I have been doing a lot of cooking in the crock pot lately and am beginning to want some different stuff.
I've been on internet and found some more crock pot recipes so I thought I'd share!
Crockpot mexican pork
1 pound pork boneless loin roast - cut into 1" pieces
1 20 oz. jar salsa
14 oz can chopped green chiles - drained
15 oz can black beans - rinsed and drained
1 cup shredded Monterey jack cheese
Mix pork, salsa, and chiles in slow cooker. Cover and cook on low heat setting 6-8 hours or until pork is tender. Stir in beans. Cover and cook about 5 min. or until hot. Sprinkle with cheese.
** thought might try this also with chicken breasts**
Crockpot Swiss Steak
3 tbs. WW flour
1 tsp. ground mustard
1/2 tsp salt
1 1/2 pounds beef boneless round - cut into 6 pieces
2 tbs canola oil
1 large onion - sliced
1 large bell pepper - sliced
14.5 oz can diced tomatoes - undrained
2 cloves garlic - finely chopped
Mix flour, mustard, and salt. Coat beef with flour mixture. Heat oil in 10 inch skillet over med. heat. Cook beef in oil about 15 min. turning once, until brown. Place beef in crock pot. Top with onion and bell pepper. Mix tomatoes and garlic, pour over top of beef and vegetables. Cover and cook on low for 7-9 hours or until beef is tender.
This one I'm not 100% sure of but it sounds good...
Chicken in Mushroom Gravy
6 boneless chicken breasts
2- 1 1/2 oz 98% ff condensed cream of mushroom soup (that's part i'm not sure of
salt and pepper to taste
8 oz mushrooms, canned- sliced and drained
1/2 cup dry white wine
Place chicken in crock pot. Season with salt and pepper, Mix wine and soup. Pour over chicken, add mushrooms, cover, and cook on LOW 7-9 hours.
LOWFAT CROCKPOT CHICKEN CREOLE
3 lb chicken breasts
1 red bell pepper
1 onion, sliced
1 can tomatoes
3 pks. splenda
1/2 tsp paprika
Lousiana hot sauce to taste
1 cup celery, diced
1 green bell pepper sliced
1 can sliced mushrooms
1 tsp garlic powder
1 tsp cajun seasoning
salt and pepper
2 cups ww brown rice
Place chicken in bottom of crock pot. Combine remaining ingredients (except rice), & add to crock pot. Cook on high 4-5 hours or low 7-8 hours. Cook rice and serve over the rice.
LF CROCKPOT LEMON PEPPER CHICKEN
4 chicken breasts
1 tsp salt
1 tsp garlic powder
2 tbs ff margarine or smart spread
1/4 tsp black pepper
1/2 cup ff chicken broth or water
Rub chicken breasts with margarine & season with salt and pepper. Sprinkle chicken generously with lemon pepper, garlic powder, and paprika. Pour broth into crock pot and add chicken. Cook low 6-8 hours until chicken is well done.
Well, so far that's all I've found. I havent' tried any of these so if anyone does please let me know how they turn out!
