Well, now to post my weekend of food:

Extreme Challenge Week 5 Day 6 Saturday:

WOW! What a day!

We were so busy today being in town at my sister's. I had a ww roll in the car for breakfast, a few fries and two bites of a hamburger from Crown Burger, half of a diet coke for lunch, dinner was a pot-luck type at my sister's church building and she made a shredded pork loin in a mushroom sauce (which was delish), had a yummy green salad, a lot of fruit and veggies and dip, piece of carrot cake (from Costco, yum!), a couple peanut butter bars, chocolate chip cookie. I'm sure there was a few more treats involved, but I can't remember. Then we drove the 2 1/2 hours home arriving at 12:30 a.m.

Didn't get all my water in, not even close.
Day 7 Easter Sunday:

It was Fast Sunday at church, so no breakfast or lunch. Easter dinner consisted of our spiral ham, mashed potatoes, corn, deviled eggs (for me), rolls (ww for me). Then came dessert, 2 chocolate ganache covered strawberries, a piece of carrot cake, a Reece's Peanut Butter egg, and some misc. Starburst jellybeans and Robin Eggs.

Again, not all my water was consumed. I definitely need to make up for it today (which I haven't started doing yet, having a tough time getting motivated to exercise with the state my house is in).

Last week of the Extreme Challenge!! I have actually really enjoyed this challenge. I haven't been as strict as I should with my eating, but I have stepped up my exercise and I have really been able to tell a difference. I feel stronger and have received compliments and how much more toned I look.

B: Oatmeal w/dried apples and sf caramel syrup, 4 oz. yogurt
L: ham slices, carrot cake
D: Turkey sandwich on ww bread (with cheese, lettuce, tomatoes, peppers, cukes), some extra cucumber slices
D: a couple handfuls of easter candy

Water: 72 oz.
Exercise: None today :(

B: omelet, 4 oz. yogurt
L: 3 slices turkey and cheese, cucumber slices, apple, 2 deviled eggs
S: Popcorn
D: Roast beef, peppers, onions, mushrooms, 1 slice provolone cheese Philly sandwich fixins), small ww roll
D: 1 sq. dark chocolate, popcorn

Water: 72 oz.
Exercise: 30 min. treadmill, 45 min. triceps and biceps weights

Extreme Challenge Week 6 Day 3

B: apple w/PB (I had my fitness assessment at 11:00 am, and was instructed not to eat, drink or exercise for 3 hours prior. So I literally finished my apple at 7:59 am :D)
L: small bit of leftovers from last night, about 3 big slices of ham, a big salad with cukes, tomatoes, mushrooms, a couple tbsp. of ranch), small ww roll w/one slice of cheese
D: Chicken Queso Soup (see Extreme Challenge Thread for recipe)

Water: 72 oz.
Exercise: C25K W1W1 (thought I'd try this again, I got the podcasts for it and it was ten times easier!)

Extreme Challenge Week 6 Day 4 Thursday

S: Apple w/PB (Pre-workout)
B: omelet (1 egg, 2 egg whites, 2c. of peppers/onions/mushrooms, cheese)
L: leftover chicken queso soup, salad (lettuce, cukes, shrooms, ranch)
D: 2 beef enchiladas (homemade, here's the recipe, I did ground beef instead of chicken), refried beans, a little corn, 1.5 c. milk
D: 1 sq. dark chocolate

Water: 72 oz.
Exercise: 30 min. Step/25 min. core strengthening with ball

S: Apple w/4 oz. vanilla yogurt (pre-workout)
B: My standard omelet (added some ham this time and was out of peppers)
L: Leftover enchilada, salad (lettuce and cukes), 1.5 c. milk
D:We went here for dinner. Hubby and I shared the baguette with EVOO and spices for dipping, Potstickers for appetizer, Chicken Scampi and a Drunken Flank Steak for dinner.
D: We shared the Chocolate Avalance Pie from Wingers

Water: 72 oz.
Exercise: C25K W1W2 (30 min. on treadmill)/30 min. Pilates

Extreme Challenge Week 6 Day 6 Saturday

Not much of a beachy day, we were out and about all day with the kids.

