I found the solution to my dijon cheese sauce problem Wednesday night - lf sour cream to the rescue. I took 1oz of 2% milk Velveeta, 1T of dijon mustard (I used Trader Joe's which is nice and spicy), 1T of lf sour cream and microwaved it in a small dish for about a minute on half power, stirred, then a few more microwaves. It was nice on steamed broccoli and went really with with the Chickie Bleu Redux.

B: Two egg scramble with red and green peppers; spicy refried pintos; 1% milk
S: Peanuts
L: Buffalo chicken salad; diet coke
S: An apple and string cheese
D: Chickie Bleu Redux; steamed broccoli with dijon cheese sauce; 1% milk
S: Babybel

Well, lunch was on the company, but with a bunch of brass and an important new customer that was auditing me for two days. Not so free, after all.

B: Two eggs sunny side; spicy refried pintos; 1% milk
S: Peanuts
L: Broiled chopped sirloin patty with onions; chicken broth; salad with ranch; mixed veggies
S: String cheese and an apple
D: Braised chicken thigh redux; steamed green beans; ww english muffin; 1% milk

Friday, 2/25: Whew

Well, we not only passed the audit, but did it without a finding. The customer was happy and the VP of sales made a big deal out of how full of awesome we are and sent it to the CEO, so all is well. I got an irritating cold in the process, but that price was fair, all told.

L: Chicken taco salad with salsa and ranch; diet coke
S: String cheese and an apple
D: Mexican lasagna; salad with bleu cheese; diet coke
S: Babybel and zinfandel

I made the lasagna basically following this recipe (viewtopic.php?t=11659), but I added jalapenos to the onions and garlic, used pepper jack cheese, and added a can of black beans as a random layer. It was okay. It could probably use about twice the amount of ground beef and twice the salsa; it's not like you can eat 1/4 of the thing in one sitting.

Saturday, 2/26: Hit the Ground Running

I ran out of canned pintos and Friday's dinner took about all the energy I had, what with audit stress and getting this stupid cold. Thank goodness for Guaifenex. Whoever came up with this should be canonized, or bronzed, or have a stadium named after them. Whenever I have a cold, I chow one of these things each day (leftovers from DW's allergy days) and let me tell you - it takes care of any kind of conjestion.

Anyway, back to food. No canned beans, no energy, so I went into the kitchen first thing Saturday morning to rectify the situation. Diced up some jalas, some onions, minced some garlic and mashed me some black beans. My bean cycle is really working out so that I'm not getting sick of pintos, yet I'm loving my mashed blackies whenever they come around.

B: Two eggs, sunny side; refried black beans with jalapenos; 1% milk
L: Mexican lasagna; salad with bleu cheese; diet coke
D: Chicken enchilladas; chips with cheese; diet coke

I went offplan for dinner. I haven't taken the family out in awhile, and when I did, it was Applebees for the sirloin. They all have cabin fever, so we went to our favorite Mexican joint and I just made the best of it. I had maybe five or six corn chips, two small cheese enchilladas in corn tortillas, and black beans with a small amount of rice that stuck to them at the border. Nowhere near enough veggies, but it was one meal.

Sunday, 2/27: The Pennsylvania Chainsaw Massacre

So we've had this Little Tykes gym cube thing in our backyard for years - we got it for DS when he was an only child in Mexico for his 2nd birthday. Sunday was bulk trash day and it was time for it to find another home. Years of time in the sun had caused the bright colors to fade and the plastic itself to become brittle and shatter in places. Plus, it's kind of an eyesore. I'd apologize to the neighbors, but their dogs bark too much. :P

So I set to work on the thing with DS' old t-ball bat, trying to persuade the parts to unlock. I get the slide off, two of the sides broken down, and the little platform all out, but the other two sides of the thing just got too intimate over the years and refuse to respond the gentle coaxing of an aluminum bat. So I did what any guy would do - turned to rotating blades. Ahh, rotating blades - is there anything they can't do? Of course, this is all under the bright afternoon sun on a beautiful-enough day so that most of my neighbors got to see me in my safety-lens sunglasses hacking a child's jungle gym apart with a chainsaw. If there were any doubts about my sanity before yesterday, rest assured I fully dispelled them with that.

D: Roast beef; steamed spinach with parmesan and Mrs. Dash; salad with bleu

DW and I come from opposite ends of the roast beef spectrum. Her mom always served up shoe leather that needed gravy just to cut through the sawdust-like consistency that her dad loved; my mom always served up a roast so rare you had to chase it around the kitchen, subdue it, then carve the thing. I tried to find a happy medium last night, but ended up with a uniformly grey roast with hints of pink in the very center. It was still juicy, but it will require gravy for a redux. Now to research beach-friendly gravy....

Monday, 2/28: Good Pants

On a lark, I tried on a pair of pants Monday morning that hasn't fit for awhile and, well, ended up wearing them to work. Two months, twenty pounds, and two inches off my waist. Not bad considering I've been liking the majority of the food I've been eating. I'll admit that salad for lunch is starting to wear a little bit, so I need to keep finding ways to change it up and keep lettuce off the dinner table.

Tuesday, 3/1: In Like a Lion

Actually, there was nothing particularly leonine about Tuesday or my eating or appetite, but it sounded like a snappy title. Audits a work, a term paper at school, little league assessments and this maybe-band thing have kept me busy enough that my meal planning has slid a little bit and I've been eating on SB autopilot. DW and I throw menus together literally as she's heading out to the store, but this will get better after I bang out 8-12 pages on comparative economic systems complete with APA citations.

L: Antipasto salad (pro-pasto counter-demonstrators were peaceful); diet coke

Just taking a stroll through your kitchen......thinking that tortilla 'lasagna' would be a good recipe for freezing for my stash of "TV dinners" Thanks! :)
I hope to have enough yummy 1 serving containers to see me through work days all summer. No cooking, no clean up. just me on my deck with fresh garden veggies, great microwave dinners and a good book.
