Just FYI-

Now that my recovery on my foot surgery is coming along, I'll be gearing up for a mini triathlon at the end of the summer. I've been considering it depending on how the healing was coming along. I can't run yet, but I can swim and bike. The date is August 26th. I have a training group I'll be working with starting July 1st. To preemptively cleanse my body, I've decided to do a 28day plant based diet starting June 13th. It should all fall in line with South Beach's way of eating, but might give you some high protein meat-free alternatives for recipe ideas. I'll post pictures when the time comes.

Sounds like you have an ambitious plan to get back in shape! Please post how you're doing so you can inspire the rest of us to get off the couch!

Looking forward to veggie recipes. I've been trying to incorporate more vegetarian meals into my family's lives but it's challenging since their idea of vegetarian involves pasta and full fat cheese. DS is coming home from college today and he's bean phobic, so even more difficult to plan meals, although I have been known to use ff refried beans as a thickener in soups without him knowing :wink: Today I'm enjoying being home by myself and eating meatless all day long. Eggplant tonight!
