Today I woke up at 4:20 with a full bladder and had trouble getting back to sleep. When alarm went off at 6:45, I woke to my left calf muscle being so tight it looked wrong and hurt bad, not sure what that was about! My fiance has a treadmill stress echo today and he is coming all the way home to get me first, so I will be able to get him to stop by the whole foods market that is near the hospital on our way back home. I plan to look for sugar free mayo (Closest TJ's to me is nearly 100 miles away in Indy) sugar free lunch-meat and now agave syrup (thanks for the tip Chris55). I can't wait to make my own sugar free ranch dressing! I am pretty sure I got 2 cups of veggies in that 1 cup of chili so let me tell you how I made it.
I used a stoneware crock pot it is 4 or 5 qts don't remember and it has chili in it now so can't measure atm. I used dry beans rinsed 1 cup each of kidney, pinto, and black-eyed peas. Just covered them with water and turned it on. I added a large can of peeled crushed tomatoes in tomato puree, and a can of orig ro-tel, 10 oz frozen chopped green pepper, 12oz frozen chopped onion and also a partial open bag that was about 1/3 full, 1 dry pint of sweet peppers that had 3 kinds of peppers in it, 2 each of red, yellow, and orange bell peppers. At this point I let it cook for hours and it started to start making juices that didn't fit in the pot! So I sat there with a baster sucking juices out to stick back in when it had cooked down some. I cooked this chili so that it has almost no juices it is solid veggies with only 1lb 4% fat ground beef that I cooked separately and got as much grease out of it as I could then seasoned it same as I had chili I just used chili powder, cumin, garlic, and a black and red pepper blend. I added a can of tomato sauce and cooked it to a paste before adding it to the chili. I had thought about adding some evoo to the meat mixture before adding it to the chili, but I get evoo with my egg in the morning and at dinner and any raw greens I eat the dressing I use is made with soybean oil. The only reason there is even any meat in my chili is so the fiance will eat it! But it took me an hour to eat that 1 cup of chili (cold measured, pretty sure it expands when heated) and I was full.
Keep in mind I am pretty short, I may never be able to eat that much! I am also as big as I am from not eating but once a day, my tummy (not belly!) is pretty small too from that. Just eating six times in a day was a huge step for me. I am doing a modified p1 because I do not have cravings at all and to make food for us both, I just need to learn to eat. Fiance and I started this together, and he had no idea I wasn't eating enough until I told him I only ate once a day (the meal we eat together) on Wednesday and he was so mad at me.

Oh and that recipe I found here for the parm crusted fish, omg thank you for that! My fiance hates fish and not only did he eat it for dinner last night, but he also took one today for his light lunch before his stress echo along with a tomato. Since he can only eat light before the test I will make up for the loss of veggies in his snack after the test.
