Chicken Mozzarella. Mmmmmmm!
First the non-Beachy recipe. I am including it because the only thing that is non-Beachy is the Campbell's tomato soup - which has some freaking high fructose corn syrup in it! (Does that crap have to be in EVERYTHING?) But I am thinking that the amount you would actually get of any "bad" ingredients is relatively small... so if you don't have craving issues I doubt the small amount you get in one meal is going to make or break your weight loss. So this is a "sometimes" meal:
Chicken Mozzarella
4 thinly sliced chicken breasts (we use

2 tbsp whole wheat flour
1 tsp dried basil leaves
2 cans tomato soup
2 tbsp water
4 slices mozzarella cheese (or

Mix the flour with the sweet basil and lightly coat each piece of chicken. Cook chicken in skillet (in hot olive oil) until both sides are brown and it's fairly cooked. Add soup and water and reduce heat to low. Cover, and cook 5 minutes or until chicken is done. Uncover and remove from heat - and top each chicken breast with a cheese slice. When the cheese melts, it's ready to eat!
SOOOOO good!! The recipe actually calls for ONE can of soup - but we usually double the chicken and double the soup. Naturally if the flour and basil mixture runs out - just make up more! (If making two batches!)

Here is the Beachy recipe:
4 thinly sliced chicken breasts
1/2 cup South Beach BQ Sauce
4 slices mozzarella cheese
To make the sauce:
1 8 ounce can tomato sauce
2 tablespoons vinegar
2 teaspoons chopped fresh parsley
1 teaspoon Worcestershire sauce
1 teaspoon ground mustard
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon garlic powder.
Combine - and fridge until ready to use.
Season chicken on both sides with salt and pepper. Heat oil (1 teaspoon) in skilled over medium-high heat and add chicken, cooking until browned on both sides.
Place chicken in an ovenproof baking dish and spoon the BBQ sauce evenly over the top. Bake until thicken is done - about 18-20 minutes. Remove from oven and top each piece with a reduced fat mozzarella cheese slice.
