Fajita Turkey Burgers - A favorite!

This originally appeared in Cooking LIght. It is good for all Phases of SBD - you can add a whole grain bun for P2/3, but believe me, if you serve this with FF refried beans topped w/ LF cheddar, you won't miss the bun.

FAJITA TURKEY BURGERS (makes 4)
For the salsa topping:
Add a chopped avocado to your favorite jarred/homemade salsa with cilantro.

For the burgers, in a large skillet heat over medium heat:
2 t. olive oil
Then add:
1/2 c. chopped onion
1/2 c. chopped red bell pepper
1/2 c. chopped green bell pepper
Saute vegs until softened - about 5 mins. Remove from heat and add to the vegs:
1 t. taco seasoning
1 pinch of oregano
Let this cool a few minutes in the fridge.

Combine:
1# lean ground turkey
2 T. Egg Beaters or 1 egg white
1 T. tomato paste
Cooled sauteed onion and peppers
1 t. taco seasoning
1 pinch of oregano
With damp hands, dived the turkey mixture into 4 equal parts and shape each part into a round patty.
Coat the skillet with cooking spray and then cook the burgers about 5 min. on each side, or until 165 degrees. Top with salsa mixture.
