We're not officially starting until at least Sunday, but I wanted to post our food since it'll get me in the habit. We're doing pretty well, aside from dessert. But the dessert is key to vacation, so it'll stay until we leave here.

Breakfast: ww toast and fried egg (me), 1 boiled egg and small bowl shredded wheat (dh)
Lunch: Greek Salad w/ ww bread (both), slice of key lime pie (me), slice of cake (dh)
Dinner: Salmon patties, roast potatoes, broccoli (both), slice of key lime pie (me), slice of cake (dh)

TONS of hot (decaf) tea, diet soda and water. DH is currently drinking a beer with my dad.

Woohoo, I made it through day 3!!! Here is my menu
B: Omelet w/ canadian bacon, onion, mushroom, tomato and sprinkle of low fat cheddar
S: mozzarella cheese stick
L: Leftover buffalo chicken soup and chicken salad (for the salad i did chicken w/ chopped artichoke, tomato, celery, water chestnut, a couple green olives, a tbs light mayo, salt pepper and dill weed...it was REALLY good)
S: mozzarella cheese stick
D: Grilled sirloin, mushrooms, spinach and a little cauliflower
Dessert: mock mocha frappe (FF milk, splenda, decaf coffee, ice, davinchi chocolate syrup)

Did I have too much cheese today? I would definitely recommend the chicken salad and the mock mocha frappe!! Yummy. Keep up the good work everyone!!

Yep - that's it. Thanks!!! Maybe I'll put it together for breakfast in the morning. Something different from what I've been having.

Just to clarify - you're posting your current menu, and are preparing for phase 1 by writing your menu down and maybe eating a little better - is that right?

Wow! Thanks for posting those recipes! I'm going to try the mock crepes on the weekend. All of it looks yummy and P1 - yay!!! Day 3 for me and feeling great! Amazing how quickly I feel better physically and mentally when I do P1. :D

Be aware they can be "messy" to make, i.e., they have the potential to not be very pretty when you're finished with them. Those suckers are hard to flip. They're a nice alternative to a "typical" breakfast that includes eggs/beans.

Yesterday I did horribly eating. While it was all PH1, it wasn't nearly enough.

Here's what I had:
2-Ham/cheese roll ups, handful of peanuts
1-Cheese stick
Stirfry chicken with sauteed onions, mushrooms, squash, zucchini
Cinnamock muffin with NPB
2 Cups of coffee
2 Diet cokes
2 Bottles of water

Here's my intention for today:
B - hardboiled egg, cinnamock muffin with NPB, cherry tomatoes
S - Cheese stick
L - Leftover sauteed vegi's from dinner last night
S - Celery with cream cheese
D - Chili
S - Glass of milk with SF chocolate syrup

I dread the weekends......I have a million errands to run this weekend, so imagine I'll be stopping in at Wendy's a lot to grab either a salad or some of their chili.

It's day 5

Hope everyone is still hanging in there. The weekend is coming and this requires extra discipline to make it through. Made it into a pair of jeans I haven't worn in a while today. I looked good! even a bit of room around there, though the muffin top is not that pretty, but there is less of it in just 5 days. Going to make something special for dinner tonight. Kaylan's Website has awesome phase one recipes and am doing the fiery shrimp as an appetizer with the curried coconut chicken soup for a main. Washed down with a nice bottle of Perrier (that's the hard part on Fri = no wine with dinner). Looking to do a nice long hike on the weekend and burn some extra fat off, only had time for a quick walk last night as we had to work late.

Hope everyone has an awesome weekend and can stay the course.

Congrats on climbing into you jeans....I'm afraid to even try!

Will you post a link to Kaylan's website? I've seen mention of it in various places here in the forum, but don't know what to search out. Your dinner sounds DELISH!

Great Job!! It feels so good to fit into old jeans....I hope by the end of next week I can squeeze into some:) Kaylan's website has some great recipes!!!

Yesterday was a little chaotic. Here's my best effort at reconstructing my menu:
B: tofu with mushrooms
NF cottage cheese
coffee with NF milk and Splenda

S: celery with natural PB
coffee with NF milk and Splenda

L: beans with sausage and turkey
Greek yogurt with agave and vanilla

S: more celery with PB

D: broiled tomato
smoked herring
mock French toast for dessert

S: NF milk with SF chocolate syrup
Also, realized I hadn't eaten enough vegetables all day, so I had some more celery (no PB)

Btw, this isn't an ideal menu. I didn't eat enough vegetables, and probably overate dairy and protein. I had brought some other vegetables for lunch but never got around to eating them.

I'm still watching the servings of PB, so at least I didn't overdo that. My method for packing celery with PB for my lunch is to put a medium-sized dab inside each piece, then form a kind of sandwich. The PB sticks the celery together, so it isn't so messy when packed. I don't fill each piece full of PB - I'd be eating too much if I did that.

After all the posts about mock French toast yesterday, I thought I'd try it. It was very good, I have to say. The texture and appearance aren't like French toast (mine turned out more like a thick pancake or scrambled eggs), but it did taste very similar. I did modify the recipe a little because I only had cottage cheese, not ricotta, so that could account for the texture. It's fine without anything on it, but would also be good with SF maple flavored syrup, agave nectar, or SF jelly. You could probably make it taste somewhat like blintzes by topping it with a little sweetened cottage cheese or ricotta, or even plain NF Greek yogurt.

Exactly! Part of what we both NEED to do it become more aware of what we're eating. So this is me getting used to that, while I figure out menus and shopping for actually starting. We're home from vacation today, and I just bought a little food to tide us over until Sunday. We have plans all day tomorrow, unfortunately, but the idea is to be mindful to get us prepared.

Have you tried the Cinnamock muffins (made out of Great Northern Beans) yet? I'd always put NPB or ICBINBL on them. This morning I warmed it up in the microwave (I prefer these warmer) and then put some cream cheese on top. It was SOO GOOD!

I haven't tried making any kind of bean cake. It would probably be fine and I might do that at some point, though.

Here's my favourite Black Bean Brownie (BBB) recipe that has saved me countless times on South Beach. It's P1 friendly and delicious. Just a word of caution... you may have to make them a few times (it took me 3) to get them how you like them.

Chocolate Black Bean Brownies
1 can black beans, drained, rinsed well, grinded up (mushed)
1/2 cup lite ricotta cheese
4 large eggs (or substitute some eggwhite instead of all straight eggs)
2 tsp. baking powder
2 tsp baking soda
3/4 cup unsweetened cocoa powder (good quality)
3 tbsp. vanilla
3 tbsp olive oil
3/4 - 1 c. Splenda
Optional: dark/semisweet chocolate chips (handful or 2)

Make sure to grind the beans first if you're using a hand mixer. A blender will probably do it for you. Mix all ingredients at high speed. Pour into a sprayed 8 x 8 pan. Bake at 350 for 20 minutes - check with a toothpick. I use waxed paper with oil on it so it's easy to get them out. Cut up in reasonable size brownies and enjoy. I heat mine up and eat them with a dollop of low fat / non fat cool whip. YUM!!! I double this recipe because I dislike making them... they last me longer that way. I also find the chocolate chips a MUST.

I like how there are many of us around the same weight aiming to reach the same goal weight! That's awesome! Have a great weekend everyone.
