later.

I have been doing a lot of cooking in the crock pot lately and am beginning to want some different stuff.
I've been on internet and found some more crock pot recipes so I thought I'd share!

Crockpot mexican pork

1 pound pork boneless loin roast - cut into 1" pieces
1 20 oz. jar salsa
14 oz can chopped green chiles - drained
15 oz can black beans - rinsed and drained
1 cup shredded Monterey jack cheese

Mix pork, salsa, and chiles in slow cooker. Cover and cook on low heat setting 6-8 hours or until pork is tender. Stir in beans. Cover and cook about 5 min. or until hot. Sprinkle with cheese.

** thought might try this also with chicken breasts**


Crockpot Swiss Steak

3 tbs. WW flour
1 tsp. ground mustard
1/2 tsp salt
1 1/2 pounds beef boneless round - cut into 6 pieces
2 tbs canola oil
1 large onion - sliced
1 large bell pepper - sliced
14.5 oz can diced tomatoes - undrained
2 cloves garlic - finely chopped

Mix flour, mustard, and salt. Coat beef with flour mixture. Heat oil in 10 inch skillet over med. heat. Cook beef in oil about 15 min. turning once, until brown. Place beef in crock pot. Top with onion and bell pepper. Mix tomatoes and garlic, pour over top of beef and vegetables. Cover and cook on low for 7-9 hours or until beef is tender.

This one I'm not 100% sure of but it sounds good...
Chicken in Mushroom Gravy
6 boneless chicken breasts
2- 1 1/2 oz 98% ff condensed cream of mushroom soup (that's part i'm not sure of
salt and pepper to taste
8 oz mushrooms, canned- sliced and drained
1/2 cup dry white wine

Place chicken in crock pot. Season with salt and pepper, Mix wine and soup. Pour over chicken, add mushrooms, cover, and cook on LOW 7-9 hours.

LOWFAT CROCKPOT CHICKEN CREOLE
3 lb chicken breasts
1 red bell pepper
1 onion, sliced
1 can tomatoes
3 pks. splenda
1/2 tsp paprika
Lousiana hot sauce to taste
1 cup celery, diced
1 green bell pepper sliced
1 can sliced mushrooms
1 tsp garlic powder
1 tsp cajun seasoning
salt and pepper
2 cups ww brown rice

Place chicken in bottom of crock pot. Combine remaining ingredients (except rice), & add to crock pot. Cook on high 4-5 hours or low 7-8 hours. Cook rice and serve over the rice.


LF CROCKPOT LEMON PEPPER CHICKEN

4 chicken breasts
1 tsp salt
1 tsp garlic powder
paprika
2 tbs ff margarine or smart spread
1/4 tsp black pepper
lemon pepper
1/2 cup ff chicken broth or water

Rub chicken breasts with margarine & season with salt and pepper. Sprinkle chicken generously with lemon pepper, garlic powder, and paprika. Pour broth into crock pot and add chicken. Cook low 6-8 hours until chicken is well done.

Well, so far that's all I've found. I havent' tried any of these so if anyone does please let me know how they turn out! :)

Today, I made taco soup. I started it on the stove, but it could easily "cook" in the crockpot (have before).

Taco Soup

ANY beans...canned (drained) or otherwise
I used:
1 can black beans
1 can garbanzo beans
1 can pintos
1 can lt kidney beans
2 cans beef broth
1 large jar salsa
1/2 pound ground chuck browned and seasoned with taco seasoning

Put all in pot and simmer.

Serve with cheese, sour cream (and tostitoes for the kids :roll: )

This is great for company. Everyone loves it.

crockpot liners

Vermont country store carries syntheic, disposable crockpot liners. I've never seen them anywhere else. You can also use them in the microwave. They are boilable, leakproof grease proof and freezable to
-50 farenheit
You put water between the liner and the crockpot.
I bought them when I bought a new small crockpot, but haven't used the crockpot yet to try out the bags.

ok..i am dead serious. this is one of the most delicious things i have ever eaten. enjoyed pre sbd and lately also! family loves it. serve over pasta or rice. (sbd= brown/ww of course!)

in a crock put, put

boneless, skinless breasts (1 1/2 lbs or so)
1 can creme chicken healthy requests soup
1 block ff/lf creme cheese
1 packet good seasons zesty italian dressing
1-2 cans mushrooms if you like them


cook all day and enjoy!
Starting again at 170 before I gain it all back. (sigh!)
