Types of Squash to eat?

The foods list only lists Spaghetti & Summer squash as acceptable. I was wondering if we have have Acorn Squash? Kind of an odd question I know but I heard it was yummy and was just curious if it's allowed. Thanks :)

Acorn squash is allowed in phase 2. Most winter squashes are too high in sugars for phase 1.

Spaghetti squash is the only winter squash okay for phase 1. My favorite way to cook it right now is to pierce it with a knife, stick it in the microwave and nuke it until the knife goes through the skin easily (10 minutes or so), scoop out the seeds and guck, then separate the flesh into strands. Then I add Smart Balance, garlic and onion powders, salt, pepper, and parmesan cheese. Mmmmm ...

How does good ol' yellow crook neck squash figure into this? Phase I or only II?

Yellow crook neck squash is a summer squash and therefore good in both Phases 1 and 2. Acorn and most other winter squashes are still "limited" in P2 and can be used occasionally, but are still higher in GI and should probably not be eaten in the same quantities as you would eat summer squashes. They are good though! As we head into Turkey day, pumpkin is considered "very limited" in the Good Carbs/Good Fats guide.

So does this mean not all winter squashes are created equal? Has anyone tried other kinds beside acorn?

What about hubbard or some of the other ones? Is it just pumpkin that's bad or is it another kind of winter squash?

BUT there is a Phase 1 recipe for Roasted Veggies and it contains squash. I made it and it is delicious. I highly recommend it.

So can we or can we not have squash?

Butternut?

Oh! One of my favorites is the butternut squash. In case you aren't familiar, it has a shape like a huge pear...

I'm assuming (since it's a winter squash) that I shoud limit my intake of this as well. I'm Phase 2.

Is my assumption correct? Is Butternut off limits?

I love butternut squash and happily prepare it without any butter at all. If it is cooked to very tender, it really doesn' t need it IMO I was unhappy when I learned it is too high in sugar. Guess that is why it is sooo good.

Well what kind of frozen squash is it? If it's the orange-y, mashed stuff then it is likely some kind of winter squash and would be subject to the winter squash guidelines and I would look for any added types of sugars as well as brown sugar and maple syrup type flavorings are often popular with those types of squashes. If it is a zucchini/yellow squash medley, then those are summer squashes and you can use the summer squash guidelines. Never seen a frozen spagetti squash, so I don't think you have to worry about this "exception".

Oh....I have bought plain butternut squash. It was frozen in a little box. I don't know if that was what you bought. Thankfully, it didn't have any added ingredients.

Butternut squash is a winter squash and so is too high in sugar for phase 1. I believe it's fine in phase 2 though. The only squashes allowed in phase 1 that I know of are summer squash, zucchini and spaghetti squash.

Looks like a winter squash, so would include in P2 with the other winter squashes.

My book said you could have butternut squash in phase 1. I didn't as I thought it was a starchy veg and only looked when I was in pahse 2. It was then I discovered that it had a G in the phase 1 coumn too.
