It sounds sooooo good. It is SO gonna be the first thing I make once I make my first phase 2 trip to the grocery! I think eggplant is divine. I eat on pizza and sandwiches all the time....or at least I did. And I'm sure I will again, once I start working wheat grains into my diet.

How was the Big Easy Shrimp? I really want to try it, but I have never been good with seafood.

The shrimp was okay, but I doubt I'll make it again. I don't know, maybe I'm just too finicky about my shrimp! I would rather have it Alfredo-ed or just cold with cocktail sauce than anything else. And I'm even picky about that! If you like a red clam sauce or something similar, then you would probably like it. I'll stick with my eggplant parm! 8)

I, too, love shrimp in cocktail sauce. I am going to try it and see how it turns out. Dh hates seafood of all kinds, so I hope its good or I will have eat it all myself.

eggplant parm

So how long did you end up baking the eggplant?
Did you bake them on a rack or just a baking sheet and did you spay them with oil on both sides? I got your original recipe for this years and years ago and LOVE it. I'm so excited that you've altered it and made it SB friendly. When I phase to 2 I'll give it a try!

I did spray them on both sides and bake them on a rack. I oven-fried them at 450 for 12-15 minutes on each side, until they had a really nice brown color. Them as the pasta was cooking, I sprinkle 1 cup of cheese over all of them and baked them for another 10 minutes to melt and slightly brown it. YUMMO!

Thank goodness we're back up and running today! I felt off all day yesterday!
Yesterday's food-
B: Blueberry muffin (muffin 7 ways) with 1/2 tbsp brummel&brown. Really good muffins! Had to freeze the other 11 so I wouldn't eat them!
L: Pizza Hut- Big honkin' salad, tops from 4 pieces of veggie pizza (they were small, but that was probably too much)
D: Chicken Capri- YUMMO! 2 cups broccoli, nutmeg custard
S: Laughing Cow w/ 1/2 red pepper, 1/4 cuke, and some jicama
I did the WATP tape before dinner. I really dread giving it back!

Today's menu is-
B: Cottage cheese eggs, 2 pcs TS
L: leftover chicken, salad
D: Hamburger Stew- ground beef w/ tons of veg
S: custard, going to try it warm this time

I have decided to go back to Phase 1 for a few days. My cravings for all things floured and such has overwhelmed me again. I am planning to keep the carrots and apples, but will forgo the baked things and see if that works. I have not lost anything since switching over, and I am growing concerned that my cravings will lead me to stray. The logic of "It's allowed now" may come into my head and wreck what I have accomplished thus far. I think a few days "cleansing" will do me some good.

I haven't even been on this board two weeks and I already am like codependent on it. I was so sad yesterday when I couldn't get on. It's crazy! Haha.

Have you tried making the roasted chickpeas? I tried some yesterday and I think maybe I need to tweak them, so I thought I would ask the kitchen goddess.

I tried the chickpeas, even roasted them for 15 extra minutes to make them crispy. I salted them slightly thinking that would make them nuttier. Nope, I didn't like them. I guess I was hoping too much that they would taste a bit like chips! I don't know... Maybe with a seasoning of some sort? Taco or maybe Cajun?

Well, you know, I do tell people I got fat for a reason!
I put fliers up at Christmas advertising that I would do your holiday baking for you if you had no time. People would ask me if I was any good. That's what I would tell them, I'm fat for a reason. I had one person buy stuff at Thanksgiving, and she loved every bit of the cookies (White Chocolate Cranberry) and pumpkin bread I made for her family!

Funny you ask, one of hubby's employees is moving to Kentucky in May! Maybe if I as her nicely...

So I did try the custard warm, even added some rum flavoring, but it's no use. I guess I don't like custard. SOOOOOOO, I made a batch of recipelovers cheescakes (the SF/FF one) in small coffee cups for better portion control :wink: . I subbed some SF honey for 1/2 of the Splenda because I just love the honey/vanilla combination. I hope they're good!

I skipped my workout last night, but it wasn't entirely my fault. I did talk my hubs into meeting us at the pool to watch our son swim :D , we even took one of his little friends. I had called in the morning to make sure they were open... They lied! We drove all the way into town (only 14 miles round-trip, but with the $$$ of gas...), and when we got there it was closed! The kids were really mad, I was more than pissed. :evil: :evil: :evil: So we're going to try again Monday night. Another friend's daughter is having a Brownie's swim party there Thursday night, so we'll go then too because she's bringing her other two to swim in the little pool. I had put in my workout plan that today we would take a bike ride as a family. When we got up this morning, it was snowing! Guess I have to go to plan B, as soon as I figure out what that might be! :lol:

So the plan for today is:
B: cottage egg omelet w/ shrooms and onions, 2 pcs TS
L: hamburger stew, salad w/ Newman's OO&V dressing, farmer's cheese and genoa- YUM!
D: Chinese out- egg drop soup and Triple Crown- and a tiny 1/4 cup rice! :evil:
S: mini cheesecake while watching Wallace and Gromit
Guess I'll update those later! I have us scheduled to go out tonight (yes, I know I'm a bit OCD), but I went a lilttle overboard at the store this week! We'll see...
Well, obviously we went out. And obviously I goofed. This is the first time I have strayed since starting January 2nd, so I think it's about time I took a meal off! :wink:
