Operation Skinny Me

Today is my first day trying this South Beach Diet, and so far so good… after all, it’s only 11 am.

I am 29 and at 5’1, I am at an insane 160lbs. This is the most I have ever weighed. I am usually around 135 lbs, and would love to go back to those days when clothes fit well. The scale shocked me so bad that I took a pregnancy test to make sure it’s all me and not me+baby. It was very bittersweet to find out that it’s just big old me. I love food. All unhealthy foods. I love every carb ever invented. I love fried fats. I sometimes dream of swimming in mayo and sour cream and then eating my way out of it. This diet is pretty much the exact opposite of what I eat. My ultimate goal is not just to drop the pounds and dress sizes but to find a new and healthy lifestyle.

I have many questions and I am thrilled to find such a strong support group in this forum. I am very excited to go on this journey I aptly named Operation Skinny Me.

Hey Colorme!

Welcome to the Beach! You and I are two of a kind.... I love love love LOVEEEEEEE food!!! I will happily play Marco Polo with you in the sour cream! (But not the mayo. I only like a little of the stuff!)

The good news is that there are so many Beach recipes that are SOOO good!! Even when I went off the Beach for awhile (had a tumor) I still made many Beachy recipes. If you ever need some tried and true stuff - just say the word and I will be happy to share some recipes. (Although there are about 50,000 recipes under the recipes tab up above so you probably don't need mine.)

You can do this, with a little will power you will be the skinny and HEALTHY you that you want to be!

Sorry you weren't pregnant - or is that a good thing?

Haha! I am definitely happy I am not pregnant :)

So I am feeling super guilty / super good right now. I'm eating beef jerky. I know it's not allowed. I relapsed. :(

So today is my fourth day and I must say things are getting easier. I did relapse by eating beef jerky (but it was only 4g carbs and low-fat.. so does that count?) and I had literally 2 sips of black coffee with non-dairy creamer Original CoffeeMate Creamer. That means the carbs didn’t count either, right? Haha. Just needed a sweet taste in my mouth. I typically don’t like logging what I eat, but I can actually remember it this week.

Monday (HARDEST DAY EVER)
Breakfast – 2 hardboiled eggs
Lunch – chicken salad (1 tbsp mayo + green onions + pickles)
Snack - Laughing Cow Light Garlic Herb cheese – per wedge, I had 2– total fat 1.5g / carb 1g / sugars 1g / protein 2g / calories 35
Dinner- Baked Salmon + lemon + pepper + salt
Late Dinner - chicken salad (1 tbsp mayo + green onions + pickles)

Tuesday –
Breakfast – bellpeppers + 2 small breakfast sausage links
Lunch – chicken salad (1 tbsp mayo + green onions + pickles)
Snack – Laughing Cow Light Garlic Herb Cheese – per wedge, I had 1 – total fat 1.5g / carb 1g / sugars 1g / protein 2g / calories 35
Snack – Teriyaki beef jerky.. I know SO BAD! 4g carbs only though is that OK??
Dinner - Baked Salmon + lemon + pepper + salt

Wednesday-
Breakfast - Baked Salmon + lemon + pepper + salt (yes breakfast cus I made it early AM and I didn’t want it to go bad LOL)
Snack – bellpeppers + 2 small breakfast sausage links
Lunch – Roast Beef + Swiss Cheese + Bellpeppers + Onions + 1tbsp mayo + some mustard + tomatoes + all wrapped in lettuce
Dinner - Chicken/Beef Meatballs in Chicken broth with onions and bellpeppers– for all 6 meatballs - total fat 7g / Carbs 8g / Dietary Fiber 2g / Sugars 2g / Protein 18g (sounds nasty but it was good and all I could find in the fridge)

Thursday (so far) -
Breakfast – 3 Egg Omelette + onions + tomatoes + baked ham + 2 sausage links + all wrapped in lettuce

I have been worried about bad breath so I’ve been chewing on sugarfree gum everyday. I divide ONE stick into four and eat those throughout the day, so I stay under my 75 calories. I have NEVER cooked before. We always eat out or eat at my mom’s.. so there is NOTHING in my fridge that’s why everything was the same. Plus I didn’t know I’d actually stick to this. Now I am crazy excited to go grocery shopping tomorrow for next week. Got my phase 1 recipes and I am good to go!! I haven’t weighed myself but I definitely feel like a healthier me.

Does anyone know of any other snacks I could eat? I am allergic to all nuts.. so :(

Hi again!

Some phase 1 snacks.... I love meat roll-ups. Get two slices of lean roast beef from the Deli - spread a small amount of horseradish on them (or mayo if you hate horseradish) and then split a wedge of laughing Cow cheese between the two. (Spread it on the beef.) Roll them up. These are good!

Hummus is good with raw veggies! You could saute some fresh spinach leaves in olive oil and add some some sliced garlic and pine nuts. (Pine nuts aren't in the nut family!) I also love to hollow out a tomato half and put tuna fish mixed with mayo and celery inside. Or take an avocado half and put crab meat in it.

I'm sure other people will have a lot of snack ideas!

Color, maybe you're just not listing them, but it doesn't look like you're eating enough vegetables or enough carbs in general. You also seem kind of obsessed with looking for "low carbs," so that may be the problem. SB really isn't a low carb diet. And the concern about your breath indicates that you may be in ketosis from not including enough carbs. For instance, there are a couple of dinners of "baked salmon"-- is that really just salmon? Or do you have at least 2 cups of veggies as part of that like you should? You should also make sure to get your dairy (milk and yogurt, or soy options-- "dairy" does not include cheese for SB), and including beans/legumes as part of your veggies helps as well.

Kimbo - You're right. I don't include veggies because I dont know how to cook them.. and I didnt have any. Today I finally convinced myself that I can do this and am buying some greens! I always buy a lot of vege and they end up rotting in the fridge because I dont know what to do with them. Now that I have these recipes I'm excited.
Thanks for the note about cheese. I thought my light cheese would fulfill the dairy. And I know I read from the book that this is not truly low carb, but I can't seem to disassociate that idea from SB. Will greek yogurt be OK as my dairy? i plan to get some tonight though I'm still searching for recipes on what to use it for.

Just weighed myself tonight. I lost 5lbs! I weighed in at 155.2 lbs. And it's just day 4. How excited am I?!

Not only that but even prior to weigh in, I had already settled into the idea of eating and cooking healthy. Go Me!

If you look at the food list in the FAQ, you can see what qualifies as dairy. But Greek yogurt may not be the best choice for avoiding ketosis, since it is higher in protein and lower in carbs. You can try it, but you may need some good doses of milk to get you out of it.

I didn't know how to cook veggies before I started SB either. Good recipes really helped!

I first weighed in Sunday 8.14 at 160 and when I got back on the scale this previous Sunday 8.21, I was at 152.2! And that was after a heavy breakfast (spinach/mushroom/turkey sausage omelette)!! It’s so motivating.

Just thought I’d share the exciting news… but what’s even more fabulous is that my fridge is now stocked up with yummies for my bellies. Lean meats, a lot of vegetables I’ve never tried… all for recipes found in the SBD CookBook!

Also I cheated a bit on Saturday and ate some fried rice BUT I found that I wasn’t craving as much as I used to. So I ate a couple of bites then gave it away and just ate the lean meat.

Yay for a happier, healthier lifestyle!!
