Peanut Butter Cookies!!! I made it and they're awesome!! Granted, the NEXT time I make them, I'll use a makeshift pastry bag [ziploc bag with the corner cut off] to put them on the cookiesheet. MUCH nicer looking and easier to handle than 2 spoons. heh.

Day 6 on P2 and so far so good!!! At least, that's what I think. I've yet to weigh myself and I won't know til Tuesday if I've made any progress.

Meal plan du jour...

B:
2 eggs (1 real, 1 egg beater)
2 slices canadian bacon
1 cup FF soy milk with 1tbsp. sf coconut syrup
1 bottle of water with ice tea crystal light mix

S:
1/2 cup veggies
1 Tbsp. hummus

L:
grilled pollo asado
2 cups veggies
1/2 cup nf refried beans

D:
grilled pollo asadao
1 cups veggies

d:
3 tbsp. homemade banana ice cream


Hittin' up Trader Joe's today. YAY! love that store...I could literally spend HOURS in there. Dangerous thing though...hahah

Just got back from Trader Joe's and Whole Foods and man, I honestly could've stayed @ either store for HOURS. I was amazed by everything they had, SB legal or not. Of course, I only bought SB legal products....

TJ's:
Flaxmeal
Hummus
Steele Cut oatmeal
Artichoke antipasto
Chicken Sausages
FF greek yogurt
Black beans
Organic Pinto beans
Unsweetened apple sauce
Rice noodles (forgot to buy buckwheat noodles. damnit)
Roasted edamame
73% Dark chocolate bar
2 boxes of FF Soy milk
1 box of Almond Breeze unsweetened vanilla milk

Whole Foods:
Organic Soy flour
NF dry milk
100% whole wheat flour
100% whole wheat pastry flour
Agave nectar

I think that's all I got...not quite sure if I missed anything. Anyhoo, I plan on making quite a few things this week and who knows, I may bring home the Kitchenaid artisan mixer (or the 4.5 qt mixer) I've been eyeing. I have a 20% off coupon for Bed Bath & Beyond. heehee.

I tried my Ice Cream Maker and despite my semi 'non-methodical' ways, I made a great batch of Banana Ice cream!!!

Banana Ice Cream
Skim Milk
1 whole banana
Splenda
1 Tbsp. Vanilla Extract

Ok, so by 'non-methodical' I mean, I didn't use exact measurements. I eyeballed it (as I do with most of my cooking) and the results??

VERY TASTY!! Granted, the consistency is a bit more 'icey' than creamy because I didn't use heavy cream/whipping cream [I don't care for the stuff], but it still turned out great. Shoot if hubby likes it, it's all good =).

Day 7 meal plan

Day 7 starts tomorrow; I don't know if I'm doing well or not since I haven't weighed myself since last week (holycow, it's a miracle!) but hopefully there's been a drop.

This weekend went pretty well. I was rather worried that I would overindulge in fruits & grains but I held back as much as I could [I'm slowly adding them week by week so as not to 'shock' my body]. I will be honest though, I had a few dried apricots here and there (not even a serving) and a few bites of a banana (I gave my dog most of it-yep, he likes banana's along with apples) but that's it! Oh and with the exception of a few bites of my homemade banana Ice cream, I was pretty good with my desserts [could that even be considered a dessert since it's made of milk, banana, splenda & a bit of vanilla extract??] & snacks [I got really hungry and had some yogurt with SF raspberry syrup].

Anyhoo here's my meal plan for tomorrow, Monday August 28th.

B:
2 eggs [1 real, 1 substitute]
2 slices canadian bacon
5.5 oz V8
SF redbull

L:
Bell pepper stuffed tuna [RF eggless mayo, red onions & cucumbers]
2.5 cups raw veggies

S:
1/2 cup yogurt with SF jello mix

D:
Grilled albacore tuna
1.5 cups veggies
[if i can't eat the above since i'm going to the dentist, it'll just be the tuna & some beans...]

I'm dying to go home and make something using all my new toys. LOL. sad, eh? hehe.

