Gotta THANK YOU again for the recipe for the chili relleno's (which we just finished eating :D )........They were delicious ! I can't believe that I actually made them....and that they tasted so good.
Hubby & I both were having some serious mouth burning going on..........kept thinking it was the peppers. Finally dug out the can of the fat-free refried beans......
OOps ! :shock: ...they were "spicy Hot". That will teach me to put on my glasses when I am cooking !
OK...Gotta run...I am going to brag on the relleno's on our thread !

hee-hee, you gals are fun to read!! both of you guys are doing great!! i still need to figure out what the "it" is--some flush of sorts?! hmmmm...sounds interesting.

sorry to hear about your sick little one--i can relate to the eating when you are at home with the kids, i think it's an emotional thing. you want them better and back on a routine and for some bizarre reason i can rationalize every last BAD bite because my nerves are rattled and i feel restless...maybe it's not the same for you??

oh, those bean brownies sound delicious! would i risk eating the entire pan if I made them or are they easy to pass up after eating the recommended serving size? i'm going to find that recipe... :wink:

Suzzi, I am glad you enjoyed the rellenos, next time they will be even better with the right beans!
Radish lady, I agree about the emotional thing when the kids get sick, I just wish I could change that, get rid of emotional eating altogether because I get it when they are sick, when I am stressed, when I am sad, when I feel depressed, or angry, etc. I am all emotions and if the only outlet is food then I am in serious trouble, especially because it is not any food, it is mainly the addictive carbs type…

Anyway, since I did so badly yesterday, I decided to do a couple of P1 days to get me back in track. So far so good… Today’s menu:

B: egg w/ham, cheese, beans and salsa
S: string cheese and some beans
L: huge salad (lettuce, spinach, tomato, zucchini, mushrooms, avocado and vinaigrette) and chicken “adobado”
S: cucumber w/hummus (I finally ate it!)
D: TBD
S: fudgesicle if I need something sweet

Yesterday I didn’t feel like having a salad again so I open the fridge, took out all the veggies and an already grilled sirloin stead, chopped the veggies (onion, yellow pepper, mushrooms, zucchini, tomato), sautéed them in little olive oil, added the sirloin, some soy sauce, and garlic. It was very good, I prepared more for my lunch today. And I had my fudgesicle as well, what a nice treat! I need to buy more because there is only 1 left in the freezer!

Today’s menu:

B: egg with ham and beans
S: cashews
L: sirloin and veggies, beans
S: hummus and maybe an apple
D: TBD I am thinking grilled fish and a salad

This morning I was desperate looking for my 3x3’s in the freezer, I thought I had 2 left but I couldn’t find them. I’ll look again tonight…

I am thinking to add the apple because I don’t want to do a strict P1 and adding fruit has been easier for me than the grains as far as cravings go. Actually, I sometimes even forget to eat the fruits. If everything goes well today I will keep adding the fruits but I will still avoid the grains at least for the rest of the week.

My concern is that I will never be able to completely add the grains because as soon as I get comfortable I start eating the bad foods so easily. I want so bad to make this my WOE, as many say it is trial and error, and at least I think I am learning about how my body reacts to grains. How come it has taken me this long to figure it out? I guess it doesn’t matter as long as I learn to apply this knowledge into my daily life for now on.

Wildtrout: Once you cook and cool the bean brownies you can freeze them seperately in baggies. If you get a chance....try to find the new cocoa that hersey's just put out. It is "Extra Dark" cocoa powder....and man is it good ! I also add a teaspoon of instant coffee to the mix.

The hummus was very good, it is a variety that I got at Sams with red bell pepper, I have a big pot and nobody else eats it at home! Do you think I can freeze it? I was hesitant to eat it with the apple but it was a neat combination! Hummus goes well with so many different things, sometimes it is hard for me to believe that it is “allowed”!

Yesterday for dinner I had bean soup with cheese, some chicken leftover with a little salad. I remember I read somewhere that it is a good idea to start the meal with soup (healthy type) and yep! I was full pretty soon, I didn’t even finished all my chicken! After dinner I had a fudgesicle and some pieces of jicama that I was chopping for the girls’ lunchboxes. I ran out of fudgesicles! I need to add them to the shopping list.

Today’s plan:

B: ham w/cheese and a nectarine
S: banana and string cheese
L: eating out, will try to get some grilled meat and veggies or a salad
S: cashews
D: TBD
S: yogurt

This morning I didn’t plan to eat the nectarine, but it smelled so good that I wanted my kids to try it, so I cut it for them and they wouldn’t even want to try it! Finally my oldest one (4yo) tried a little piece and she liked it but didn’t want to eat more and I ended up eating the whole thing which is good, I am learning to enjoy fruit. It was sooooo juicy and sweet. It didn’t affect my cravings and it was satisfying. I had it almost 3hrs ago and I am not hungry yet.

Another good thing is that DH brought pizza for dinner yesterday and I didn’t even care for it. My little one left half a slice on her plate that I would normally eat but this time I didn’t touch it. I cannot say I was proud of myself because I didn’t put any effort on it, it was just not appealing, but that feels really great!

