Karen, i don't follow recipes ,but i'll tell you how i made it!!

Dreamfields lasagna noodles,uncooked
1.25# cooked ground beef
can of spag sauce( Hunts brand; veggie)
2 qts HM froz. stewed tomatoes with peppers,onion & italian spices. ( has lots of fluid)
fresh spinach
can of mushrooms
FF cottage cheese ,16 oz mixed wirh 1/4 cup eggbeaters
1/2 sm chopped onion
1/2 can black olives ,cut
8 oz RF shredded cheese/ divided
a sprinkle of parm cheese
crock pot liner... a must as I hate doing dishes.

With liner in crock pot:put a little of the canned sauce in the bottom
break noodles to fit crock pot,they may over lap alittle
layer each item >>except the canned sauce & 1/2 sh. cheese, >>make 3 layers
on the top layer: dump the can of sauce & top with last 1/2 of Sh. cheese.
you may put it in the frig @ this point
cook on high for 3.5 hrs or on low for 6-8 hrs.... enjoy!!

I have added in the past : tofu/ shred zukes/carrots /boca crumbles/ricotta cheese.... what ever you like ,really !!!
it is a forgiving recipe & is good meatless too.Canned stewed tomatoes are OK, use all the juices!!
it served 4 of us (with seconds for some :roll:) & 4 portions for left over meals.

I did not weight this AM.... 'cause we had bread sticks & mini cheesecakes too :oops: hey it was a b-day dinner!!!

today is a new day!!
b= eng muff veggie egg sand/tea 200
s= 1/2 bagle & cr cheese/tea 200
l= pork chop in mushrooms & snap peas/cottage cheese & raspberries/ Fuze 425
s= ham & cheese roll up 150= 975
d= zuke soup ??+ = 1100 + wine :wink:
I will walk today & then i'm making Raspberry wine..... drool Anne ,drool !!! :lol:

Happy birthday dd! Glad you all had a good time :D .

CONGRATULATIONS on being debt-free! woooooo hooooo! OK, one concern, does dh have the ability to go apply for credit without you knowing? would he do that? I don't want to be a stick in the mud because it sounds like things are great.

I've never had cranapple wine...hmmm.

Karen--I do crockpot lasagna like this: spray with nonstick spray, a little sp. sauce (I use the heart healthy prego usually), layer of WW uncooked lasagna noodles, a little more sauce mixed with lean ground beef/turkey combo, LF cottage cheese, LF mozz, repeat. cook on low 6-8 hours. Sometimes I add onions, garlic, whatever I have. Mary's sounds much more exciting!!!

Anne ,no he'd never get credit like that. we still have 2 credit cards we use ... for gas mostly. I will have to monitor him & re- educate frequently tho. He gets an allowance each mo " blow $$" . If he starts charging stupidly again ,we'll have to have another discussion. but so far so good!!!
Our debt problem was that he always felt he would die early like his parents did ( both @56) He is turning 57 in 2 mos. so he spent like there would be no tomorrow. :twisted: Well there is a tomorrow & the next day & the next day!!
It looks a whole lot better now. :D

i made this last night , i made it up out of what we had on hand

shrimp stir fry:
1# cooked ,tail off, lg shrimp/thawed
one bunch of fresh kale/washed & big ribs cut out
1 cup savoy cabbage
green pepper chopped
4 green onions chopped
garlic( i use minced in a jar) /1 tsp.sugar
sesame seeds
SAUCE:
sesame oil/balsamic vinegar/thai chili paste/hoisun sauce/ ginger.....
enough to make about a 1/3 cup of sauce/ made to your taste.

stir fry kale & cabbage & a tsp of sugar in olive oil ,add water when it gets too dry,I even added a little wine. Kale takes a long time to cook. When kale is nearly done,add peppers & green onion>>/garlic/ sesame seeds to taste. stir fry til done.
Add sauce & shrimp,stir fry for 2 min. /don't over cook the shrimp. Enjoy, it was fantastic. DD#4 dibbed the left overs!!
makes 4-5 servings . cal count: 5 servings= 204 cals/4 servings= 255 cals no wonder I was hungry later! :roll:

GEEEZ, I'm bad @ names..... ? Autum's Radiance.... it is a mix of historical fiction( 1700s -Scotland & American Colonies)
& time travel... weird sounding but good... it is mostly set in the mountains of the Carolina's... pioneer type , with a little romance thrown in. :wink: I bought it @ the "library store" for a dollar.
I love historical books & long books ... 250 pgs is only a "snack" for me!! :lol: it leaves you still hungrey for more!!!

TGIF!!!!!!!!!!!!
now if anyone could come over here & knock some sense into my DH's head it would be greatly appreciated. :roll:
he is in his poor me ... blah blah .... boo hoo .....no body loves me ,mode........ again.
I'm making him go to a therapist... alone this time... as HE needs help... I'm fine!! SHEESH!! I can't believe how many times we have been in this same place.... it is wearing me down.
He is SO needy & childish.It is driving poor DD#4 crazy too ,cause if I'm not home he bugs her!!So inappropriate as the father. :evil:

on that note..... at least I'm debt free...
but $$ isn't everything......happiness is!!I'm naturally a happy person... thank you God!!

Hey Irish Gal, I just started the sb diet a couple of days ago and was browsing when I noticed this thread. So nice to see another Irish person on it as some of the stuff is in American measurements or American versions of stuff I can't seem to find here (non- fat stuff especially).

If you have any wisdom to impart with me, or what to do when the supermarket only has 4 different brands of full fat creme fraiche and no low fat, feel free to let me know! lol

Anyway, thought I would drop you a quick note ;)

Sl (another Irish woman) x
