I have been reading this board as a guest for awhile. I read a lot of supports and motivation so I decided to sign in and join this boards hoping to push myself in order to shade some lbs off. I just started phase 1 yesterday and telling myself I will walk thru this road all the way. I wrote down my food diary in the book and I think it might be a good idea to post daily food intake in here too.

6/13/11 Monday Phase 1 day 1

B - spinach-cheese eggwhite omelet
Black coffee with 1 package of Truvia
S - (Too busy painting the porch so I forgot to have some snacks)

L- 2 cups stir fried zucchini with pork and eggwhite
S- 4 oz. grilled chicken
1 cup stir fried zucchini (left over from lunch)
D- 4 oz. grilled salmon
- 1 cup stir fried zucchini (left over from lunch)

Exercise: Walking outside 30 minutes

P.S.
- I grow my vegetables at my backyard. There are a lot of zucchinis for me to pick everyday. I like them stir fried or roasted.
- I buy a big pack of meat, fish or chicken and cut into about 4 oz. put in a ziplock bag and freeze them. It is easy to just pull out enough for a day and know your portion control.
- I think I will post my recipe as well since the food I cook is asian food.

Stir fried Zucchini with pork and eggwhite

1 clove garlick minced
4 cups zucchini slice
1 tbsp soy sauce
1 tbsp olive oil
1/4 cup egg beater (optional)
1 cup slice lean pork or chicken

1. Heat a wok over medium heat for about 1 minutes then add minced garlic saute until light brown
2. Add pork or chicken stir and let it cooks.
3. Add zucchini and cook for about 4 minutes until soft.
4. Add soysauce and taste to see if you need more (add more if you want).
5. If you want to add some egg now it time to pour the egg , let it sets then stir it quickly

I normally cook the large batch and eat them all day for lunch or snack or even dinner.

That is almost exactly how I make my stir fry, but I never thought to add egg! I have always added the egg to the rice, and never thought to include it in the actual stir fry itself. I will be making this as soon as I get new soy sauce. After making my stir fry last night, I noticed corn syrup was in my favorite lite soy sauce so I am throwing it away and finding a lite soy sauce with no sugar added!

Quirquie: I normally use only one tbsp soysauce and if I need more favor I just sprinkle some salt. Let me know if you like adding egg in your stir fry.

I survived Phase 1 , Day 2

B- Eggwhite scrambled with mushroom and FF cheese
S- 10 raw almonds
L- Stir fried cauliflowers with pork ( I had about 3 cups of cauliflowers)
S- 1 Moz. cheese stick
1 cup light soymilk
D- Baked Tuna and cauliflowers topped with cheese and bacon
2 slices turkey breast wrapped with one moz. cheese stick

Exercise: 25 minutes yoga , 50 minutes pilate

Thanks for sharing your recipes. I love stir-fry and never thought about the egg either. When I get to see others' menus, I can make much more delicious choices and not get stuck in a rut.

I always make my stir-fry with eggs too. Delicious.

Phase 1 Day3

B- Mushroom cheese eggwhite omelet

S-10 raw almonds
1 zucchini-flaxseed muffin

L- Grill eggplant salad with grill chicken
- 3 cups lettuce
- 1 Black bean brownies
- 1 cup light soymilk

D- 4oz. Grilled salmo
-About 3 cups grilled zucchini

Exercise: 45 minutes yoga, 25 minutes pilate, 30 minutes walking (outside)

*** I am taking advantage of summer break to add more exercise to my routine so I did yoga and pilate in the morning and walking in the evening. ****

****Grill eggplant salad****

1 Chinese eggplant (long, purple one)
4 oz. chicken
2 tbsp lime juice
5 Thai hot peppers, minced (optional)
1 tbsp hot sauce (optional)
1/4 cup thin slice onion
1/2 tomato (thin slice)
Pinch of splenda
salt to taste

1. Grill whole eggplant until the skin turns black and soft. Let it cool down. Peel the skin off, cut into bite size and set it aside.
2. Grill chicken until juice is running clear. Dice and set it aside.
3. Mix lime juice, salt and splenda together. Taste; add more salt ,lime juice or splenda if you want.
4. Put eggplant , chicken, tomato, onion, Thai hot peppers and hot sauce together. Pour the dressing and toss it lightly.

yummy sounding recipe, Prise! What I love is that your recipes stretch my horizons and help me see the wonders of the food on this WOE. And, yes, I can understand your writing!!! :D

@grace2 I love food and love to cook. That's why I have so much problem with my weight. Now I am learning how to cook healthy and substitute some ingredient that illegal with SB friendly lists. Today I made Kelp Noodles pad Thai and it was so good. I don't feel like I miss noodle. About Kelp noodle, it made from seaweed so there is zero carbs in it. One bag will fill you the whole way and if you cook them long enough until soften, it will taste and look like 'glass noodle'.