I haven’t found my 3x3’s :evil: which is normal because I didn’t look for them! :lol: hahaha

Water: about 60-70 oz yesterday
Exercise: wii fit, about 40 mins. I did the step and finally got 4 stars! and DH challenged me to do all the yoga positions to see who had better scores, well, I beat him 8 to 3.

That is the same hummus I buy from Sams.......it will keep in the fridge forever !!
I have never tried to freeze it..... :shock: ...let me know if it works!

I found my 3x3’s I knew I still had 2 left! Well too late because I already had my breakfast for the following 3 days but they may be useful for Thursday and Friday morning.

Friday I didn’t eat the string cheese with the banana but it was close to lunch time so it didn’t cause any cravings. I had a very nice salad for lunch, we went to longhorn and they had these new salads that sounded and were yummy! I had a strawberry chicken salad, it comes with grilled chicken, greens, onion, strawberries, grapes, candied pecans and raspberry vinaigrette that I requested on the side and didn’t even touch, it didn’t need it! the salad was so flavorful by itself. I know the candied pecans are not beachy but I had them anyway. DH had the same salad but with 7-pepper steak instead of the chicken, I tried it at was also very good. For dinner I had one egg with ham, cheese and beans.

Saturday I had again the “motuleños” (beans, ham, and melted mozzarella cheese topped with a sunny side up egg covered with tomatillo salsa. It is usually made with a fried corn tortilla at the bottom but omitted for SB). I have them so often and I don’t get tired of them! During the day I had an orange, a banana, a salad with chicken and some guacamole. I cannot remember if I had something else, in the weekends I don’t eat at the regular times so it is very easy to mess up the meals. But I think I ate reasonable I just remember I had some dark chocolate so I didn’t eat a fudgesicle after dinner (I got a new box of those!), I managed to avoid the starches and I ate fruit, as I planned to do, yeah! I also cooked for the week, picadillo (ground beef dish with zucchini, potato, tomato sauce, not completely SB but it is DH’s favorite dish and I usually take the potatoes out in my plate), mushrooms, roasted veggies, chicken curry and breaded chicken for the family and chopped lots of veggies to grill on Sunday.

Sunday I prepared a ham and mushroom frittata with some cheese. It was very good, I actually prepared 6 eggs and cut it in 6 portions, I ate one and hubby two and the rest I kept in the fridge for my breakfasts of the coming week. I had nuts for snack (planters deluxe mix, delicious!), maybe more than I should. For lunch/dinner I had grilled shrimp with veggies, some steak and a big salad. I also had a corn tortilla with melted cheese on the top. Ah! I almost forgot, I had wine on Sat and Sun, one glass each day.

In general I think I did pretty good for a weekend and the good news is that this morning the scale showed a 130.5! I am so close to the 120’s, yahoo!!!! AND the pants that I got for mother’s day fit perfectly and I am wearing them today at work!

OK, today’s plan:

B: ham and mushroom frittata and beans
S: none
L: grilled shrimp and veggies, brown rice, salad (officially reintroducing starches)
S: cashews and kiwi or peach
D: TBD
S: nothing or a fruit

Water: I didn’t do very good during the weekend, Sunday I could really feel that I needed to drink much more and I think I had about 50 oz

Exercise: very little, some wii and a walk to the park on Sunday (maybe 40 minutes total)

Ohhhhhhh....you are almost there !!! Congrats on the loss....and great job on the eating too.
I am going to try your beans, ham, cheese and egg breakfast..but will top it with enchalita sauce.........sounds so good !

Also.....I found a new hummus flavor (By Atheana ?) It is called cucumber dill hummus....and it really tastes wonderful ! Look for it at WalMart !

Thanks Mom, I will try other varieties of hummus when I am done with the big one I have. I even forgot to pack it for work today.

Yesterday I had only one fruit (kiwi), hopefully today I remember to eat at least 2. I was tempted to eat an orange after dinner but then I was not hungry anymore even though I only had some fish with tomatoes and some jicama. As a treat I had a couple squares of dark chocolate.

The plan for today:

B: ham and mushroom frittata
S: peach and string cheese
L: going out, probably to a thai restaurant where I can get a stir fry w/brown rice
S: cashews and apple
D: TBD
S: chocolate covered strawberries (?)

Water: about 60 oz
Exercise: some wii, I feel lazy at night, tennis is over, so I need to find something else I like and a good time to do it. I am hoping vacation is going to help me get my energy back! We leave Friday, I am soooooooo looking forward!

When you go on vacation.....just relax and enjoy yourself!!
Don't pass on "special foods" that you might not get to try again.........you can get beachy when you get back home.

ha ha ha! bikini????? :shock: no way! I still have a big belly that would distract the people at the beach and they may drawn... besides I have so many stretch marks that I prefer to keep it hidden. That's ok, I have a 2 piece that I love because the top covers all my belly and the bottom is like a little skirt. I also have another 2 piece that covers the belly but if I put my hands up my belly comes out, ha ha ha! so I will just take it in case I need an extra one.

