Flaxseed Bread OK?

Is this bread OK for Phase 1? There isn't any flour & I don't believe flaxseeds are a grain but I may be wrong. Thanks!

FLAXSEED FOCACCIA BREAD
• 2 cups flax seed meal (golden is best)
• 1 Tablespoon baking powder
• 1 teaspoon salt
• 1-2 Tablespoons sugar equivalent from artificial sweetener (I use pure Stevia & add cinnamon)
• 5 beaten eggs
• 1/2 cup water
• 1/3 cup oil

Preheat oven to 350 F. Prepare pan (a 10X15 pan with sides works best) with oiled parchment paper or a silicone mat.

1) Mix dry ingredients well -- a whisk works well.

2) Add wet to dry, and combine well. Make sure there aren't obvious strings of egg white hanging out in the batter.

3) Pour batter onto pan. Because it's going to tend to mound in the middle, you'll get a more even thickness if you spread it away from the center somewhat, in roughly a rectangle. Spread to about ½” thickness. {Use a very wet spatula to spread if it becomes difficult to work with.}

:wink: Haven't received a reply yet. Please does anyone know if this bread would be fine on Phase 1? It's a great substitute for sandwich bread?

It looks OK to me, but I have no idea how it would taste. Flaxseeds are OK when ground up - they still count as a nut/seed. But be aware that 1 ounce of flaxseed is your nut/seed allowance for the day.

Thanks for the recipe! Normally I have my flaxseed in a smoothie. However, for phase 1 I will have to do without the smoothies. Not to share too much, but for those of you who struggle with Irritable Bowel Syndrome or Diverticulitis like I do, flaxseed changed my life. I heard of its promises and it delivered. Metamucil, hah! Thats what my doctor suggested along with a medicine called Bentyl. Hardly did any good. I am so thankful for this recipe, now I don't have to give up my daily serving of flaxseed!

you forgot to say how long to bake! I baked mine about 12 minutes. I tried this and liked it. needed something in a hurry, put a slice of cheese on it and was good to go!
