Crockpot Beef And Broccoli

Crockpot Beef And Broccoli

1 1/2 lbs. boneless round steak; cubed
4.5 oz. jar sliced mushrooms; drained
1/2 cup chopped onion
1/2 cup beef broth
3 Tbsp. teriyaki sauce
2 cups frozen broccoli florets
1 Tbsp. cornstarch
2 Tbsp. water

Combine beef, mushrooms, onion, broth and teriyaki sauce in
crockpot. Cover; cook on LOW for 8-10 hours. Dissolve
cornstarch in 2 Tbsp. of water 35-40 minutes before serving.
Stir into beef mixture. Add broccoli; stir. Cover and cook
35-40 minutes more until broccoli is tender.

Wow so many new recipes to try. Thanks so much everyone.

My roast turned out great. I can honestly say it was the best one I've ever cooked and definitely the easiest. I love the crockpot already :D :D :D

My maternity leave is over in 4 weeks so I'm trying to plan fast ways to have dinner ready when I get home. Hardly any dishes to wash either :D

Speaking of dishes, I want to say that I heard you can line your crock with aluminum foil to aid clean up? Anyone else hear that?

This one is so easy you will not believe how tasty it is:
Chicken breast in crock pot
canned diced tomatoes
1 pkg Lipton onion soup mix
let it cook!
can top chicken and sauce at the end with moz. cheese.
Delicious!

You guys are great! I've been copying and pasting all morning. I've made the chipotle pork tenderloin and the beef stroganoff from this thread, both are YUM! About lining the crockpot with foil -- I bet it would be fine. I've cooked a whole chicken in mine but rested it on top of four foil balls to keep it out of the grease. Worked fine! Happymom, your roast sounds terrific. I can only cook roast in my crockpot. Whenever I try to cook one in the oven it turns out terrible! I live close to my job, so I often come home during lunch and put dinner in the crockpot. When I come home in the evening the house smells wonderful and dinner is READY! Great for those evenings when we have baseball games or Bible school!

I have this one cooking in my Slow cooker:
Beans, beans and more beans in the Slow cooker - P1
Makes 12 servings

1 package dried mixed beans
1 tsp. Baking soda
1 slices turkey bacon, cut in small pieces
1/4 cup chopped onions
1 stalk chopped celery
2 gloves of garlic mashed or 1 Tbs.
Salt and pepper to taste
2 Tbs. salsa or sofrito
1 tsp. Red pepper flakes
Salt and pepper to taste
1 tsp. Splenda

Clean and rinse beans.
Place beans in a slow cooker and cover with water and add baking soda.
Cook beans on high for about 2 hours or until tender.
Discard water and return beans to slow cooker.
In a small skillet sauté bacon until crisp.
Add onion, celery, and garlic, cook until tender.
Add veggies to slow cooker.
Add sofrito or salsa, pepper flakes and Splenda.
Add salt and pepper to taste.
Reduce heat to low and cook for a couple of hours more.
Very good with grated reduced-fat cheddar or Mexican style cheese.

I made the beef stroganoff and it tasted great but it was really liquidy. I added the sour cream and then cooked for another hour but it didn't seem to thicken at all. Has anyone else had this problem?

I also made this soup which turned out really good.

Easy Italian Vegetable Soup
All Phases. Makes 5 to 6 servings.
1 can (14.5 oz) diced tomatoes, undrained
1 can (10.5 oz) condensed beef broth, undiluted
1 package (8 oz) sliced mushrooms (optional)
1 medium zucchini, thinly sliced
1 medium green bell pepper, chopped
1 medium yellow onion, chopped
1/4 cup dry red wine or beef broth
1 1/2 tablespoons dried basil leaves
1 teaspoon sugar (or sugar substitute, or omit)
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1 cup (4 oz) shredded mozzarella cheese (optional)

Combine tomatoes, broth, mushrooms, zucchini, bell pepper, onion, wine, basil and sugar in slow cooker. Cook on LOW 8 hours or on HIGH 4 hours.

Stir oil and salt into soup. Garnish with cheese, if desired.

Lining the crockpot with foil would probably work fine, but I know that lining it with an oven roasting bag works wonderfully!

do you cook the ground chuck in the stuffed peppers b4 putting into the peppers?

Hapigirl I would brown the beef with the onion first. When its done I would mix the tomato and rice in the pan and then stuff the peppers.

I just tried this one tonight and loved it. My husband didn't like it though :( I'm going to make another batch and freeze them for fast lunches.

Sweet and Sour chicken
8 boneless, skinless chicken breasts
1-8 oz. bottle Catalina salad dressing
1 envelope dry mix onion soup
10 oz jar apricot preserves (I used ED Smith no sugar added apricot spread sweetened with sucralose)
Place chicken breasts in your slow cooker. Pour remaining ingredients on top of chicken. No need to mix. Cover and cook for 6 to 8 hours on low.
Makes 6 to 8 servings.

I am looking forward to using my crockpot. We have been on this diet going on 4 weeks and I'm getting tired of cooking every night so I'm looking forward to using the crockpot.
