Here it is only two days after I made this bean soup and, out of the blue, my husband says, "You know, if you want to make that bean soup you made the other night again, I'd really like that." My husband RARELY makes requests. In fact, I can't remember the last time he offered an unrequested meal request (usually I'm fishing for ideas.)

Restarted 3/14/11 directly into Phase 2.
Needing to re-lose 13 lbs.
Current weight loss: 3 lbs (as of 3/20/11)

Thanks Tenmorepounds. Since I hardly cook, it is a great and easy way to make dinner for the both of us. My husband loves beans. He used to buy those pork and beans in a can. I will make that tonite and of course put some yummy FF parmesan cheese on top. Thanks again!!!

I made this for dinner tonight (and a few lunches and dinners for the rest of the week!) Anyway, I added a packet of dry ranch dressing mix and instead of chicken some taco-seasoned ground beef (my husband had tacos for dinner, so I used the same meat). Also, I didn't drain the diced tomatoes and dashed a little cayenne pepper...I like things hot!
Anyway, this was awesome! So filling and cheap! I totally recommend this recipe...

I just made the soup tonite and it was delicious!!! I loved it. My husband loved it. I made some extra for like 2 more lunches for myself and 2 lunches for him. Thank you soooo much. It's easy, filling and cheap!!! I putted a little bit of low fat parmesan cheese on top and it gave it an extra cheesy taste. Delicious!! Thanks again!!

I changed mine to 6-Can Bean Soup
I added a can of chicken breast instead of cooking a breast. It worked out great and even easier.
PS I also used a can of Mexican Stewed Tomatoes (DelMonte I think) and I did not drain them. It was great! The can was slightly larger than the Rotel Tomatoes and it was spicy too.

I made this soup with ground turkey meat (cheap and good!) so it turned out kind of like chili. I REALLY like this recipe. Perfect for the cold weather that's coming in right now. As a college student, it doesn't get easier than dumping some cans in a pot and making dinner for the whole week. Thank you for posting it!

Good recipe!! I, too, used canned chicken, drained, so it was a REALLY all cans recipe. You can have it on hand anytime. I made it for my 18 year old daughter who comes over to eat...you know how children are...and she loved it. Thanks!!

Hate to ask a stupid question but this recipe sound great to me EXCEPT, and this is gonna sound weird, I don't like tomatoes. I like tomato products; ketchup, sauce etc but not the texture of whole, or chopped tomatoes. So, for this recipe could I sub or what if I blend the rotel tomatoes for the flavor and all. Would rally like to make this.

I would think you could put in a can of no sugar added tomato sauce and if you want the spice from the rotel, you can just put in a small can of diced chilis or jalapenos... Let us know how it turns out!

The recipe is great. I made the original recipe without any changes, except that I added some Mexican oregano and some chili powder. Did the chicken breasts in the microwave. I froze half and we had the remainder for two lunches. One day I sliced 1/2 avocado on the hot soup. Great! The next day we added a few broken Trader Joe soy and flaxseed chips. The recipe is definitely a keeper.
Tonight for dinner I am making two of my before SB Indian recipes. They are chick peas in ginger sauce and glazed ginger cauliflower. Realized all the ingredients are SB friendly.

Thank you! I wanted to make soup today but needed inspiration. This is it! I don't have Rotel so I'll just use a can of chopped tomatoes and a can of diced green chiles. That should do the trick. I like the idea of spicing it up with chili powder and cumin, too. Maybe some garlic...or sauteed onion...

I made this soup last night and am eating it for breakfast. I put in two chicken breasts (one was small, the other was normal sized) and also did not drain the liquid from the beans. This soup is a close cousin to the Taco Soup I used to make whilst on Weight Watchers and in that recipe there was no draining. I also added a teaspoon each of oregano and chili powder and about half a teaspoon of cumin. This soup is not spicy. After I heated it in the micro this morning I added some black pepper to wake it up. That helped!

This is really very close to WW taco soup which I loved. I am having to
cook my black beans as I don't have canned right now but have them on already. They should get done in time. I didn't put chicken in my taco
soup so think I'll save my roasted chicken breast left over for a side
salad. I need to vary my diet more so this helps. I am searching the
recipes forum for more ideas. Luckly I have everything else if I use
regular tomatoes & spices. I don't drive (never have) so I have to sub
a lot till I get a ride to the store again. I think I'll put some chopped
onion in mine too.
Starting over again.
