I am fat, and I got that way by not eating food and drinking Mountain Dew by the liter. I have trouble eating, it takes me an hour to clean a plate that isn't even full. Now back in May I stopped drinking MD and switched to fresh brewed green iced tea unsweetened and I stopped getting daily migraines. On Memorial day I had a bit of a pecan bar dessert and got a migraine that seemed like it would not go away. So I seem to have a problem with sugars, but not from milk or fruits. That being said I am going to follow this diet with one exception, I will not settle for anything with added sugars (not even in my mayo or salad dressing) and instead will eat 1/2-1c of blueberries a day as I believe this will be better for me.

Monday-Wednesday I certainly didn't eat enough food those 3 days for 1 day so this morning I set alarms on my cellphone starting 6:45AM every 3 hours until 9:45 to remind me to eat.

My plan is to post here every night what I ate that day, so I will be back later today, time for afternoon snack now.

Today I have eaten:
Breakfast: 1c raw greens salad /w ½ sm tomato & a few sprays of dressing, 6oz tomato juice & 1veggie fed egg fried in evoo spray topped lightly /w a trio of 2% cheese

Snack: ½c lf plain yogurt /w ½c blueberries, 1tbls chopped walnuts, ¼tsp vanilla extract, & 1 packet Aspartame

Lunch: 1c homemade 3 bean 8 pepper chili prepared /w 4% fat fully cooked ground beef after pressing out fat into Viva paper towels

Snack: ¼c raw broccoli & 1 celery stalk /w 1tbls spicy ranch sour cream dip & 8oz tomato juice

Dinner: 4oz Parmesan crusted Tilapia cooked in evoo 1½c raw greens with ½ sm tomato and 3 crumpled mushroom slices /w a few sprays of dressing

In about an hour I will eat:
Dessert or Snack: 1 tbsp Smucker’s Nat PB /w NSA Fudgsicle and glass of milk

Beverages not listed: about 3 qts water.

I have spent 5 hours eating so far today, but I think it was a good day. I will be surprised to get thru p1 eating so much and not gain more weight, we will see.

You might want to experiment with agave syrup - it's supposed to be affect blood sugar very little, so is approved on SB, but is a natural product. I just started using it recently since I have a very strong aversion to artificial sweeteners. It's the consistency of maple syrup but with a very mild taste. I use it mostly in plain yogurt when I don't have any fruit around. Just a squirt takes away the tang.

Your menu looks pretty good. Make sure you're getting your evoo/canola/good fats at each meal. Also, you only need 1/2 cup veggies for breakfast, more (2 C) at lunch and dinner, but eating more of them is fine!

I am with Chris on the good fats....more satisfying and good for your skin etc.

Today I woke up at 4:20 with a full bladder and had trouble getting back to sleep. When alarm went off at 6:45, I woke to my left calf muscle being so tight it looked wrong and hurt bad, not sure what that was about! My fiance has a treadmill stress echo today and he is coming all the way home to get me first, so I will be able to get him to stop by the whole foods market that is near the hospital on our way back home. I plan to look for sugar free mayo (Closest TJ's to me is nearly 100 miles away in Indy) sugar free lunch-meat and now agave syrup (thanks for the tip Chris55). I can't wait to make my own sugar free ranch dressing! I am pretty sure I got 2 cups of veggies in that 1 cup of chili so let me tell you how I made it.

