Awesome easy, hearty bean soup -- P1 friendly! m

I got this recipe somewhere on these boards but it bears repeating. I could eat this stuff every day... yummy and filling, too!

5-can soup

1 can reduced fat chicken broth
1 can ff refried beans
1 can rotel tomatoes w/chilies (drained)
1 can kidney beans (drained)
1 can black beans (drained)
1 skinless, boneless chicken breast, cooked and cubed

Mix all ingredients in a stock pot, heat and eat!! Add herbs or other seasonings to taste (but the spicy rotel tomatoes gives it a kick).

I've had this soup before it's really good. Quick and easy too. You should put it in Burdle's Bean Thread!

Do the refried beans dissolve a bit? That just looks strange to me? Do they just become a creamy texture in the soup? Sounds yummy, but dangerous to those around you!

Yes, the refried beans just seem to thicken the soup and make it creamier. The first time I tried to make it I didn't have refried beans and while it was still good, it is better with the refried...

Strangely, I have found that this soup has not made me gassy. Really!!

Can I just say, "Yum!!!!"? I opened a can of navy beans by mistake and so I just threw those in there too, and I only had a can of Rotel tomatoes with chiles & lime & cilantro and threw in a bit of garlic. I'm thinking this is going to be quite the staple for this fall and winter.

I just made this. Excellent! I made two substitutions. One, because my mother (the "it's too peppery" policewoman) is here, I used a can of fire-roasted chopped tomatoes instead of the rotels :cry: (but the smokey flavor is nice!) And, because of a lack of cooked chicken, I put in half a ham steak all chopped up (I probably should have only used 1/4, but I got carried away.) So good!
Restarted 3/14/11 directly into Phase 2.
Needing to re-lose 13 lbs.
Current weight loss: 3 lbs (as of 3/20/11)

I made it too today for lunch it is great and easy. I stuck to the recipe for the first time to see what to add next time and not much I will change except I did put a small spoon of FF sour cream in it but it was good before and with the sour cream thanks for sharing.

It may be regional, but Rotel is a brand of canned tomatoes... they have chilis in them so they are a lot spicier than regular chopped tomatoes in a can. You could always use regular tomatoes and add canned or jarred chilis or jalapenos or other spicy stuff.

Thanks for the Rotel description.
I'm in England and a lot of the recipes on this forum have, what seem to me, unusual ingredients - which are probably American names or brands.

I make a similar (can based) soup. the family calls it Mom's quick Minnestronne

1 can diced or stewed tomatoes w/ water
1 can green beans w/ water
1 can beans (I prefer black)drained & rinsed
1 can or 1/2 bag mixed veggies
3c water
3 bullion cubes or equv in powder
carrot, cut into small slices
mushroom cut into slices (optional)
onion
oregano
parsley
2 oz pasta of small pieces or broken up

Toss all into a pot and simmer 15 ish minutes

I generally serve this with a green salad and spinich bread (NOT SBD friedly but I am willing to share.

Even my late hubby, the original "wheres the meat" person accepted this as a compl3te dinner. I can hardly wait til it cools down here in metro Chicago and I can do this again to cover a couple meals in a week.

Rotel tomatoes

Rotel is a brand of tomatoes like Contadina or Hunts. Their tomatoes are canned southwestern style with chiles and what have yous. The flavors are on the cans.
