Does anyone have any veggies that maybe im not thinkn about to be eating? I dont like warm veggies ect: broccoli, cauliflower, peas and carrots....i do like asaparagus, spinach and corn but very boring eating these all the time, and im not the type to be eating cold carrots/broccoli ect...just thought maybe there was something i was mising or something good for those who are picky on veggies or even any idea for healthy side dishes?!

How about zucchini, mushrooms, eggplant, yellow squash, spaghetti squash, tomatoes, jicama. Does grilling veggies sound appetizing? I dust mine with garlic and onion powder and grill them with a little EVOO.

You might look through the list of phase 1 veggies and see if anything seems appealing. As you look, you can consider the different ways something can be prepared. For example, you can have vegetables raw, in a salad, marinated, pickled, pureed, in a soup, sauteed, roasted, grilled, etc. And just because a vegetable is cooked doesn't mean you have to serve it hot - cold grilled vegetables like eggplant, peppers, zucchini, mushrooms, etc. can be really good.

You might also look through the list of recipes on this site for vegetables and salads. You might see something that seems appealing. For example, when you think of green beans or kidney beans you might be thinking they have to be eaten hot, but you might run across a recipe for a cold green bean or kidney bean salad that seems good.

BTW, no corn in phase 1, and only occasionally in phase 2.

Go the the Recipe Summary that I put together. It is one of the sticky messages near the top of this Food and Recipe page. They are all links that will take you to posts of great recipes. I have everything arranged by category of food, so you will need to scroll down and look for Salads and then Vegetables. There are so many good recipes for salads (other than just lettuce), and then scroll down and look at the Vegetable section. You will get many more good ideas of vegetables to eat and the recipes that go with them.
