Acorn squash is allowed in phase 2. Most winter squashes are too high in sugars for phase 1.
Spaghetti squash is the only winter squash okay for phase 1. My favorite way to cook it right now is to pierce it with a knife, stick it in the microwave and nuke it until the knife goes through the skin easily (10 minutes or so), scoop out the seeds and guck, then separate the flesh into strands. Then I add Smart Balance, garlic and onion powders, salt, pepper, and parmesan cheese. Mmmmm ...
