Baked corn bread for dinner... help me not eat it!!!

Hey all... so I'm on day three of P2 and doing great. I started P2 introducing a few strawberries, though I still need to go to the supermarket and really stock up on more P2-friendly foods. Anyway, I made black bean soup for dinner tonight, and baked some buttermilk cornbread for DH and DS... I just pulled it out of the oven and it smells soooo good :( and I KNOW I shouldn't have any!!! I need some encouragement to turn it down --this is the cupcake incident all over again!!!!!
Maybe I should feed DS and save DH a piece for when he gets home from school and toss the rest? That seems so wasteful... I'm down 5 lbs since I started SBD two weeks ago, I feel great and have had no cravings... but cornbread, oh, cornbread!

I just know it's too late NOW!
Buttermilk cornbread is WAY more tempting to me than cupcakes. I was raised on it. If you caved, I hope you saved me just a little piece of the bottom crust :D

haha :) but guess what? I whipped that cornbread's behind! So far, anyway... it's still sitting in the kitchen, looking all golden and delicious --I even made it with splenda because we're out of sugar (but shhhhhh!!! don't tell DH :wink: ), but I don't feel so close to caving just right now. Just put the little one down and settling down for the night, and yes, I tasted a teeny, tiny bit of the LO's leftover crust, just get a sense of how it came out (I'm not thrilled about giving the LO splenda, but I don't think having it once in his tiny little life will kill him).
Hopefully I'll be strong the rest of the night --but you know what? knowing that people were able to indulge on Easter and get right back on track reminds me that, even if I DO cave, the world won't end and I can always just pick up tomorrow, right in the wonderful place were I left off...

It's going great, Mir. I've lost 6-9 lbs (I think). I have a lot to lose. I feel good and haven't even really wanted to eat anything wrong, it's kind of scary. When it's hard I'll Work Really Hard, and then when things feel effortless, wham! I goof up. My husband's been great but I can tell he's thinking "when are we having pork chops?" I wouldn't mind cooking some, but it seems like I'm cooking constantly already. I need to cultivate that kind of "I'll just pick up and keep going" attitude so if I have a little something off-plan I won't get all miserable and eat a whole box of crackers or something.
How old is your LO? OH! Mireya, I saw your old journal! I was randomly flipping through back pages, chunks at a time, and saw you! Ha! Are you still that skinny? You said something about how people from your home town will comment on your weight and it made me remember a story I read by girl from China whose relatives came to visit and were shouting "you are so fat!" in the airport. They were complimenting her, of course, but can you imagine all the strangers turning to see who is so fat at LAX?
I've had some wine and I'm babbling :oops:

I too grew up on cornbread...now I only make it twice a year. (Thanksgiving and Christmas) However, I have been on the beach for a long time and I have found a substitute for cornbread that I like. Bob's Red Mill Ten Grain Hot Cereal has a muffin recipe on the bag-the texture of the muffins is like my momma's cornbread. I use whole wheat four, soy milk, and omit the sugar. (I come from a no-sugar in the corn bread family) I call these my "Fiber Bomb" muffins. If I want that little bit of sweet-I just drizzle some agave on them. It is good for Phase II since a lot of people have a hard time finding whole grain baked goods.

No sugar in the cornbread here Either! Thanks for the tip, I wrote it on my dry-erase board for a little later in P2:D

haha Bethy OMG I can't believe you read my old journal :oops: I was definitely one of those "I'm going to write here every day" people who wound up dropping the ball :( The funny thing is that I was in GREAT shape back then! I gained a whopping 50 lbs with my pregnancy. This was the first weigh-in after the baby --when I went into labor I weighed in at 216 lbs, if you can believe it, which I think was dangerously heavy for someone with my frame and height (I'm only 5'3). But anyhoo... I weighed in at 153 (or was it 152?) on Monday, which is pretty heavy for me. My son is turning 3 in June, so I have lost almost 30 pounds in three years, which puts the whole thing in perspective...
But the funny thing is that the fear of the hometown comments are STILL a big motivating factor for me to big here! We've been back a few times since LO was born and I had to put up with the comments, so this time at least I can feel better about myself! I still haven't figured out what I'm going to do about the tortillas, though.. they have them with every meal!!!!
Oh, yeah, I guess I haven't mentioned we'll be in the Yucatan for three months... guess I can't complain about that :wink: but I will have to eat lots of chayote and stay away from the tortillas, the rice, and the delicious, wonderful pastries from the local panaderias (sigh)...
I think the key with P2, actually all of the SB WOE, is exactly what you're describing, the ability to pick up after a slip. It's a way of eating, not a diet, right? :D

Yucatan! When i was in high school we had to do a paper on a country or culture of our choice. I chose Mayans and the YP. and got this huge desire to go there. I wanted to go to Quintana Roo and Chichen Itza (if I can remember how to spell it) and all those ruins. This was back when you had to look for photos in books and national geographic and I'm sure the places are overrun with people now. I knew I'd picked the wrong topic when the teacher made us stand in the front of the class and tell about our country. So embarassing, I couldn't pronounce Anything! Take a picture of the panaderia and your hometown, and come back and post it for me!! You are so close to your goal already! They're going to be saying "Mireya, you're so tiny, have a tortilla". :lol:

Oh wow! Yeah, I'm from Yucatan originally and still go back often. My work is in Maya studies :). And yes, Chichen Itza especially is full of people, but the cool thing about the region is that there are literally hundreds of cites, and some of them are really amazing! My husband and I love one called Ek Balam that doesn't have the kind of scale as Chichen Itza (the pyramids aren't quite so large) but it has the most AMAZING stucco facades and sculpture. They look like something out of a different part of the world in terms of the level of detail and just the way the figures are designed. We're not leaving for a few more weeks, but I will be happy to post some pics when we get down there :).
I got some sweet potatoes at the farmer's market today! I can't wait to have them!!!! I was trying to figure out dinner for this week, I think I'm going to make stuffed cabbage --I'm going to take a chance on the small amount of brown rice in the filling :).

OMG Mir! That would be.... :!: :!: :!: for me. Realize my teenage dream. And you're in Mayacademia! Are you still working on your doctorate? Or herding your own flock of grad students? I'm going to look up Ek Balam now and see if I recognize the pictures. Chichen Itza wasn't my favorite, just the only one I could remember the name of.
I have never made stuffed cabage but I've been thinking about it because my H loves cabbage and I'm always looking for something else beachy he will like.
I still can't believe you are actually from there and study Mayan...what... what *is* your particular interest?

I LOVE stuffed cabbage. On Friday I actually tried Lebanese stuffed cabbage rolls... yumm!