Here is my today menu:
6/16/11 Phase 1 Day 4

B- 2 zucchini-flaxseed muffins
1 cup light soymilk

L- Pad Thai Kelp noodle with pork and tofu
3 cups bean sprouts

S- 1 black bean brownie
1 cup light soymilk
About a cup of left over Pad Thai

D- 4oz. grilled salmon
2 cups roasted green beans
1/2 cup of avocado salsa

Exercise: 25 minutes yoga, 50 minutes pilate, 30 minutes walking (outside)

We went to watch movie today and we didn't have any popcorns or sugary drink.:)

6/17/11 Phase 1 Day 5

L--Fried zucchini noodles with pork and tofu
S--10 raw almonds
1 black bean brownie
1 cup light soymilk
D--salmon green curry with eggplant
-- 1/2 cup soft tofu topped with SF maple syrup

Exercise: 30 minutes yoga, 25 minutes pilate.

I went to B-day party today and survived b-day cake temptation. The party started at 6 so I stuffed myself with some snacks and grilled chickens before leaving the house. I had Mexican beans soup and grilled meat at the party. The soup was so greasy so I just used fork to eat my beans; one at a time.:) Then they passed the mexican cake, I had one in front of me and just looked at it. I didn't feel like I want to have a bite at all. It is so amazing how SBD works.

Here is my menu for today:
B-- 2 zucchini-flaxseed muffins
1 cup light soymilk
L--A big bowl of 'chicken fried(zucchini-cauliflower) rice
S--1 cup light soymilk
-- 1 black bean brownie
-- 2 pieces of grilled chicken
D--Mexican bean soup ( I just ate only bean)
--few pieces grilled meat
--one small hotdog (no bun) [I know we are not allow to have hotdog on phase 1 but I rather had that hotdog than fried rice)

Exercise: 30 minutes yoga

It was an easy Sunday. No temptation just kept myself busy.

6/20/11 Phase 1 day 7

B--1 zucchini-flaxseed muffin
--1 black bean brownie
--1 cup light soymilk
L--Stir fried chicken with tofu noodles (4oz. chicken breast, 1 pack tofu noodle, 1/4 cup egg beater)
--2 cups shreded cabbage
S-- 1 black bean brownie
--1 cup light soymilk
D--Eggplants omelette (2 cups eggplants slice with 1/4 cup egg beater)
-- 1/2 cup avocado salsa
-- 4 oz. grilled salmon
--1/2 cup left over noodle from lunch

Excercise: None

Day 8 and everything is still under control. I baked some black bean brownie from my favorite non SB recipes then I substituted flour with a can of black bean and sugar with xylitol+splenda. It came out so good. I had one today and put the rest in the individule snack bag and freeze them. I had 15 serving for one batch.

6/20/11 Phase 1. Day 8

B--Eggwhite scrambled with mushroom, onion, tomato and cheese

L--Stir fried chicken with seedweed noodle.
--3 cups shreded cabbages

S--1 black bean brownie
-- 1 cup light soymilk
--a little bit left over noodles

D--About 2 cups left over noodles from lunch

Exercise: 20 minutes yoga, 30 minutes walk

I picked a basket full of eggplants from my garden yesterday. Now I have to find the way to cook to get rid of them and none of my friends like eggplants:(

6/21/11 Phase 1 Day 9

-- Zucchini eggwhite omelette top with cheese
L--Stir fried eggplants with pork and egg ,sprinkle with hot sauce
S--1 cup light soymilk
--1 black bean brownie
D--4oz, Grill salmol
--3 cups lettuce
--1/2 avocado salsa
--1 cup extra soft tofu topped with sf chocolate sauce

Exercise: 20 minutes A.M. yoga, 25 minutes pirate, 30 minutes walking

Only 4 more days I will step on the scale for the first time. It is sitting on my bathroom floor and keep calling me every morning but I ignored it. :)

6/22/11 Phase 1 Day 10

B--2 zucchini-turkey patties
--eggwhite scrambled with mushroom and cheese
L--Chicken curry with eggplants
--1 package tofu noodle
-- 1 black bean brownie
S--2 slices turkey breast with a slice of cheese
-- 1 cup light soymilk
--1 black bean brownie
D--Pizza (flaxseed crust topped with turkey ,no sugar added pasta sauce,zucchini-turkey patty and moz. cheese)

Exercise: 20 minutes A.M. yoga, 30 minutes walking
