Thanks red.

I did try the search and went through the first 10 threads it returned but gave up after that.
I made a microwaveable flax muffin this morning and will probably try the pancakes tomorrow.
If they turn out fine then I can see them becoming a regular part of my diet. Not daily as then I couldn't eat nuts, but 2-3 times a week.

YW. Difference was instead of searching the threads, I just went to the Recipe Summary thread and used the windows command, CTRL-F, to search within the first page of that thread to find the recipe links. I agree the search function that returns threads is, for the most part, useless.

I tried these pancakes yesterday and was pleasantly surprised. I was a little sceptical when I mixed the batter and it was so thin. I let it sit about five minutes hoping it would thicken but it didn't. So I went ahead and made them and they puffed up a bit on cooking. They had nice flavor and my husband also liked them. He preferred these over the "Body for Life" ones I make with oatmeal (ground into meal), cottage cheese, and egg whites all pureed together in the food processor. I like both of them. I'm going to make up several servings today to have before work this week. It will be so easy to just nuke them and dip them in SF maple syrup. I need easy in the morning as I get up so early so these really fit the bill. I just love knowing I'm eating something so healthy!

Here's something you can make w/ the leftover yolks. It's quite good.

Creme Brulee (P1)
1 cup Carnation fat-free evaporated milk
2 egg YOLKS
1/3 cup Splenda
1/2 tsp. vanilla extract (I've also tried coconut-yum)

Pre-heat oven to 300, put a glass baking pan in filled a third w/ water.
Heat milk in a small pot until almost boiling, stirring often.
In a bowl, combine yolks, splenda, and vanilla.
Add a little hot milk at a time to the eggs while whisking (to prevent scrambling).
Pour mixture into 2 ramekins, and put in pan in oven.
Bake for 1 hour.
Let cool and refrigerate...with a spoon scrape off thin layer of skin and enjoy.

I've been wanting to try this w/ light cream, instead of milk...I think it'll be great.
Of course you can double the recipe to make more than 2 servings at a time.

OMG HOW FREAKINGS AWSOME TASTING ARE THESE. ADDED 3 TBSP PLAIN YOGURT AND 1/2 TSP BAKING SODA AND THEY WERE SIMILAR TO WW PANCAKES.

I bought Simply Clear Matamucil instead of the regular type and then realized that in the updated book you don't need to take Metamucil at all. So I thought I'd use it in the pancake recipe since it's psyllium... then I looked at the label... it's made from inulin (chicory root fibre). Would it still be okay to use? Per teaspoon it has 5 calories, 0 g fat, 3 g carbs, 3 g fibre.

Inulin should be fine. As far as I know, it's only used as an ingredient by manufacturers - I've never seen it sold on the shelf as a sweetener.

Thanks, Magna. It has no flavour at all. If you mix it in water, it just looks like a glass of water... doesn't thicken or anything. I tried the flax pancakes with it instead of psyllium- they were okay but I don't know that I'd make them again. They were so thin and flat- almost like a crepe.
