P2 transition speedbump

My sweet potatoes look kinda wrinkly.
I have carrots, NSA applesauce (don't like either one and kinda wanted to go with one food for the whole week)
I also have some rubschlager whole rye in the freezer. but I was saving that for later b/c it's bread.
any thoughts?
I know, go to the store. but by the time I get home from the pool and the store and cook sweet potatoes, it'll be way past supper.
There's a chick-fil-a right by the pool but I'm pretty sure they don't have transition nuggets. :roll:

Got a steak house in the area? Stop by a Longhorn or Topeka or Texas whatever Steakhouse and BUY a sweet potato, already cooked. With butter. mmmmmmmmm

You could ask for it without butter, and add olive oil (or whatever healthy fat you want to use). Or ask them for olive oil on the side - they probably have some for salads.

Fwiw, the sweet potato they serve in a restaurant will probably be huge. Depending on the size, a serving might be 1/4, 1/3, or 1/2 of the whole thing. You can take the leftovers home and enjoy it for a few meals.

OMG if ONLY I'd seen this before I left. You people are geniuses and Thank You Very Much.
I bought some sweet potatoes on the way over to the pool and I got waylaid by some ready to eat fava-beans in produce. I love fava beans but I count them as a starchy vegetable instead of a bean because their GI is pretty high. I'm gonna throw some of them in my chili tonight and start the sweet potato thing tomorrow.

I also realized I was lying about my rye bread. Mine's Messermacher, not Rubschlager. (You say, rubschlager, I say messermacher. You say sweet potato, I say sweet potahtoh. guess who's having that glass of wine right now?) It has only these ingredients: Whole kernel rye, water, wholemeal rye flour, salt, oat fiber, yeast. Product of Germany. LOVE the stuff and it's thinly sliced too and keeps in the freezer forever.
