Wish me luck. Went to the grocery tonight and got lots of P1 friendly foods. Plan on doing some prep tomorrow for food to take in my work lunches. All tips welcome :)

My best tip is: Chop lots of veggies and cook all the food you can in advance so you'll have plenty of quick P1 options when you need to eat something Right Now and don't feel like hauling it out and cooking it. I like to make veggie/egg breakfast casseroles and cut them in slices to microwave for P1 breakfasts and a crockpot of something hearty like chicken chili to keep me from feeling like I'm dieting :D

Well, today was a success I think. I did a lot of cooking for the week. I might have gone over my nut allowance for the day though due to those peanut butter cookies!

What I made today:
peanut butter cookies
roasted chickpeas
boiled eggs
cooked some stew beef to put in my salads
In the crockpot, I made this http://www.kalynskitchen.com/2012/01/slow-cooker-recipe-for-spicy-ground.html it was super good and I have plenty left over for the week.
In the oven now I have some custard baking to take to work for breakfast.

Tomorrow I'm only working a half day so I'm planning on my custard for breakfast, leftover soup for lunch, then for dinner maybe a lean steak, eggs, and a salad.

Girl, you are good to GO! I swear, it warms my heart to see someone set out on P1 armed like you are :D
I've had that soup myself. mmm. K is my go-to blog for all things veggie. I'm always forgetting what temperature to roast what at.
(I've been on a boiled egg/devilled egg jag lately. Everyone else is sick of them and I'm thinking about making more. I just found out I like boiled eggs with garlic/parsley salt. And I LOVE boiled eggs with Truffle Salt, omg. I tried some devilled eggs with chili powder blend, which were great. And those mustard packets you get from chinese takeout make yummy devilled eggs too. I've gotta stop eating so many eggs :lol: )

Bethy, I nearly spit coffee out my nose when you described your outright obsession with hard boiled eggs as a "jag" :roll: :D . LOL! Girl, I'm afraid you're going to turn into a chicken! But, you have made me want to experiment with mine! :wink: :wink:
