Ok. Well I'm about 4 weeks into Phase 2 and my scale just isn't moving. Can someone list an average day (food wise) for them so that I can see if I'm just not doing something right. I'm an extremely picky eater so I'm not very adventurous with my diet but it suits me for the most part, but I'm just not seeing any changes.

For me:
Breakfast: 1 egg and 1.5 cups of milk (on one of the weekend days I will usually have a bowl of Total Flakes)
Snack: either 12 almonds or whole fruit (1cup of whole strawberries or a peach)
Lunch: either a lettuce wrapped sandwich (cold cuts usually) with cheese and mustard or greek yogurt (w/fruit if I didn't have it for snack)
Snack: string of cheese or spoon of peanut butter (usually go for protein rich at this snack)
Dinner: Chicken of some sort and vegetables

The only problem I'm having is that I'm rarely hungry and have no cravings and I worry that I'm not in-taking enough calories overall.

I think you are definitely not eating enough food overall. I'm around the same weight as you are, and I'll give you an idea of what I eat in a particular day.

B- eggs (one whole, one white) with 1/2 c. sauteed veggies (cooked in a little olive oil), usually either a piece of canadian bacon or a serving of reduced fat cheese, a slice of ezekial bread with a t. of sugar free jam
L- a large chicken salad (3-4 oz. of chicken, lettuce, spinach, red onions, cherry tomatoes, cucumbers, and peppers) with 1 T. salad dressing, a piece of fruit
S- a cup of plain non-fat greek yogurt, 1/2 c. sliced strawberries, and a packet of powdered stevia
D- 3-4 oz. meat or fish, a serving of whole grain (usually quinoa or brown rice, sometimes sweet potato), and a large serving of veggies cooked in olive oil
S- usually nuts, sometimes with something sweet (no sugar added fudgsicle) or maybe a little cheese, a couple times a week I'll have a small glass of wine

I think overall, you need to add more veggies, make sure to get in your good fats, don't be afraid to add in whole grains or starchy veggies. HTH

Where are your p2 foods? All I see are the morning snack fruit option and the occasional Total cereal, which I'm not sure is SB-friendly anyway. At this point, you should be having 2 fruits every day and 2 grains/starches every day. These foods are good for you and not to be avoided. Avoiding them doesn't speed up weight loss, as you are seeing, and only holds you back from making this a lifestyle change so that you can keep the weight lost off for good.
