Chef-y girl My menus are embarrassing after looking at yours. But thanks!
I am trying the Chicken stuffed w/ spinach and cheese today ( from the gold book) have you done this yet
I am using what I have in the house so..... subbing skinless deboned thighs, fresh spinach, and feta mixed w/yocheese for goat cheese ( which I adore)
I am looking at aerogardens on the net today
I think you have one. do you have any suggestions? Anyone?

You're making me hungry!!! Spinach and feta stuffed into anything is right up my alley. I love it in portabella mushrooms. Yum!

Wednesday menu

S 1 0z yofurt
B 3 egg 1 yolk omelet, 1 light linl, beans
L stuffed chicken,3 big roasted eggplant slices w/asiago cheese sprinkles
D big taco salad 3 oz taco meat, cheese, sour cream and salsa
S 1 oz yocheese

Kyan thanks for the recipe I had already made the Chix w/ stuff I had in the house.
I learned that deboning a chicken thigh was way beyond my culinary skills  ...so I just made a slit next to the bone and stuffed the darn things......not pretty but OMG was that tasty. I used feta mixed w yocheese instead of goat cheese and fresh spinach.
Tomorrow I will stuff a few mini bellas. Thanks Chris :D
Still looking for info on aerogardens
Should I buy used?

I don't know if I would buy a used Aerogarden? I know that the bulbs are something that need to be replaced, but I don't know how often. I'd have to weigh the cost of new bulbs + the cost of the seed kit that comes with new, against how much a new one costs I guess? Of course, I only have one that holds 3, so if I wanted a bigger one, I may consider used, since they are pretty expensive?

Chefk has a few of them. Hopefully she'll have some ideas for you!

I wouldn't buy a used one. They get pretty beaten up with roots over time and you occasionally have to replace bulbs or filters. I'd go with an herb one to start and if you want to venture into the tomato world that's cool, but the herb one is easy and you get SO much. I plan meals around what comes up. I have a classic 7 pod and bought my mom a space saver 6 pod. She lives in the Vegas desert so even though she doesn't have nasty winters like me she has a period when nothing grows. This solves that issue. They have big sales regularly.

If you really just like a couple herbs a lot a 3 pod would be fine. They'll produce a bit more because they have room. Check out all the herb packs before you decide. This will help a lot.

I've heard the Aerogardens make a lot of noise. You have me researching them, too. DH wanted to buy me one a few years ago, but only the big ones were on the market then and I don't have space. I think he already got me my major Christmas gift, or I'd put the small one on my wish list. So last night I started searching for grow lights and CFL's and ended up on many sites telling you how to grow weed!! I don't want to grow weed, I want to grow basil, and I don't need to hide it in my basement!

Yesterday is gone, don't beat yourself up over it. Pick yourself up, dust yourself off, and start all over again. (isn't that a line from an old song?)

Sounds like winter comfort food to me!! Nothing you ate is really bad, just probably too much and a little too much of that pita. Make a pot of bean soup or chili and let those beans fill your tummy! Usually if I do that and then have a handful of triscuits and some water, I physically cannot eat any more
