Looking forward to veggie recipes. I've been trying to incorporate more vegetarian meals into my family's lives but it's challenging since their idea of vegetarian involves pasta and full fat cheese. DS is coming home from college today and he's bean phobic, so even more difficult to plan meals, although I have been known to use ff refried beans as a thickener in soups without him knowing
Today I'm enjoying being home by myself and eating meatless all day long. Eggplant tonight!