At lunch I had thai basil chicken with white rice, they didn't have brown rice and the sauce was very oily, and my belly hurts a little bit (it was also pretty spicy), and I had a diet coke which I had been avoiding for a while but the water didn't taste very good. Results: pretty bad lunch.I didn't have my morning snack and in the afternoon I had the cashews and the apple. For dinner I had a little bit of ww spaghetti with fish, shrimps and veggies and for dessert the chocolate dipped strawberries (yummy!) Maybe loaded with too much chocolate, oops! At least I've been having fruit and some grains but I noticed that I didn't have any dairy or beans today, other than the cheese in the frittata. I may try to eat a yogurt tomorrow. This is the plan:

L: ww spaghetti with fish and shrimp with veggies, jicama

This morning I had terrible cramps from my TOM, :cry: I never had this strong pain before, I even threw up my breakfast (which btw was according to plan :wink: ). I even called my OB because it got me scared. Well, about 1.5 hours after I took a couple tylenols the pain subsided and I have been feeling good since so I hope it was just a one time thing. I haven’t heard from the nurse, she’s supposed to call me back this afternoon after she discusses with my doctor. I could eat my yogurt as the morning snack and had lunch also according to plan. I also had an apple just before lunch because I ran some errands during my lunch hour and when I came back it was time for a meeting. As a result I had my lunch at 2pm, it was delicious btw. I didn’t eat the jicama, I may have it as my afternoon snack, no orange today because DH took the last one. I had a couple squares of dark chocolate, so nop, the problem is not my stomach, I am sure is TOM related because it was a very localized pain.
For dinner I will have another grain (maybe brown rice) with beef and mushrooms that I prepared last night, I may also add some roasted veggies. I have no fruit left at home other than watermelon that my kids love so I may go to the grocery store to get some more oranges and apples which will also be good for the road on Friday.
I am also playing tennis tonight! yes! :D 2 good hours of fun tennis, I really need the exercise.

I got a call from my doctor and we chatted a little bit about my pain that had completely disappeared by then (around 5pm). She told me that it may have been a cyst that popped! :shock: wow that is scary but what is even more scary is that another possibility is that it could be an ectopic pregnancy! :shock: :shock: :shock: which would be very dangerous! :( She told me to do a pregnancy test if the pain comes back, it hasn’t so I guess it was the popped cyst. I have my annual checkup in July so I hope she will check on that stuff.

Tennis was not that great, :| I was subbing for another lady and I didn’t know the other players. Well they had not played in a while, so it was not very challenging. I am sure they can play better than that but one girl couldn’t even serve the ball in! The weather was fantastic and I enjoyed the experience of playing in clay courts outdoors but I didn’t sweat at all, it was pretty slow rhythm, so I cannot call it exercise…

OK back to the food, yesterday I had my dinner according to plan and had some cantaloupe for dessert, a handful of mixed nuts and a couple dark chocolate squares (again!). Too much chocolate yesterday, I need to be careful!

Today’s menu:

B: uncle sam’s cereal with yogurt
S: nothing, uncle sams usually keeps me full the whole morning
L: steak w/mushrooms and roasted veggies
S: jicama if it is still in good shape, and cashews
D: not much left in the fridge, maybe an egg or a ham and cheese quesadilla and a salad

Tomorrow we go on vacation after work, YEAH! :D

Didn’t I say that I had too much chocolate on Wednesday? Didn’t I say that I had to be careful? Why then did I eat like 6 squares of dark chocolate yesterday? Bad, bad girl. And of course, since I had all that chocolate, the jicama stayed in the fridge and I had no cashews, bad trade I know.

I had to stay late at work, I was very hungry when I got home around 8pm and then had to give the girls a bad, story, and to bed, one wakes up before the other lays down, potty…again, and again… I was feeling dizzy, very hungry. Finally around 10pm I was able to eat something and the first thing I see on the table: a baguette, a beautiful white, all processed baguette, and what did I do? I didn’t eat it! I devoured it! well, not the whole thing but a good piece. I also had a piece of rotisserie chicken, not the breast but the fatty, unhealthy thigh, it was good though, it used to be my favorite part of the chicken, so juicy. Then, I fixed a pita with ham, cheese and roasted veggies. I was still pretty dizzy but after I ate I started to feel better. No wonder, I ate for 3 last night!!! DH went to the grocery store and I asked him to get me a coke zero, for some reason I was craving it, I drank it and it was just ok, sometimes when I crave stuff, the memory of it tastes better than the reality.

Today we are finally going on vacation, about 6hrs drive today plus the stops, including dinner somewhere. We may be leaving around 4pm so probably we will be getting to Asheville around midnight. Hopefully the traffic is not too awful, we’ll see.

This morning I had my uncle sams with yogurt and for lunch I think I will have rotisserie chicken (leftovers) with the rest of my roasted veggies, maybe half a pita.
For the road we have oranges, apples, nuts, crackers, cucumber and I may take with me the rest of the hummus. For the rest of the family we take chips, watermelon, cookies. I hope not to get too tempted.

I weighted myself this morning as my reference, still at 130.5, my goal is to come back at the same weight from vacation, I know I can do it!

If I can, I will post during my vacation, if not, I’ll post when I come back.
