I just thought I'd bump this to say if you really love Frito pies, take a serving of chili-your favorite kind-sprinkle on some shredded cheese of your choice and crush some Triscuits on it, mix it all together and you have a Frito pie without the Fritos.

I just did this with some black bean and chicken chili and it's wonderful.

OK, finally got the ingredients from the McCormick chili seasoning packets...can someone let me know if they're ok to use--I'm on Phase II now!! Yippeee!!

Slow Cookers Chili Seasoning
Spices and herbs (including chili pepper an black pepper), salt, onion, modified corn starch, garlic, green bell peppers an dsilicon dioxide (added to make free flowing).

Original Chili Seasoning Mix
Chili pepper and other spices, enriched wheat flour (flour, niacin, reduced iron, thiamine monoitrate, riboflavin and folic acid), onion, salt, and garlic.

Please let me know which of these is OK to use, if either of them--or both of them are. Thanks so much![/b]

in your pantry - do you have chili powder, black pepper, garlic powder or garlic salt, cumin? if so, I'd just mix up my own to keep from having all the additives. my favorite recipe - taken from a local Mexican restaurant cookbook has - per pound of ground beef - 1 tsp cumin 1 tsp garlic powder, 1 bay leaf, 2 tbsp chili powder. amazingly simple and very good. I rarely add anything else to it.

Agree with what Debby said. When I make chili, I always just use chili powder, cumin, salt, and pepper. I add garlic and onions to the chili.

Ok, thanks. DebbyC I may try your recipe--sounds good. BUT, you guys do not think the McCormick's seasoning is OK to use? B/c I really do like how my chili comes out just with those packets...

they have flour and cornstarch in them but mashing half a can of beans or simmering the chili until it reduces or using a tbsp of tomato paste would replace the thickening action. I just have too many bottles of really good fresh herbs and spices to buy packets - except for something that I make once a year or less.
I know it's weird because I do use artifical sweeteners and drink diet soda - but I figure if I cut out fake ingredients in other places I'm better off, cause I don't see me cutting out the other really soon!!!

I would definitely not use the second one - even though in a big pot of chili, it seems you're not getting a whole lot of whatever is in those packets, it's just not a good choice.

I guess use the first one if you must. I've checked ingredients on these kinds of things (esp. taco seasoning) and I'm always hard pressed to find one I'm willing to buy/use.

Thanks recipelover for sharing these recipes. I prepared the first chili you posted at the top of this thread, originally posted by Caylynn. I made it with ground turkey and added a sprinkle of red pepper and a can of chickpeas. It was delicious! Thanks for sharing.

Just copying in a recipe:

Black Bean Chili, P1 [posted by iheartspinach]

Here's a tasty recipe for black bean chili!

1lb extra lean ground beef
1 can Mexican style black beans cooked and drained
1 sweet onion chopped
1 red bell pepper chopped
1 clove minced garlic
1 tomato sliced thin
2-4 tbsp chili powder (container says 1 tbsp, but i needed much more)
salt and pepper

Cook the meat with the onion, pepper and garlic. Once the meat is browned, add tomato, beans, chili powder, salt and pepper.. Simmer and stir for about 15-20 minutes. Serve over baby spinach and chopped romaine. Garnish with low-fat shredded cheddar. Enjoy!

I made this last night and wanted to take a photo off it, it looked so good!
It tasted just as good!
I used fresh tomato, but I suppose canned crushed tomatoes would work well, too. I just use whatever I have on hand.
