Try one of these, Dolly-VA gave them to me....
Chocolate Chip Banana Flax Muffins
Wet:
2 eggs
2 small containers NSA applesauce (or 1 cup)
1/4 c brown sugar (Whey Low works great, can use Splenda or sf syrup, too)
1/3 c milk
1-2 very ripe, mashed bananas
3/4 c flaxmeal
2 tsps vanilla extract
Dry:
1-1/2 cups GF flours (1/2 c chickpea, fine corn and tapioca is best or other combo)
2 tsps baking powder
1 tsp cinnamon
1/2 tsp Xanthan gum
1/4 tsp salt
1/4 c mini semi sweet chocolate chips
Preheat oven to 350.
Mix wet and dry ingredients separately. Add chips to dry. Stir wet into dry till just mixed. Spray 12 muffin tins. Put in batter. Bake 26 minutes. Let sit 5 minutes in tins. Remove.
Warm “Brownieâ€
In a small custard dish add:
1 Tbs nut butter (almond is the best and I use 2 tsp to 1T, not more)
1 Tbs unsweetened cocoa powder
3 Tbs NF dry milk (carnation type)
1 pkt Splenda
Mix till very crumbly, put in microwave for 20 seconds (15 if you have a very strong microwave). Add:
2 tsps Splenda sweetened pancake syrup (or other sf syrup)
Mix really, really well. Mooshing and stirring till it's very dark and creamy. You want all the milk powder dissolved and mixed in. Nuke 20 (15) seconds more. Stir again. If it is still dry add 1 tsp more syrup (depends on the amount of nut butter you use, you want it a little stiff, just not dry). Mix well if you added more syrup then flatten in the dish. Serve with a tiny spoon.
Variation:
Add 1 Tbs flaxmeal and 1 extra tsp syrup to mixture. Yum!