I have a massive headache right now and I'm drinking water like it's going out of style. Bleh.

Debating on whether or not I should go to Costco for lunch to pick up some items but ehhh, maybe the commissary. I DUNNO!!!!

I'm gonna start adding cereal tomorrow but I'm still unsure of how much I should be adding. What exactly is a serving?! I'm gonna search around these boards.....*sigh*

Alright...just found it....3/4 cup, 30 grams or 1oz. Sounds good to me....

oh yah. I still haven't gotten my TOM and I should've gotten it yesterday or even today. A part of me is a wee bit worried for two reasons. The obvious, I could be prego [we're not quite ready to be parents nor have we made any plans to anytime soon] and the 2nd, when I weigh in tomorrow, I'm worried I'm holding in PMS weight. ahhhhhhhhhhhhhh. damnit all.

We'll just have to see......

For some reason, I can't bloody stick to my meal plans. I mean, I stick to them 95% of the time but I also have nuts & roasted edamame beans in btwn. Is this wrong?!

Sooo the below is my meal plan for today but the items in red are where I've made some additions or changes.

B:
2 eggs [1 real, 1 substitute]
2 slices canadian bacon
5.5 oz V8
SF redbull

S:
1/4 cup edamame beans
1/2 cup veggies (veggies from lunch)


L:
Bell pepper stuffed tuna [RF eggless mayo, red onions & cucumbers]
2 cups raw veggies

S:
15 cashews

1/2 cup yogurt with SF jello mix

D:
Grilled albacore tuna
1.5 cups veggies
[if i can't eat the above since i'm going to the dentist, it'll just be the tuna & some beans...]

I used my stand mixer for the first time today and it's great =)

I made the Peanut Butter & Jelly and the Big Breakfast Cookies and let me tell you, I love the breakfast cookie!! The PB&J cookies could've been better but at least I know where I made my mistake.

So, I weighed myself and I can't say whether or not I'm disappointed or happy. I guess I'm happy because I didn't gain any weight but I'm disappointed because I didn't lose a lot either. I'm down to 106.2 which means I lost .6 ounces. Not huge but not a step in the other direction either. I'm now adding grains to my diet and hopefully it gets better....Next weigh in September 5th.....

I'm also wondering if I'm PMSing and that's why the scale hasn't budged much. But I don't know....I'm not feeling my usual symptoms (soreness). I hope I am though, we're not ready for a baby. AAAAAAAAAAAAAH....

Will post my meal plan in a few...

1 cup veggies

S: [if i need]
1 cup veggies [from lunch portion]
4oz FF yogurt with sf jello

D:
Spaghetti squash with meat sauce [either extra lean ground beef, ground turkey or ground pork; depends on what's available at the commissary]
grilled zucchini

Ok so first day on adding a grain and I think everything is going well. I know, you're probably gonna say..YOU THINK!? why don't you KNOW!? Well, I was a bit bloated today and I'm not going to blame it on the cereal I ate [just yet] because I COULD be PMSing. Actually, I hope to GOD I am because man, there is NO WAY we are ready for a baby. heh.

I made a very filling dinner tonight [spaghetti squash with ground turkey breast meat sauce-packed with veggies] and by request from the DH, I made some whole wheat crepes. WE ABSOLUTELY LOVED IT. I had a few bites [there went sticking to my meal plan 100%] and it was sooooo yummy. mmmmmmmmm. The only thing is that I just have to figure out how the hell to work my crepe maker cuz I was making some really odd-ball shaped things. hehe. Hey, it tasted good so that's all that mattered but I would still like a normal looking crepe. Actually, after realizing that my pan wasn't shallow enough for the batter to dip the maker in, I switched over to my flat griddle pan [http://www.potsandpans.com/webapp/wcs/stores/servlet/ProductDisplay?catalogId=10001&storeId=10001&productId=13922&langId=-1] and found that it worked WONDERFULLY. Granted, the shapes are still a bit off , but hey, I'm still a 'master crepe maker' in progress. heh.
