Morning all!

Am happy to report that the scale FINALLY moved for me. I lost a pound last night. I knew I would because I was up and down going to the bathroom all night....that means I got enough water in yesterday  . While I've only lost 2.5 pounds - I'll TAKE IT! Was starting to get discouraged that there was no movement at all.

Yesterday I didn't eat much (but it was SB friendly all the way around).

Today's menu:
B - Italian salad (lettuce, banana peppers, olives, turkey pepperoni, mozzarella cheese)
S - yogurt with lemon sf jello mixed in
L - bowl of chili with a dollup of sour cream and shredded cheese
S - few peanuts
D - SB pizza with canadian bacon, turkey peperoni, mushrooms, olives, purple onion, side salad
D - yogurt with lemon sf jello mixed again (my latest addiction)

Vacations are the WORST! All the yummy smells......just don't get discouraged if the scale goes the wrong direction. Typically it's just water weight (or so they say) so once you come back just buckle down and up your water intake and after a day or two your weight should adjust accordingly.

Hi I am starting South Beach today. I have also decided to be vegetarian (lacto ovo) for the new year. I feel best when I eat a modified carb diet with limits on fruits and grains, so I know South Beach is perfect for me. Plus it's easy to be a vegetarian on this plan. My husband (meat eater) will be doing this with me, so it's great that we are on the same page.

Nice to meet you all! Sheryl

I started SB on 1-2-2012. This is my 1st time ever starting this diet. I did buy all the books off amazon. I am super excited I have lost 4 lbs so far (my 1st week). I am also new to this site. But need all the inspiration I can to win this battle with being over weight.

Congrats SKB on your loss!! It's Day 8 for me on my fresh P1 and I'm feeling good. Hitting the spinning class tonight after work and will weigh in tomorrow morning to see how my first week went on the scale. Clothes are fitting slightly better. Feeling good and much better with no sugar/carbs in my system. Will have to transition to P2 next week. Carbs at dinner is always best for me...

Yesterday was my last day of phase 1 eating. I'm now quickly transitioning back into phase 2. Here's my menu:

B: cup of split pea & ham soup with shredded LF cheese
coffee with NF milk and Splenda

S: 1/2 cucumber with vinaigrette
coffee with NF milk and Splenda

L: bowl of split pea & ham soup
broiled tomato slices with some LF mozzarella

S: NF Greek yogurt with Splenda, vanilla, and coconut extract

D: lean sausage, mustard, sauerkraut, sauteed red & green peppers, onions
broiled tomato slice with LF mozzarella

S: 2 cups of decaf with NF milk and Splenda
a little celery with natural PB

The recipe for broiled tomatoes is really simple: remove the stem area then halve the tomato (or cut into thick slices), sprinkle with salt and Italian herbs (optional: Parmesan cheese), drizzle with olive oil, then bake in a medium oven until the tomato becomes tender. Then sprinkle with some shredded part-skim mozzarella and return to the oven for about 10 minutes. There are fancier and probably even tastier ways to do this, but that's the way I did it. The tomato I used was really large, so I broiled thick slices of it instead of halves. With a smaller tomato, you could just slice it in half. Instead of drizzling on olive oil, you could dredge it in olive oil before sprinkling with salt and herbs.

Just an fyi to anyone reading this, this are my actual menus, not necessarily ideal menus. I didn't list absolutely everything - I had water, some SF hard candy and gum, and one or two diet drinks as well. I didn't post my recipe for pea soup, but it's in the "soups" thread, and it includes canola oil (I usually use olive, but I was running low) and a couple of large onions, so there are good fats and some vegetables other than just the peas.

Good luck to all! :)

Welcome SKB and Coffeebrain. Good luck with your process.....it can work, you've just got to stick with it and not get frustrated if the numbers don't just FLY off the scale. I'm a returning SB'er. I lost over 30lbs. in 2007....and slowly have gained back 20 of it :( . I'm DETERMINED to be bikini size again by summer....once I get going, there's no stopping me!

Looking forward to hearing your results for the week BeachingIt!