I used a stoneware crock pot it is 4 or 5 qts don't remember and it has chili in it now so can't measure atm. I used dry beans rinsed 1 cup each of kidney, pinto, and black-eyed peas. Just covered them with water and turned it on. I added a large can of peeled crushed tomatoes in tomato puree, and a can of orig ro-tel, 10 oz frozen chopped green pepper, 12oz frozen chopped onion and also a partial open bag that was about 1/3 full, 1 dry pint of sweet peppers that had 3 kinds of peppers in it, 2 each of red, yellow, and orange bell peppers. At this point I let it cook for hours and it started to start making juices that didn't fit in the pot! So I sat there with a baster sucking juices out to stick back in when it had cooked down some. I cooked this chili so that it has almost no juices it is solid veggies with only 1lb 4% fat ground beef that I cooked separately and got as much grease out of it as I could then seasoned it same as I had chili I just used chili powder, cumin, garlic, and a black and red pepper blend. I added a can of tomato sauce and cooked it to a paste before adding it to the chili. I had thought about adding some evoo to the meat mixture before adding it to the chili, but I get evoo with my egg in the morning and at dinner and any raw greens I eat the dressing I use is made with soybean oil. The only reason there is even any meat in my chili is so the fiance will eat it! But it took me an hour to eat that 1 cup of chili (cold measured, pretty sure it expands when heated) and I was full.

Keep in mind I am pretty short, I may never be able to eat that much! I am also as big as I am from not eating but once a day, my tummy (not belly!) is pretty small too from that. Just eating six times in a day was a huge step for me. I am doing a modified p1 because I do not have cravings at all and to make food for us both, I just need to learn to eat. Fiance and I started this together, and he had no idea I wasn't eating enough until I told him I only ate once a day (the meal we eat together) on Wednesday and he was so mad at me.

Oh and that recipe I found here for the parm crusted fish, omg thank you for that! My fiance hates fish and not only did he eat it for dinner last night, but he also took one today for his light lunch before his stress echo along with a tomato. Since he can only eat light before the test I will make up for the loss of veggies in his snack after the test.

I actually got hungry today! This is very exciting for me since I had to force myself to eat nearly everything I ate yesterday. First I had to add a glass of milk to my morning celery and LCLC snack because I wasn't full after eating it and then I was already in the kitchen with evoo and garlic in the pan for my pan heated raw greens salad when my alarm went off to remind me to eat lunch! My sister called me while I was eating lunch, she is going back to school to be a nurse, I mentioned about my leg cramp this am and she said I am not getting enough potassium so I added some Morton lite salt to my salad, it was a little too salty but still good and if that salty keeps me from getting another one of those leg cramps I will deal til I can have bananas again.

Snack: Celery with LCLC /w 8oz 1% milk

Dinner: @snack Golden Corral filled first plate with salad greens (3c worth about) then topped with broccoli, cucs, egg, & a little ranch cleaned plate, went to grill got a little piece of sirloin 2 finger thick and deep and as long as my hand maybe /w water to drink & no dessert!
Snack: @dinner ½c homemade chili
Dessert: ½c plain yogurt ½c blueberries, handful chopped walnuts & 4oz 1% milk

I don't think I drank enough water today, not even 2 qts.

Woke up 6:30 only 15 minutes early, but my right calf muscle was all in knots so now both my legs hurt! Did a little figuring while having breakfast...
Potassium:
1c Milk 11%
8oz Tomato juice 12%
1c Yogurt 16%
1/4tsp salt 10%
And I realized there is no way I can get enough potassium into my diet and eat everything else I should so off to Walgreens I go to get a multi-vitamin with at least 50% daily needed of potassium.

Finally got a sf mayo, Duke's and it made the best ranch dressing! We LOVE a good ranch and until today could only get that eating out (never made my own before, had no idea HVR seasoning packet was so much different than what they sell prepared), so we ate lots of salad.

Breakfast: sm trimmed Angus bottom rnd skillet steak cooked /w 1tbls evoo and garlic, 1 veggie fed fried egg, 8oz tomato juice, & ¼tsp salt

Snack: ½c plain yogurt, 10 blueberries, handful chopped walnuts, squirt of agave syrup, fish oil pill & multi-vit

Lunch: 1¼c homemade chili, 8oz tomato juice, salt, 99mg potassium pill

Snack: 2c raw greens, ½ sm tomato, 1/3c diced mushrooms /w ranch

Dinner: sm grilled Angus bottom rnd skillet steak, 1c grilled squash, 1c raw greens salad & ½ sm tomato /w ranch, 99mg potassium pill

Dessert: 1tbls Nat peanut butter mixed /w NSA fudgesicle & frozen, & glass of milk, in about an hour.