B: Uncle Sam cereal w/ dried cranberries, 4 oz. yogurt
L: 2 hard shell tacos from Taco Time, one oreo cookie (free at a store's grand opening), wasn't enough food so we stopped at Wendy's, I got a side salad.
D: 1 small hot dog (again, free at the grand opening), again wasn't enough food, we came home and had leftover homemade ham fried rice (with regular white rice, because I had been out of the other)
D: Some Easter candy

Water: 72 oz.
Exercise: 30 min. Kickboxing/30 min. Total Body Sculpting

Extreme Challenge LAST DAY!!

B: 2 eggs, 2 strips turkey bacon
L: More leftover ham fried rice (on the way out the door to church)
D: Balsamic Chicken and veggies (as posted in the Extreme Challenge thread)
D: Some of a white cake with store bought frosting, a bunch of Easter candy.

Water: 54 oz.
Exercise: Off today!

I can't remember if we are supposed to journal our food, but just so no points are lost I will keep it up.

B:2 eggs, 2 slices of turkey bacon
S: 2 turkey and cheese roll ups, cucumber slices and ranch
L: A bowl of Chicken Queso Soup
D: Homemade taco salad (meat, cheese, lettuce, corn, nf sour cream), 1 c. milk

Water: 72 oz.
Exercise: C25K W1W3

Spring Challenge Day 2 Tuesday

I have gotten into the habit of journaling my food, so I guess I will keep it up even though it is not required for this challenge.

S: Banana (pre-workout)
B: Uncle Sam cereal w/banana, 4 oz. yogurt (probably too much to eat 2 bananas so soon, but I had already peeled it for my cereal when I remembered I had eaten one before working out)
L: a whopping few pieces of popcorn chicken
D: 1 small slice pepperoni pizza, 1 small piece of crazy bread, bowl of chicken queso soup, salad (lettuce, garbanzo beans, raspberry vinaigrette dressing), 1 c. milk
S: 3 c. (and I could have eaten more!) broccoli with shredded parmesan

Water: 72 oz.
Exercise: 20 min. DDR/20 min. Triceps and Biceps weight

I already know that my personal goal for next week will be to eat a full lunch everyday. I get out and about some days and just don't do lunch.

S: Banana (pre-workout)
B: 1/2 c. oatmeal (w/dried apples, sf caramel syrup), 2 slices turkey bacon, 4 oz. yogurt
L: Last half bowl of Chicken Queso Soup, 2 c. broccolli w/shredded parm, 1/2 c. garbanzo beans
D: 3 small ww pancakes w/a little (too much) cool whip, 2-3 c. stir fry veggies (I made the pancakes for the kids, then a bit later had the veggies)
S: 3 c. popcorn, 1 sq. dark chocolate

Water: 72 oz.
Exercise: 30 min. Treadmill (C25K W1)

S: Scrambled eggs/a few bites of hash browns DH made

Exercise: 20 min. High Impact Aerobics

Today was one of those days that I wonder why I wanted to be a mom. Every thing my kids did drove me crazy! But most of all it is the constant whining, that makes me lose all patience that I ever had. They are all going to be early tonight (the sun might still be up!), so I can have a few minutes of quiet time (and maybe even another small workout as a stress reliever) before DH gets home from class (or work, wherever he's at tonight).

B: 1/2 c. oatmeal w/dried apples and sf caramel syrup, 4 oz. yogurt
S: String cheese
L: 2-3 c. lettuce w/ eggless Caesar dressing, 2 deviled eggs, 1/3 c. garbanzo beans
D: Not a beachy one - chimichanga and refried beans from local Mexican place
D: 1/2 c. sf choc. pudding w/2 T. Cool Whip

Water: 72 oz.
Exercise: C25K W1W3 (30 min. Treadmill)/20 min. Core Strengthening

Interesting lunch today. Not a lot of food in the house due to my needing to go to the grocery store BAD! Hopefully I can tame the kids enough (or bribe them) to be good while I shop. We'll see what kind of mood I am in a little while.
