Sloppy Joe Pie

Postby techbunnyo » Sat Aug 28, 2004 2:38 am

I found this - SOMEWHERE on the net - sorry I can't remember where as I copy and pasted it to my recipe file!!

Made it this week and LOVED it - I made a 2x batch and it was EVEN better the second night!!!

SLOPPY JOE PIE Phase 1, 2 & 3

1 pound ground beef
1/3 cup onion, chopped (1 1/2 ounces)
2 stalks celery, minced
1 clove garlic, minced
1/2 cup tomato sauce
2 teaspoons Splenda
1 tablespoon white vinegar
1 tablespoon Worcestershire sauce
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
1/2 cup mayonnaise (used light, and slightly less)
1/4 cup ff half & half
8 ounces ff cheddar cheese, shredded

Brown the hamburger with the onion, celery and garlic; drain fat. Add the tomato sauce, Splenda, vinegar, Worcestershire sauce, mustard, salt and pepper. Mix well and let simmer, uncovered, about 10 minutes or so just to blend the flavors. Put the meat mixture in the bottom of a greased (I used ICBINB) glass pie plate; mix in about half the cheese. Spread remaining cheese over the top. Beat the eggs in a small bowl and whisk in the mayo, cream. Pour custard mixture evenly over the cheese. Bake at 350º for 30-35 minutes until nicely browned. Let stand 10 minutes before cutting.
Makes 6-8 servings (6 servings - 4.5 net carbs each) (8 serving - 3.5 net carbs each) --less if using the 1/2 and 1/2, and light mayo

Enjoy!!

This sounds great, but what makes it phase 2? Am I missing something?

Thanks in advance!

You're right, Jck, this should work as a p1 recipe. Be careful, though-- the fiber in this is pretty much nonexistent, and it's way too low in carbs. Make sure to eat some kind of big veggie side dish with it.

Very good point - I had a 1/2 tomato and a whole raw red pepper with it... and some cucumber to boot :)

It looked like you changed it? I found a lot of Sloppy Joe Pies that had heavy cream.

Just an update - hubby liked it - but found it too rich - so I cut the cheese back by a 1/4-1/3 and I added in some thinly sliced carrots & red peppers... I added them when I put the tomato sauce and the other ingredients it to make sure that they would be cooked :)

Was a nice addition... I can also see adding mushrooms, tomatoes (canned and diced)... there are MANY possibilites... I am blessed to have a husband who doesn't mind me tweaking things... he encourages it :D

Thanks for the recipe. I made it tonight and liked it. The meat filling was really good but I think I used a little too much mayo on the top so I'll reduce that a bit next time. Thanks so much! :)

I added kidney beans, mushrooms, peppers, and diced summer squash ... and used part skim mozzarella cheese. Oh, and I didn't have tomato sauce (weird, I know) so I used some tomato juice instead. lol. Maybe it's not the same dish anymore, but it was really good!

:D Made this for dinner tonight. Very good. Hubby said it reminded him of a bean casserole I used to make.

Next time I will add beans to it for fiber and filling.

I like your idea of adding extra veggies.

You can also replace the tomato sauce with V-8. It's wonderful that way!!! Yum!

made this recipe sunday evening for dinner and both hubby and i liked it.

also made someone's verson of mock mashed potatoes with rosemary as a side dish and that too turned out really good. (sorry but i forgot who posted this recipe but remember her saying that her family in california eats and loves it)

thanks for both recipes, they will be made by me again!