Still can't exercise from leg muscle cramps, but made sure to stretch my legs as well as I could. Hope that helps plus the extra Potassium (3%/pill) Also read that you lose potassium sweating, so I tried to stay as cool as I could today.

No leg cramp this morning, but muscles still hurt.

Breakfast: 1 veggie fed egg fried in evoo spray lightly topped with 2% Mexican 4 cheese blend, salt, & pepper /w 6oz tomato juice with salt, Multi-vit & fish oil pill
Snack: ¼c broccoli florets, ½c celery, 1tbls spicy ranch sour cream dip, 99mg potassium pill
Lunch: ½c grilled asparagus, blackened grilled mahi mahi on 2c raw greens /w ½ sm tomato and ranch
Snack: walnuts, 99mg potassium pill
Dinner: eggplant & yellow squash lasagna /w garlic and spinach stuffed mushrooms
Dessert: 1 Peanut Butter Cheesecake Cupcake /w tall glass of milk, 99mg potassium pill

I ate way too much yesterday, went to sleep all full and bloated and woke up feeling the same. Spent all day in a half sleep daze and had my first caffeine drink in over a week.

Breakfast: 1 veggie fed egg fried in evoo spray /w salt, Multi-vit & fish oil pill
Snack: 8oz tomato juice /w salt, Niacin pill
Lunch: blackened grilled mahi mahi on 1½c raw greens /w ½ sm tomato and ranch
Snack: walnuts, 1 can pepsi max that I never finished
Dinner: beef, chicken, broccoli, mushroom, spinach, and garlic stir fry, had seconds & Potassium pill
Dessert: 1 Peanut Butter Cheesecake Cupcake /w tall glass of milk, Niacin pill

Did some 20 minute leg stretches this morning and my leg cramps are all gone now.

I am very tired today, not getting enough sleep. It seems no matter what time I go to sleep, I wake up at either 4:20 or 5:30 and I am suppose to sleep til 7! I will be having my dessert within the hour and falling asleep soon after.

Today I ate:

Snack: ½c broccoli, cauliflower, mushroom, pearl onion, spinach, and garlic stir fry, Niacin pill
Lunch: beef, chicken, broccoli, cauliflower, mushroom, pearl onion, spinach, and garlic stir fry, Potassium pill
Snack: walnuts
Dinner: Big salad with romaine, tomato, broccoli, egg and blackened chicken breast cooked in evoo and garlic, and ranch
Dessert: 1 Peanut Butter Cheesecake Cupcake /w tall glass of milk, Niacin pill

No exercising or stretching today, just housework and chasing dogs out of kitchen.

Hey Quirquie! Good to have you on board with the rest of us. Thanks for posting the link to your inspiration. I had never seen those pics before :?

I hear you on the leg cramps. Hope it gets better with the supplements. If you are feeling tired during the day, it could be what some here call the "SB Flu." People get tired, have headaches, etc. while changing their eating patterns. I was pretty tired with headaches for the first 6 days or so and then started to feel like I was in a groove of eating P1 and had a lot more energy.

Thinking of you with learning to eat. Some in my family have had issues with swallowing, which makes eating difficult. Thanks for posting your menus. Keep going. You can do this! You are already doing this!!! :D

Thanks for stopping by, I actually learned yesterday that I was drinking too much before going to bed, it is no wonder I wasn't sleeping well! As early as I tried to go to sleep last night, all I ended up doing was getting up at least 3 times (I think closer to 5) just to pee. I was careful not to drink more than just 1 sip of water if my mouth got dry and wasn't able to actually fall asleep until 10, but I then slept all the way til 6:30! I think my main problem is thinking of drinking water in terms of glasses and not cups, a glass of water to me is actually 2 cups of water!!