I stepped on the scale again this morning (because I am an admitted scale surfer) and gained back .5lbs. SO, upping the water today in an effort to get rid of that. I've GOT to find time to get on the dreadmill or stairmaster to get my heart pumping again.....I'm getting the "diet" part down, now I've got to get the exercise going. That's when my losses will really start adding up.

Menu for today:
B - chicken salad on celery, cherry tomatoes, few cucumber slices
S - cheese stick
L - chili with a dollup of sour cream and some shredded cheese
S - yogurt with sf jell-o powder mixed in
D - sb pizza.....what I was SUPPOSED to have for dinner last night, but didn't feel like mixing it all up....salad
S - glass of milk with sf chocolate syrup mixed in.

Have a great day all!!!

Just something I noticed - your last couple of menus seem really light on vegetables. I know it doesn't work out every day, but the 4 1/2 cup minimum is important over the long term. You'll be more successful and feel much better physically if you eat more vegetables. Just wanted to encourage you there - hope that's helpful. :)

It's day 10

Everyone is doing so well and I just love reading everyone's posts, it keeps me motivated and gives me some ideas for foods to eat. Am dying to try the choc bean cake this weekend.

Down 3lbs overall, and my clothes feel much better. Wore my favourite suit to a luncheon today, it fit ok so I was happy. It was a set lunch today and I was so proud of myself: asked for my meal without the starch, gave my carrots to my neighbour who is vegan and passed on the dessert (choc cheesecake). Having chicken in a Jamaican jerk spice with stir fried veggies for dinner. Off for my walk and then 30 mins of yoga.

It's day 11

How is everyone doing? I must say I am feeling a little light headed this morning. Started my day with 45 mins of the weight loss yoga and I think I should have had a bite to eat before starting. Feeling clammy and whoozy, might eat my snack a bit early to see of this helps. I'm sure I looked a bit tipsy walking to work. Is anyone else cold in the evening? I am freezing! Went to bed with my flannel jammies, socks and my thick terry robe the other night! and I'm in the Caribbean!

Have an awesome day everyone!

I know *sigh*....I just get tired of constantly preparing everything I eat - rather than just grabbing something. I forgot (until your post) that beans aren't a vegitable which is what I was counting when I solely had chili for lunch yesterday.

Also I didn't remark that on my pizza last night there were also olives, mushrooms, purple onion. Not ideal, but there were some stashed there too.

Happy to report that the .5lbs that I gained back yesterday was gone this morning.

ABSOLUTELY going to attempt to start exercising soon. I don't understand what my hesitancy is.....except I'm lazy maybe? When I did SB in 2007 I was manic about working out - this time, I'm really struggling with beginning that whole cycle again.

CEL - I'm cold at night, but that's because it's 23 degrees here. DH and I bought a house 18 months ago that is LOADED with windows, which means less insulation on the walls. Sometimes I feel like I can't ever get this beast warmed up. I sleep with an electric blanket, so am nice and cozy once I go to bed, makes getting out of it in the morning quite a rude awakening sometimes!

Also, here's my food for today:
B - 2 slices turkey bacon, yogurt, cherry tomatoes
S - edamame beans (I ALWAYS forget I have a freezer full of these!)
L - chili, small salad
S - string cheese
D - tonight is taco night, so I will have a MEGA taco salad with homemade salsa on top and some FF refried beans on the side
S - glass of milk with sf chocolate syrup mixed in.

HAVE A GREAT DAY ALL!!!

Beans do count toward your 2+ cups of veggies, but we really shouldn't have more than a half cup per meal, so the other 1½+ cups of veggies need to come from any of the other p1 veggies.

Hi Everyone,

Originally I had planned to start SB last week but with a child in the hospital it just didn't happen. So today is the day - seems odd that it's a Thursday and not a Sunday or Monday - but no time like the present!! :D I hope it is still okay to join your group - even though you are further ahead than me???

Today my munu looks like this;
B-scrambled egg whites with veggies and a V8
S-cheese string
L-cheicken salad on baby spinach and a glass of milk
S-hard boiled egg
D-chili with salad
S-celery and laughing cow cheese.....

And lots and lots of water!!

Advice and/or critique is welcome!

Lizzie :D
